I always end up with lots of rhubarb each summer, but many of the recipes use a lot of sugar. This one lets the fruit sweeten up the rhubarb instead. I refrigerate the sauce overnight to help the flavors blend. -Amy Nelson, Weston, Wisconsin

Number Of Ingredients 6

5 large Red Delicious apples, peeled and finely chopped
4 cups finely chopped fresh or thawed frozen rhubarb (about 8 stalks)
4 cups fresh strawberries, hulled and halved
1/2 cup sugar
1/4 cup water
1 teaspoon vanilla extract

Steps:

  • In a Dutch oven, combine apples, rhubarb, strawberries, sugar and water; bring to a boil. Reduce heat; simmer, covered, 18-22 minutes or until fruit is tender, stirring occasionally., Remove from heat; stir in vanilla. If a smoother consistency is desired, cool slightly and, in batches, process in a blender. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

My kids love these rosy red Cinnamon Stewed Apples for breakfast, lunch or dinner. Made with just a few simple ingredients and cooked on the stove-top in a matter of minutes, you'll find yourself adding these to your weekly menu rotation.

5 medium apples
1/2 cup sugar
1 cup water
1/2 teaspoon ground cinnamon
10 drops red food coloring (optional)

Steps:

  • Wash, peel and core apples. Cut halves into 5 or 6 equal-sized slices.
  • In a small saucepan, bring sugar, water, cinnamon and red food coloring to a boil over high heat.
  • Once boiling, reduce heat to simmer for 5 minutes.
  • Add sliced apples to the sauce; raise heat to bring the sauce back to a boil.
  • Boil uncovered for 5 to 8 additional minutes or until apples are fork tender and soft; stirring occasionally.
  • Remove from heat and let cool. Serve hot, warm or cold.

This delicious applesauce combines the best of both sweet apples and tangy rhubarb. If you don't have the rhubarb, you can substitute frozen cranberries instead. It is great for freezing, canning, or just eating as soon as it is prepared, warm or cold. Everyone who tries it loves it. It makes great gifts in decorative canning jars!

  • Combine apples, strawberries, rhubarb, sugar, and water in a large pot. Bring to a boil; cover and simmer, stirring occasionally, until apples are tender, about 20 minutes. Remove from heat and stir in vanilla extract.

4 pounds Golden Delicious apples (about 8), peeled, cored, and cut into 1-inch pieces
1 1/2 cups fresh or thawed frozen cranberries (6 ounces)
1/2 cup sugar
1 (3-inch) cinnamon stick

Steps:

  • Cook apples, cranberries, sugar, and cinnamon stick in a large heavy saucepan, covered, over medium-low heat, stirring occasionally, until fruit is very tender and broken down into a sauce, about 45 minutes. Discard cinnamon stick. (For a smoother texture, force applesauce through a medium-mesh sieve or a food mill fitted with fine disk into a bowl.) Cool to room temperature or chill before serving.

Recipe is from the Apple Barn Cookbook very easy, very tasty, and looks REALLY impressive considering how easy it is. tart baking apples may be preferable. I used regular apples and it turned out very good, but VERY sweet.

1 tablespoon sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 tablespoon milk
6 cups apples, peeled and sliced
1 (3 ounce) package strawberry gelatin
2 tablespoons sugar
1 cup flour
1 cup sugar
1/2 cup butter

Steps:

  • Combine the first 7 ingredients in small mixing bowl and beat until smooth; spread in bottom of greased springform pan.
  • Pile apples on crust and shake pan to settle slices.
  • Combine gelatin with 2 tablspoons sugar and sprinkle over apples.
  • Combine flour and sugar; cut in butter until crumbly.
  • sprinkle flour topping over the apples.
  • Bake at 350 degrees for 1 hour.
  • Chill throughly.
