FAVORITE DUTCH APPLE PIE

Favorite Dutch Apple Pie image

Everything about this dessert (but especially its dutch apple pie topping!) makes it the number 1 request for family gatherings. Its oat crust reminds me of a cookie, and the tart apple filling just can't be beat during harvest time. -Brenda DuFresne, Midland, Michigan

DUTCH APPLE PIE

Dutch Apple Pie image

There may never be an answer to what a true Dutch apple pie is. Some recipes add cream to the filling. Some call for making a deep-dish pie with a lattice top, and others top it with streusel. After a visit to a Pennsylvania Dutch diner, we decided to go with the streusel for a sweet and crunchy topping.

Time 7h30m

Yield 6 to 8 servings

Number Of Ingredients 17

2 1/2 cups all-purpose flour, plus more for the work surface
4 teaspoons granulated sugar
1/4 teaspoon fine salt
14 tablespoons cold unsalted butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 tablespoons fresh lemon juice
3 pounds baking apples, such as Golden Delicious, Cortland or Mutsu
2/3 cup granulated sugar
4 tablespoons unsalted butter
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Generous pinch freshly grated nutmeg
1 cup all-purpose flour
1/2 cup light brown sugar
1/4 teaspoon fine salt
6 tablespoons unsalted butter, at room temperature
1/2 cup chopped walnuts

Steps:

  • For the dough: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter, and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg, and pulse until the dough just comes together. (If the dough is very dry, add up to 1 tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
  • For the filling: Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and granulated sugar to the bowl with the lemon juice, and toss.
  • Melt the butter over medium-high heat in a large skillet. Add the sugared apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to extract as much liquid as possible. Return the juice to the skillet, and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the thickened juice, cinnamon, allspice and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
  • For the streusel topping: Whisk the flour, sugar and salt together in a medium bowl. Add the butter, and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the walnuts.
  • To assemble and bake the pie: Position a rack in the lower third of the oven, place a baking sheet on it and preheat the oven to 375 degrees F. On a lightly floured work surface, roll the dough disk into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
  • Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, 50 to 60 minutes. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

APPLE CRUMB PIE

Apple Crumb Pie image

Makes 1 (9-inch) deep-dish pie

Number Of Ingredients 18

6 medium Granny Smith apples, peeled, halved, cored, and thinly sliced
2 Pink Lady apples, peeled, halved, cored, and thinly sliced
1 1/2 cups granulated sugar, divided
1/4 cup cornstarch
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Buttery Pie Crust (recipe follows)
1 1/2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1/2 cup chopped pecans
1/4 teaspoon salt
1/2 cup butter, melted
2 cups all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup cold butter, cut into 1/2-inch pieces
1/3 to 1/2 cup cold heavy whipping cream

Steps:

  • In a large bowl, stir together apples and 1 cup granulated sugar. Let stand for 1 hour. Strain apples, discarding liquid. Return apples to bowl. In a small bowl, whisk together 1/4 cup granulated sugar, cornstarch, 1 teaspoon cinnamon, nutmeg, and cloves; stir into apples, and spoon mixture into prepared deep-dish Buttery Pie Crust. In a medium bowl, whisk together flour, next 3 ingredients, remaining 1/4 cup granulated sugar, and remaining 1 teaspoon cinnamon; stir in melted butter. Sprinkle over apples. Bake for 45 to 55 minutes or until top is golden brown. Let cool for at least 1 hour. Serve with vanilla ice cream, if desired.
  • In the work bowl of a food processor, pulse together flour, sugar, and salt. Add butter; pulse until mixture resembles coarse crumbs. With processor running, gradually add cream just until mixture forms a ball. Turn out dough onto a lightly floured surface, and knead for 15 seconds. Shape dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour. Preheat oven to 350°. On a lightly floured surface, roll dough to a 12-inch circle, and fit into a 9-inch regular or deep-dish pie plate. Trim excess dough, fold edges under, and crimp as desired. Line dough with parchment paper, and fill with pie weights. Bake for 15 minutes. Remove parchment and weights, and let cool completely.

1 1/4 cups plus 1 teaspoon sugar
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 1/2 cups plus 3 tablespoons flour
1 teaspoon salt
1/4 to 1/2 cup ice water

  • In a food processor combine the 2 1/2 cups flour, salt, 1 teaspoon sugar and pulse. Add in 2 sticks cubed, cold butter and slowly gradually add the ice water. Pulse until dough just comes together. Don't overwork the dough or it will make a tough crust.
  • Remove the dough from processor. Cut into two equal sections. Pat sections into discs and wrap in plastic wrap and place into refrigerator. Chill for 1 hour. (can be frozen for future use)
  • In a small mixing bowl bowl, combine cinnamon, nutmeg, 1 1/4 cups sugar and 2 tablespoons flour, set aside. In a large mixing bowl, add the peeled and sliced apples. Sprinkle spice and flour mixture over apples. Toss to coat.

  • Pour apple mixture into pie pan and add your 2 tablespoons sliced butter to the top of the mixture. Remove second dough disk from refrigerator and roll out large enough to fit the top of your pie with an overhang. Place pie dough on top of apple mixture and crimp edges to seal. With a knife, add four slits to your piecrust. Lightly brush egg wash onto top of dough. Sprinkle liberally with cinnamon sugar.
  • Place onto a baking tray into preheated oven for approximately 50 minutes or until golden brown and bubbly. Allow pie to rest until cool before slicing. Refrigerate any uneaten portions.

