  • Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.

1 1/2 cups sharp cheddar cheese
6 -7 chopped crawfish tails
2 tablespoons pimientos
2 tablespoons black pepper
1 cup mayonnaise
1 pinch salt

Steps:

  • Combine all ingredients in a bowl. Fold together until you have a creamy consistency. Chill for one hour.
  • Serve as you desire, on a sandwich, on a salad, on top of a burger or on crackers.

Macon, GA seems to be a culinary delight for pimento cheese. I found this recipe in The Taste of Tunnel Hill cookbook and did some research on-line. While I found various versions of pimento cheese recipes I did not find this one. It really intrigued me because of the chopped boiled eggs. Freshly ground pepper can be added if you desire but that wasn't included in the recipe.

8 ounces mild cheddar cheese, grated
4 ounces pimentos, chopped fine
5 small sweet pickles, finely diced
2 hard-boiled eggs, peeled and finely diced
2 tablespoons sweet pickle juice
1/2 tablespoon sugar
salt, to taste
6 tablespoons mayonnaise (to taste)

Steps:

  • Place prepared ingredients in a bowl of food processor and mix until thoroughly combined. Serve on bread as a sandwich or with fresh vegetables as a dip.

Seafood is plentiful here, and crayfish is my favorite. I like to serve this tasty appetizer while the main course is finishing up in the oven. Suggested romance: Shrimp may be substituted for the crawfish.

1 package (16 ounces) frozen cooked crawfish tails, thawed
1 package (8 ounces) cream cheese, softened
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 small onion, finely chopped
6 garlic cloves, minced
1/2 to 1 teaspoon Creole seasoning
1/2 teaspoon salt
6 to 12 drops hot pepper sauce
Assorted crackers

Steps:

  • Chop crawfish; pat dry. In a small bowl, beat cream cheese until smooth. Add the peppers, onion, garlic, Creole seasoning, salt and hot pepper sauce; stir in the crawfish. Cover and refrigerate for at least 2 hours. Serve with crackers.
