ROASTED ONION DIP
Steps:
- Toss 1 roughly chopped red onion with 2 tablespoons olive oil on a foil-lined baking sheet; season with salt and pepper. Roast at 400˚, stirring occasionally, until golden, 25 to 35 minutes. Set aside to cool. Beat 8 ounces softened cream cheese with a mixer on medium-high speed until creamy, 1 to 2 minutes. Add 1/2 cup sour cream, 1/4 cup grated parmesan, 1 teaspoon Worcestershire sauce, 2 tablespoons each mayonnaise and sliced chives and the roasted onions. Beat until combined. Scrape into a serving bowl.
PAN-FRIED ONION DIP
Steps:
- Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions.) Heat the butter and oil in a large saute pan over medium heat. Add the onions, cayenne, salt, and pepper and saute for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Allow the onions to cool.
- Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer fitted with the paddle attachment and beat until smooth. Add the onions and mix well. Taste for seasonings. Serve at room temperature.

- Cut onions in half; toss with oil and a generous sprinkle of salt and pepper. Place, cut-side down, on a lipped cookie sheet.

- In a large skillet, saute onions in butter until tender. Transfer to a 5-qt. slow cooker. Cut roast in half; place over onions., In a large bowl, combine the water, soy sauce, soup mix, browning sauce if desired and garlic; pour over roast. Cover and cook on low until meat is tender, 7-9 hours., Remove roast with a slotted spoon and let stand for 15 minutes. Thinly slice meat across the grain. Place on roll bottoms; sprinkle with Swiss cheese. Place on an ungreased baking sheet., Broil 3-4 in. from the heat until cheese is melted, about 1 minute. Replace tops. Skim fat from cooking juices; strain and serve as a dipping sauce if desired.

My mother gave me this recipe. She states she saw it on a cooking show. I decided to give it a try and fell in love with it. I love onions any way -- roasted, carmelized and even fresh. I am giving her credit and putting it here for others to enjoy!

Steps:
- Cut the ends off the onion, just enough that it will rest flat on its root end.
- Peel off outer dry layers.
- Cut into wedges leaving the root end intact.
- Place on a square of heavy foil.
- Top with boullion and butter.
- Wrap securely, be sure that you do not poke holes in the foil-- you want the juices to stay in there with the onion.
- Bake at 350 for 45 min to 1 hour.
- Remove from foil into a serving bowl and top with cheese while HOT.
- Enjoy with a piece of crusty french bread.

- Preheat oven to 400º. Peel and trim ends off 1½ lb. mixed onions. Cut in half lengthwise. Place halves cut side down on cutting board, then thinly slice.
- Line a rimmed baking sheet with parchment paper. Toss onion and 4 garlic cloves with ¼ cup oil and 2 Tbsp. water until evenly coated. Season with salt and toss again until well coated. Mound onions and garlic in center of sheet pan rather than spreading them out; this allows them to steam and soften without browning too quickly.
- Bake, tossing and stirring onions every 10 minutes, until all onions are golden brown and softened, 40–50 minutes total (some onions will brown more than others but that’s okay!). Let cool.
- Transfer onions and garlic to a cutting board and squeeze out garlic cloves from peel. Using the flat side of a chef’s knife, smash garlic cloves to a paste. Transfer to a medium bowl.
