FRIED PICKLES WITH CHIPOTLE RANCH

Fried pickles are the perfect snack to me-they're crispy, salty and tangy. I like to dip these in my homemade chipotle ranch dressing. They're so good!

Number Of Ingredients 14

1/2 cup whole buttermilk
1/2 cup mayonnaise
Half a 1-ounce packet ranch salad dressing mix
1 tablespoon lemon juice
1 teaspoon chipotle chile powder
Vegetable or canola oil, for frying
One 16-ounce jar dill pickle chips
1 cup all-purpose flour
2 tablespoons Miss Brown's House Seasoning, recipe follows
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • Make the chipotle ranch: Whisk together the buttermilk, mayonnaise, dressing mix, lemon juice and chipotle chile powder until smooth. Cover and refrigerate until ready to serve.
  • Make the pickles: Pour the oil to a depth of 1 1/2 inches in a Dutch oven. Heat to 375 degrees F.
  • Drain the pickles and arrange in a single layer on a paper towel-lined baking sheet. Pat dry.
  • Stir together the flour, House Seasoning and 1 cup water. Dip the pickles in the batter and let the excess drip off. Fry the pickles, in batches, until browned and crispy, 1 to 2 minutes. Drain on paper towels. Serve the pickles with the chipotle ranch.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

I came up with a very quick, easy lower-in-fat dip or sauce to make with those leftover chipotle peppers. This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. Makes a great veggie dip, or even a topping on hamburgers or Mexican foods. Chipotle peppers are very spicy; start with one and taste. Removing seeds will tone down the heat. I usually use 2 with seeds. You can also substitute low-fat Greek yogurt in place of the sour cream.

2 ½ tablespoons dry ranch dressing mix
3 green onions, minced
1 clove garlic, minced
1 tablespoon fresh lime juice
1 canned chipotle chile in adobo sauce, minced, or more to taste

Steps:

  • Whisk the mayonnaise, sour cream, ranch dressing mix, green onions, garlic, lime juice, and chipotle chile together in a bowl until blended. Serve immediately, or refrigerate until needed.

1 packet Hidden® Valley Ranch Dip Mix
4 strips bacon, cooked and chopped, 1 tablespoon reserved for garnish
½ cup shredded cheddar cheese, 1 tablespoon reserved for garnish
2 green onions, chopped, 1 tablespoon reserved for garnish
1 teaspoon hot sauce, optional
¼ teaspoon freshly ground black pepper
Vegetable chip, for serving

Steps:

  • In a medium bowl, mix together the sour cream and Hidden Valley® Ranch Dip Mix until well combined and smooth. Add bacon, cheddar cheese, and green onions, and mix until well incorporated.
  • Transfer the dip to a serving bowl and drizzle with hot sauce, if using, then sprinkle with the reserved bacon, cheddar cheese, and green onions, and finish with the pepper. Serve with vegetable chips.
  • Enjoy!
