6 bananas (unpeeled, )
water

Steps:

  • Preheat your oven to 300°F
  • Rinse and dry your bananas.
  • Line a baking sheet with parchment paper or aluminum foil.
  • Place the unpeeled bananas on the lined baking sheet.
  • With the tines of a fork, poke a few holes in the banana skin.
  • Bake the bananas for 15-30 minutes*. When the peel becomes shiny and black, remove them from the oven.
  • When cool enough to handle, split open the skin in order to scoop out the roasted banana.
  • The roasted bananas can be used immediately or frozen.

Like other South Floridians, the chef Niven Patel of Ghee Indian Kitchen in Miami has access to fresh, locally grown, exceptionally flavorful varieties of bananas and mangoes he can ripen to perfection. Elsewhere in the country, that's not the case: In fact, Mr. Patel said, most Indian restaurants use a canned ripe Indian mango purée to remedy that problem. But by roasting the mangoes or bananas first with sugar and warm spices, you can get good flavor from fruit of any quality or ripeness. Mr. Patel makes his own yogurt, which gives this lassi a complex tartness that balances the sweet spiced fruit, but a very good-quality regular plain yogurt (as in not strained or Greek) is a fine stand-in. The mango yields a slightly thicker lassi than the banana; if you'd like, add a little extra milk to thin it out, tasting as you go to make sure you don't dilute the flavor.

2 ripe medium mangoes or bananas, peeled and cut into large chunks
1/2 cup brown sugar
1/2 vanilla bean, split lengthwise and seeds scraped
1 green cardamom pod, lightly crushed
2 cups plain whole milk yogurt
1/2 cup whole milk
1/2 cup ice

Steps:

  • Heat oven to 350 degrees.
  • Put the fruit in a small ovenproof skillet or baking dish. Sprinkle with sugar, then add vanilla bean seeds and pod, and the cardamom pod, stirring so the fruit is coated with sugar.
  • Roast the fruit until soft, stirring every 5 minutes, until most - but not all - of the liquid the fruit releases has evaporated and begins to bubble and thicken, about 25 to 30 minutes for the bananas and 40 minutes for the mangoes. (If you let them cook too long, the sugar mixture will stick to the pan.) Discard vanilla bean and cardamom, and let the fruit cool completely, then refrigerate until chilled. This step can be done several hours or the day before.
  • Measure out 3/4 cup of the chilled roasted fruit. (You may have a little left over, depending on the size of the fruit you started with.) In a blender, combine the roasted fruit with yogurt, milk and ice. Process just until smooth, scraping down the sides of the pitcher once or twice, and serve immediately.

  • In a blender, combine the yogurt, mango, ice, sugar, mint leaves and cardamom pods if desired. Cover and process for 30-60 seconds or until blended. Pour into two chilled glasses; serve immediately.

Roasted Mango, Pineapple, and Banana With Maple-Ginger Glaze image

This roasted-fruit trio makes an exotic winter dessert.

1 tablespoon pure vanilla extract
6 tablespoons pure maple syrup
2 teaspoons freshly grated ginger
6 tablespoons freshly squeezed orange juice (1 orange)
2 pineapples, peeled and cored
3 large ripe mangoes, peeled and pitted into halves
3 bananas, peeled and cut into 1/2-inch pieces
Butter-flavor cooking spray

Steps:

  • Heat oven to 450 degrees with two racks centered. In a medium bowl, combine the vanilla extract, maple syrup, ginger, and lemon juice.
  • Spray two 12-by-14-inch roasting or jelly-roll pans with cooking spray. Cut one pineapple into 1-inch rounds, and arrange in one roasting pan. Cut second pineapple into 1/2-inch rounds, and arrange in the other pan. Divide mango halves evenly between pans. Brush all fruit lightly with maple glaze. Roast fruit until it starts to brown slightly, 25 to 40 minutes; timing will vary with juiciness of pineapple. Use a spatula to turn fruit over, and brush with glaze again. Cook 10 minutes more. Divide banana pieces evenly between pans, brush with glaze, and cook until golden brown, 15 to 20 minutes.
  • Pour the remaining glaze into a small nonstick skillet. Place the skillet over medium heat, and reduce the liquid until it is thick, 4 to 6 minutes.
  • To serve, arrange 1-inch pieces of pineapple on six plates. Top with half a mango. Arrange 1/2-inch pineapple slices over mango. Arrange banana pieces around edge of plate. Pour a little glaze over each plate.
