MICROWAVE CHOCOLATE MUG CAKE

Steps:

• Mix flour, sugar, cocoa powder, baking soda, and salt in a large microwave-safe mug; stir in milk, canola oil, water, and vanilla extract.
• Cook in microwave until cake is done in the middle, about 1 minute 45 seconds.

CAKE IN A CUP AND VARIATIONS

Steps:

• 1. MAKE SURE TO USE POT HOLDER AS THE CUPS WILL BE HOT! i LIKE TO USE A CUP CAKE LINER IN THE MUG BEFORE PUTTING IN THE BATTER I MIXED IN A SMALL BOWL-THEN POUR IN THE CUP-THIS HELPS IF YOU WANT TO TAKE CAKE OUT OF MUG TO EAT! --- Mix flour,sugar,spice and baking powder; mix in egg white. Pour in milk, oil and vanilla, and mix well. Put in microwave for 2.5 minutes(add 30 seconds if necessary) on maximum powder(1000 watt) Wait until it stops rising and sets in the cup or mug.
• 2. Chocolate: 5 Tablespoons all purpose flour 2 1/4 Tablespoons unsweetened cocoa powder 2 1/4 Tablespoons granulated sugar 1/8 teaspoon baking soda 1/8 teaspoon salt Mix these ingredients together and add 3 Tablespoons milk 2 Tablespoons vegetable oil 1/4 teaspoon vanilla 1/4 teaspoon white vinegar (yes) Mix it all up and heres the good part...lick the spoon! You can add some chocolate chips or nuts now if you like. Place in microwave for 1 minute or 1 1/2 minutes... since there are no eggs it cooks really fast.. if the top is bouncy and a fork stuck in it comes out clean, its ready. It's good with ice cream dumped right into the mug!

Carrot Cake: 6 Tablespoons all purpose flour 2 Tablespoons brown or white, your choice 1/4 teaspoon baking soda 1/8 teaspoon salt 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg Mix the dry ingredients up with a fork and then add: 4 Tablespoons orange juice 2 Tablespoons vegetable oil 1/4 teaspoon vanilla 3 Tablespoons finely grated carrot 1 Tablespoon chopped pecans 1 Tablespoon chopped raisins Mix it all up and make sure there are no lumps on the bottom and put it in the microwave for 2 to 2 1/2 minutes. Let it cool a little and eat it. Great with a little cream cheese and honey!

Vanilla Cake: Use a 8 or 12 ounce mug for this one: 6 Tablespoons all purpose flour 2 rounded Tablespoons granulated sugar 1/2 teaspoon baking soda 1/8 teaspoon salt(that's a pinch you know) Mix all this with a fork and add: 4 Tablespoons milk 1 Tablespoon vegetable oil 1/2 teaspoon vanilla Mix it all up real good and make sure no flour lumps ore at the bottom of the mug. Microwave for 2 minutes and the minute it comes out of the nuke put a handful of chocolate chips on top. Wait a few minutes it it melts and spread it out. --- NOTE: You can forgo the chocolate at the end and after mixing everything together just before you nuke it you could add a couple Tablespoons of frozen berries for a muffin in a cup!

MICROWAVE MUG CAKE

Steps:

• Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.
• Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
• Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
• Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch.

VANILLA MUG CAKE

Steps:

• Add flour, sugar, baking powder, and salt to a mug and stir together.
• Stir in milk, melted butter, and vanilla extract until smooth, being sure to scrape the bottom of the mug. Stir in sprinkles.
• Cook in microwave for 70-90 seconds* (until cake is just set, but still barely shiny on top). Allow to rest in microwave for 1 minute before consuming.

CHOCOLATE CAKE IN A MUG

Steps:

• Special equipment: a 12-ounce microwave-safe ceramic mug and a microwave oven
• Put the flour, sugar, cocoa powder, baking powder and salt if using in a 12-ounce microwave-safe ceramic mug. Blend thoroughly with a fork. Add the milk, vegetable oil and vanilla if using and blend until smooth. Stir in the chocolate chips.
• Microwave on high for 90 seconds. Do not overcook or the cake will be dry. Let cool for 2 to 3 minutes before eating.
