RHODE ISLAND HOT WIENERS
Make these famous Rhode Island Hot Wieners right at home! Grilled wieners on a steamed bun topped with meat sauce, mustard, onions and a sprinkle of celery salt!

Steps:
- Chop the onions. Set half aside for the sauce, and reserve the other half for topping the wieners at the end.
- Combine the seasonings: smoked paprika, chili powder, onion, powder, garlic powder, cayenne pepper, brown sugar and celery salt.
- Saute the onions and brown the meat: in a deep skillet or dutch oven, heat the peanut oil over medium heat. Saute the onions for 1-2 minutes and then add the ground beef and seasonings. Once the meat is no longer pink, reduce heat, cover and simmer on low for 30-45 minutes. You can lift the lid to check on the beef mixture every so often. Add a little peanut oil if the meat mixture starts to get dry.
- Grill the hotdogs and steam the buns. Brush a griddle or cast pan with a small amount of peanut oil and brown the wieners on all sides. Don't worry if the wieners split. Steam the hotdog buns for 7-10 minutes using a basket steamer. Buns will be soft and very hot!
- Assemble the wieners! Allow buns to cool to the touch, place the wieners in the buns and generously top each of the wieners with the meat sauce, dijon mustard, raw chopped onions and a sprinkle of celery salt.

HOT WIENERS RHODE ISLAND STYLE
Steps:
- In a medium saute pan over medium heat add, margarine and 1 minced onion. Saute till translucent, but do not brown. Next add chili powder, paprika, allspice, curry, dry mustard and cinnamon. Then add beef, stir thoroughly and cook for 5 minutes, add water and simmer over medium to low heat for 30 minutes.
- In a medium sauce pot boil hot dogs with salt and steam buns.
- When meat is done simmering, add meat mixture to the hot dog in the bun, top evenly with minced onion, yellow mustard, and a sprinkle celery salt.
RHODE ISLAND CALAMARI
Steps:
- Heat canola oil in a deep pot to 350 degrees F.
- In a skillet over high heat, combine olive oil, butter, pepperoncini and onion. Saute until lightly caramelized, then add garlic and cook until tender. Deglaze with white wine and cook until slightly reduced. Add the clam juice, red pepper, and lower heat to a simmer.
- Core out bread and lightly toast the bread bowl. Set aside.
- In a medium bowl, mix cornstarch, flour, seasoning salt and cayenne. Toss calamari in flour and shake off excess.
- Fry calamari in oil until golden brown and crispy. Toss fried calamari with the sauce and pour into the toasted bread bowl. Garnish with Roma tomatoes and scallions.

Why this Swedish sauce is named after the state of Rhode Island in the United states of America is a mystery. The sauce resemble a lot of the sauce called Thousand islands sauce, that is also served cold to salads and seafood.

SPICY AND GREASY RHODE ISLAND CALAMARI
Rhode Island-style calamari, which has hot cherry peppers in the dredging mix, is a local favorite. Look for medium-size fresh or frozen squid (about eight to a pound) for frying.

- Working Ahead:
- The squid can be cleaned (if necessary) and cut in the morning, then covered and refrigerated. The fry mix can also be made early in the day.
- Cut squid bodies into 1/2″ rings and put in a colander set over a bowl; add whole tentacles. Cover and refrigerate until ready to use (up to 6 hours).
- Fry Mix:
- Combine cornstarch, flour, cornmeal, salt, and both peppers in a large bowl and whisk well. Refrigerate if not using within an hour or two to prevent humidity from changing the mixture.
- Line a baking sheet with paper towels. Heat 3" of oil in a 4-quart Dutch oven over medium heat (or in a deep fryer) until it registers 360° on a deep-fry thermometer.
- While oil is heating, pour buttermilk into a large bowl and drop squid into it. Stir with a Chinese wire-mesh skimmer to coat, then lift about half of squid pieces from buttermilk, allowing excess buttermilk to drip back into bowl, and drop pieces into the dry mix. Rinse and dry the wire skimmer. Toss pieces to coat evenly with the mix, then lift them out with skimmer, gently shake off excess fry mix, and transfer to a plate. Bread remaining squid. Rinse and dry skimmer.
- Heat a 10″-12″sauté pan over medium heat and add butter. Once it melts, add garlic and sauté until golden. Add drained cherry peppers and toss to combine. Turn heat down to low while you fry squid.
- When the oil is hot, carefully drop half the squid pieces into oil. If any of the pieces stick to the bottom of the pot, loosen with tongs. Turn squid occasionally to cook evenly; it will only take about 1 1/2 minutes until they are crisp and golden.
- Fry remaining squid and drain.
- Add all of fried squid to the hot pan with the garlic and sliced peppers, sprinkle with chopped parsley, and quickly and gently toss (only twice). Divide among 4 small plates and serve immediately.

- Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets or line with parchment paper.
- Divide dough in half and roll or press each half out onto each prepared baking sheet into rectangles.
- Mix crushed tomatoes, pepperoni, 1/4 cup olive oil, Romano cheese, sugar, salt, garlic, oregano, and black pepper in a bowl, stirring to dissolve sugar and salt. Spread half the sauce evenly over each crust, spreading it all the way to the edges. Drizzle top of each pizza with 2 tablespoons olive oil.
- Bake in the preheated oven until the sauce looks dry at the edges, still moist in the middle, and crusts are crisp on the bottom, 15 to 20 minutes.
