EASY NUT ROAST



Easy Nut Roast image

Quick and easy to make vegan nut roast. Perfect for a roast dinner, Thanksgiving or Christmas.

1 1/2 cups mixed nuts (walnuts, peanuts, cashews...)
1 onion (diced)
2 cloves garlic (finely chopped)
2 tbsp olive oil
1 cup fine breadcrumbs
2 tbsp soy sauce
2 tsp dried herbs
1 cup vegetable stock
1 tbsp chia seeds
2 tbsp dried cranberries (chopped, optional)

Steps:

  • Preheat your oven to 180°C / 360°F.
  • In a frying pan, cook the diced onion and garlic with the olive oil, until translucent and just starting to brown.
  • In a food processor, pulse the nuts until fine. If you are also making your own breadcrumbs now, process the bread separately from the nuts, as they will take longer to become fine.
  • In a mixing bowl, combine all the ingredients - the ground nuts, breadcrumbs, fried onion and garlic, soy sauce, dried herbs, chia seeds, optional cranberries, and vegetable stock.
  • Transfer the nut mixture into a loaf tin lined with parchment paper, and smooth the top with a silicone spatula.
  • Bake the nut roast for 30-40 minutes until the top starts to brown.
  • Remove from the oven, and leave to cool in the tin for 10 minutes. To remove from the tin, place a board on top of the tin, flip over and peel off the baking paper.
  • Before serving, you can add some extra nuts on top for decoration.

This Nut Roast recipe is packed with a deliciously sweet and savory blend of nuts, veggies, lentils, dried fruit and fresh herbs. Serve with cranberry sauce and/or gravy and enjoy! (Please see notes above for possible ingredient modifications too.)

1 cup (200 grams) green or brown lentils, picked over and rinsed
fine sea salt and freshly-cracked black pepper
2 tablespoons olive oil
1 small white onion, peeled and finely diced
1 large carrot, finely diced
1 small red bell pepper, cored and finely diced
8 ounces (225 grams) baby bella mushrooms, finely chopped*
4 large cloves garlic, pressed or minced
2 large handfuls baby spinach, roughly chopped
3 tablespoons chopped fresh sage
2 tablespoons chopped fresh rosemary
1 teaspoon smoked paprika
1 teaspoon dried thyme
10 ounces (300 grams) mixed nuts, finely chopped*
5 ounces (140 grams) dried apricots, finely chopped
zest and juice (about 1/4 cup) of 1 small orange
3 eggs, whisked*

Steps:

  • Combine the lentils with 4 cups water and 1/2 teaspoon salt in a medium saucepan. Heat over medium-high heat until the water reaches a vigorous simmer. Reduce heat to medium-low to maintain the simmer, cover and cook until the lentils are completely tender, about 20-30 minutes. Drain the lentils completely using a strainer, and set aside until later.
  • Heat the oven to 375°F (190°C). Line a 9 x 5-inch bread pan with parchment paper.
  • Meanwhile, heat the olive oil over medium-high heat in a large sauté pan. Add the onion, carrot and bell pepper and sauté for 7 minutes, stirring occasionally, until softened. Add the mushrooms and garlic and sauté for 5 minutes, stirring occasionally, until the mushrooms are softened and most of the liquid in the pan has evaporated. Add the spinach, sage, rosemary, smoked paprika, and thyme. Sauté for 2 minutes, stirring frequently. Remove pan from heat.
  • In a large mixing bowl, add the cooked lentils, cooked veggie mixture, nuts, dried apricots, and orange juice and zest. Toss until the mixture is evenly combined.
  • Before we add the eggs, go ahead and give the mixture a taste and season it with salt and pepper as needed. (The level of saltiness will vary considerably based on the type of nuts you used, but you will likely need to add a generous amount of salt and pepper, so don't be shy!)
  • If you own a food processor, transfer about 1/3 of the mixture to a food processor and pulse a few times until the mixture is fairly puréed. (Or alternately, use a potato masher to mash about 1/3 of the mixture on one side of the mixing bowl until it is puréed.) Stir the puréed mixture back into the overall mixture along with the whisked eggs until everything is evenly combined.
  • Transfer the entire nut loaf mixture into the prepared bread pan, packing it down fairly firmly (which will help the loaf to slice more easily later).
  • Bake uncovered for about 45 minutes, or until the top is lightly browned and the loaf is cooked through. (I also like to remove the roast about 5 minutes before it has finished baking to brush the top of the roast with a bit of melted butter or oil to help it crisp up on top during those final few minutes in the oven, but this step is totally optional. Alternately, if the top of the roast starts to get too browned during cooking, just gently lay a sheet of aluminum foil on top of the bread pan.)
  • Transfer the pan to a wire cutting rack and let the nut roast rest for about 15-20 minutes.
  • Carefully lift the edges of the parchment paper up to remove the nut roast from the pan and transfer it to a cutting board. Use a bread knife to slice the roast into your desired size of pieces. Then serve warm with gravy or cranberry sauce and enjoy!

