Delicious, healthy and easy-to-make black bean dip.

Number Of Ingredients 10

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

1 (15 ounce) can refried black beans
1 (5 ounce) can chunk chicken
3 tablespoons minced onion
½ cup shredded Colby-Monterey Jack cheese
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon seasoned salt
¼ cup shredded Colby-Monterey Jack cheese
1 (16 ounce) package tortilla chips, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 4-cup casserole dish.
  • Mix refried beans, chicken, onion, and 1/2 cup Colby-Monterey Jack cheese together in a large bowl. Stir until chicken is broken up and ingredients are well combined. Mix in chili powder, cumin, and seasoned salt and spoon mixture into the prepared casserole dish. Top with 1/4 cup Colby-Monterey Jack cheese.
  • Bake in the preheated oven until hot and bubbly, about 25 minutes.
  • Serve with tortilla chips and refrigerate any leftovers.

Steps:

  • Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.

1 (20 ounce) can refried black beans
1 lb lean ground beef
1 (1 1/4 ounce) package taco seasoning (I used Taco Bell)
1 cup sour cream
1 (16 ounce) jar salsa
shredded cheddar cheese

Steps:

  • Brown ground beef and drain.
  • Combine meat with taco seasoning according to package directions.
  • Evenly spread beans in a 9" microwave safe dish.
  • Spread meat on top of beans.
  • Spread sour cream on top of meat.
  • Pour salsa onto sour cream.
  • Sprinkle with grated cheddar cheese.
  • Garnish with black olives if desired.
  • Microwave for 20 to 30 seconds or long enough to melt cheese.
  • Serve with tortilla chips.

1 cup reduced-fat sour cream
½ cup reduced-fat shredded Cheddar cheese
½ cup canned black beans, rinsed
¼ teaspoon dried parsley, plus more for sprinkling
¼ teaspoon ground paprika
⅛ teaspoon chili powder
⅛ teaspoon onion powder
1 pinch garlic powder
1 pinch crushed red pepper flakes
1 pinch ground black pepper

Steps:

  • Combine sour cream, Cheddar cheese, black beans, 1/4 teaspoon parsley, paprika, chili powder, onion powder, garlic powder, pepper flakes, and pepper in a bowl; gently fold together so black beans aren't crushed. Sprinkle with more parsley, if desired.
  • Keep refrigerated until ready to serve. Keep chilled while serving.

2 small onions, chopped (1/2 cup)
