BANANA BOATS
Banana boats are a classic campfire dessert: a delicious gooey mess of softened banana, melted chocolate and sticky marshmallows meant to be eaten with a spoon. Tweaking the recipe so it can be done at home in an oven or on a grill means that this treat can be enjoyed year round, even if you're far from a campfire. Bonus: If you're making them at home and feeling adventurous, you can add sprinkles, nuts or ice cream.

- Preheat the oven to 400 degrees F or prepare a grill for medium indirect heat. For a gas grill (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For a charcoal grill, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. (Be sure to consult the grill manufacturer's guide for best results.)
- Break the chocolate bar into squares. Lightly spray kitchen shears with cooking spray and cut the marshmallows in half crosswise.
- Use a paring knife to cut a slit down the center of 1 unpeeled banana lengthwise, being sure not to cut all the way through. Gently insert alternating pieces of half the chocolate and 4 marshmallow halves. Press the marshmallows into the banana as much as possible so they don't stick out too much. Wrap the banana in nonstick aluminum foil. Repeat with the remaining banana, chocolate and 4 marshmallow halves.
- Bake or grill over indirect heat, covered, until gooey, 12 to 14 minutes. Let cool 1 minute before unwrapping and eating.

- Puree 1 small sliced banana in a blender with 1/2 cup cottage cheese, 1/4 cup vanilla almond milk, 2 tablespoons sweetened cocoa powder and 1 tablespoon ground flax seeds. Add 1 cup ice and blend until smooth.

These are great for a camp fire during a trip to the outdoors. If you don't have a fire, use the oven or barbeque. Serve with hot chocolate.

- Slit each banana lengthwise through the peel, making sure not to cut all the way through to the other side. Stuff the bananas with marshmallows and chocolate chips.
- Wrap each banana in aluminum foil and cook over a fire, on the barbecue, or in a 300 degree oven for 5 minutes, or until chocolate is melted. Eat with a spoon.

- Split the bananas lengthwise, but don't cut all the way through. The goal is to create a boat to hold the ingredients. Load the bananas 1/4 cup each of the caramel bits, chocolate chips and mini marshmallows. Crumble 1 whole graham cracker onto each loaded banana. Wrap individually in 8-by-10-inch squares of foil, and then place near the campfire to melt the candies. Open up and eat with a spoon.
AIR FRYER S'MORES BANANA BOATS
When visiting my grandparents' lake house as a kid, they'd set up a tent and let us cousins pretend like we were camping. Grandma would always make these in the oven and bring them out to us so that we'd feel like we were really camping. Roasting the banana changes the the texture to almost a pudding-like consistency. Here is my adapted version using an air fryer.

- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Slice the bananas lengthwise, making sure not to cut through the bottom peel. Slightly open the bananas to form a pocket.
- Divide graham crackers, chocolate chips, and marshmallows between the 2 pockets. Set banana boats in the air fryer basket.
- Air fry until boats have blackened and marshmallow are toasted, about 6 minutes.

GRILLED BANANA BOATS

- Cut 6 (12-inch) sheets of heavy-duty foil. Heat gas or charcoal grill, or heat oven to 350°F.
- With sharp knife, make deep lengthwise cut along inside curve of each banana, being careful not to cut all the way through. Open slit to form pocket. Crimp and shape 1 sheet of foil around each banana, forming boats.
- Holding each banana in hand, fill pocket with 2 tablespoons chocolate chips, 2 tablespoons marshmallows and about 1/2 heaping teaspoon chopped pecans.
- Return each banana to its foil boat. Seal top of foil, leaving 2 to 3 inches headspace. Place on grill over medium heat. Cover grill; cook 8 to 10 minutes or until marshmallows soften. Or bake 15 to 20 minutes in oven until marshmallows soften. (Can also place in campfire coals to cook.)