150g pearl barley (uncooked weight)
1 vegan vegetable stock cube (check the packet)
330g parsnips, peeled and cut into chunks
2 tbsp ground linseeds (or flaxseed)
3 tbsp olive oil, plus extra for greasing
1 onion, halved and sliced
3 garlic cloves, crushed
400g mixed mushrooms, cleaned and sliced
5 rosemary sprigs, leaves stripped, plus extra to decorate if you like
6 sage leaves, shredded
100g blanched hazelnuts, toasted until golden
50g vegan Italian-style hard cheese, grated (optional)
small pack flat-leaf parsley, finely chopped
a good grating of nutmeg
3 tbsp pumpkin seeds
handful parsnip crisps with sea salt & black pepper (optional)

Steps:

  • Cook the pearl barley with the stock cube according to pack instructions. Reserve 4 tbsp of the cooking stock, then drain the grains well.
  • Bring a large pan of salted water to the boil, then add the parsnips, and cook until really soft. Drain well, tip back into the pan to steam dry for a few minutes, then roughly mash. Mix the ground linseeds with the reserved stock water, and leave to go gluey.
  • Put 2 tbsp of the oil in your largest frying pan with the onions and garlic. Fry gently until soft and golden, then stir in the mushrooms, rosemary and sage. Fry the mushrooms until they're golden too, and any liquid that comes out has evaporated. Scrape into a big mixing bowl and set aside to cool.
  • Grease a 22-24cm savarin or ring tin generously with oil. If it's not a non-stick tin, line it with thin strips of overlapping baking parchment.
  • Add the mashed parsnip, cooked pearl barley, gluey seed mix, grated vegan hard cheese (if using), chopped parsley and whole hazelnuts to the fried mushroom mixture. Season generously with salt, then mix everything together really well.
  • Spoon the filling into the tin, and press down firmly to fill the tin and flatten the top. Bake straight away or keep in the fridge for up to 24 hrs before baking.
  • Heat the oven to 200C/180C fan/gas 6 and cover the tin with foil. Bake for 45 mins, until a skewer poked into the centre of the mixture comes out piping hot.
  • Use a small palette knife or cutlery knife to release the filling all the way around, then sit a serving plate on top and flip over. Carefully lift off the tin, and top the wreath with some parsnip crisps if using and whole pumpkin seeds to serve - plus some extra rosemary sprigs if you like. Slice into wedges and enjoy.

2 tbsp milled flaxseed
400g butternut squash peeled, deseeded and cut into 3cm chunks
3 tbsp olive oil, plus extra for the tin
2 tbsp za'atar
2 tsp ground cumin
2 tbsp ground coriander
1 red onion, finely chopped
1 celery stick, finely chopped
250g chestnut mushrooms, finely chopped
1 garlic clove, crushed
2 tbsp miso paste
200g shelled pistachios roughly chopped, plus extra to serve
100g cooked chestnuts, finely chopped
100g fresh breadcrumbs
½ small bunch of parsley, finely chopped
200g fresh or frozen cranberries
4 tbsp light brown soft sugar
pomegranate seeds, to serve

Steps:

  • Combine the flaxseeds with 4 tbsp water in a small bowl, and leave to thicken. Heat the oven to 200C/180C fan/gas 6. Toss the squash in a roasting tin with 1 tbsp olive oil, the za'atar, cumin and coriander. Cover the tin with foil and roast for 30-35 mins, or until the squash is tender but still holding its shape. Oil a 900g loaf tin and line with baking parchment.
  • Heat the remaining oil in a frying pan, and fry the onion, celery and mushrooms for 10-15 mins, or until softened. Stir in the garlic and miso paste.
  • Tip the pistachios, chestnuts, breadcrumbs and parsley into a bowl, then stir in the flaxseed mixture, fried veg and roasted squash. Season well.
  • Put the cranberries in a pan with the sugar and cook for 3-4 mins, or until the sugar has dissolved and the cranberries are just starting to soften. Spoon into the base of the loaf tin, then leave to stand for 5 mins to set slightly. Top with the nut roast mixture, patting it down firmly and smoothing the top with the back of a spoon. Cover with foil and bake for 25 mins, then uncover and bake for 25 mins more. Leave to rest for 15 mins, then invert onto a serving plate, removing the parchment. Top with extra chopped pistachios and pomegranate seeds, then serve.