CRUNCH TOP APPLE PIE

Crunch Top Apple Pie image

A classic homemade American dessert that your friends and family will love.

Provided by Paula Deen

Time 20m

Yield 20

Number Of Ingredients 11

3/4 cup plus 4 tablespoons divided sugar
2 1/2 cups plus 4 tablespoons divided all purpose flour
1 teaspoon ground cinnamon
3 1/2 cups cooking peeled and chopped apples
1 (16 oz) jar applesauce
1 tablespoon lemon juice
15 tablespoons 2 tablespoons chopped into small pieces, 1 tablespoon at room temperature and 12 cold and cubed butter
1/4 teaspoon fine salt
1/4 teaspoon plus a dash, divided salt
1/4 cup cold vegetable shortening
1/4 to 1/2 cup (u ice water

Steps:

  • Paula's Perfect Pie Crust:
  • In a large mixing bowl, sift together 2 1/2 cups flour, 1/4 teaspoon fine salt and 3 tablespoons sugar. Add the shortening and break it up with your hands as you start to coat it with the flour. Add 12 tablespoons of cold butter cubes and work it into the flour with your hands or a pastry cutter. Work it quickly, so the butter doesn't get too soft, until the mixture is crumbly, like very coarse cornmeal. Add the ice water, a little at a time, until the mixture comes together forming a dough. Bring the dough together into a ball. When it comes together stop working it otherwise the dough will get over-worked and tough. Divide the dough in half and flatten it slightly to form a disk shape. Wrap each disk in plastic and chill in the fridge for at least 2 hours. On a floured surface roll each disk out into a 10 to 11-inch circle to make a 9-inch pie.
  • Yield: 2 (9-inch) pie crusts
  • Preheat oven to 425 °F.
  • Line a 9-inch pie pan with half of dough. Combine 3/4 cup sugar, 1 tablespoon flour, cinnamon, and a dash of salt in a bowl. Stir in the apples, applesauce, and lemon juice. Spoon the apple mixture into pie pan and dot with 2 tablespoons butter chopped into small pieces. Cut remaining crust into strips; arrange in a lattice design over top of pie.
  • For crunch topping:
  • Combine 3 tablespoons flour, 1 tablespoon sugar and a dash of salt in a bowl. Using a fork, cut in 1 tablespoon room temperature butter until mixture is crumbly. Sprinkle over top of crust. Bake for 10 minutes, then reduce heat to 350 °F and continue to bake for about 45 minutes, or until crust and topping are golden brown.

CRUNCH TOP APPLE PIE (PAULA DEEN)

Crunch Top Apple Pie (Paula Deen) image

Saw Paula Deen make this on Food TV and I was sold. The addition of applesauce to the pie filling makes it a perfect apple pie. I may never try another apple pie recipe! MMMmmm.

Provided by SharleneW

Categories     Pie

Time 1h10m

Yield 1 9-inch pie, 8 serving(s)

Number Of Ingredients 13

1 (9 inch) pastry for double-crust pie (homemade, frozen or refrigerated)
3/4 cup sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 dash salt
3 1/2 cups peeled chopped cooking apples (golden delicious is my favorite, but also try Rome and Granny Smith)
1 tablespoon lemon juice
1 (16 ounce) jar applesauce
2 tablespoons butter, chopped into small pieces
3 tablespoons all-purpose flour
1 tablespoon sugar
1 dash salt
1 tablespoon butter, at room temperature

Steps:

  • Preheat oven to 425°F.
  • Line a 9-inch pie pan with half of the dough.
  • Toss apples with 1 tablespoon lemon juice in a medium-sized bowl.
  • Combine sugar, flour, cinnamon and salt in a small bowl. Pour over apples and toss. Stir in applesauce. Spoon this mixture into pie pan and dot with butter.
  • Cut remaining crust into strips; using every other one arrange over top of pie. Lattice in remaining strips (going the other direction, crossing over and under every other strip).
  • For crunch topping, combine flour, sugar and salt in a bowl. Cut in butter with a fork until mixture is crumbly. Sprinkle over the top of crust.
  • Bake for 10 minutes, then reduce heat to 350°F and continue to bake for about 45 minutes, or until crust and topping are golden brown. (My pie with golden delicious apples was done after 30 minutes at this step, so watch your pie!).
  • Note: It helps to make a foil ring to put around pie crust edge to keep it from browning too fast.

DUTCH APPLE PIE

Dutch Apple Pie image

The difference between classic apple pie and a Dutch apple pie recipe is all in the delicious crumb topping. Dutch apple pie topping is made with butter, Gold Medal™ flour, brown sugar and granulated sugar, and you'll know when it's ready to come out of the oven when the crumb toppings are a deep golden brown. Instead of a second pie crust, enjoy a generous blanket of sweet streusel crumbs-sprinkled over a tender spiced apple filling.

Provided by Stephanie Wise

Categories     Dessert

Time 2h45m

Yield 8

Number Of Ingredients 13

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 cups sliced cored peeled apples
1/2 cup granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1/2 cup unsalted butter, softened
1 cup Gold Medal™ all-purpose flour
2/3 cup packed brown sugar
1 tablespoon granulated sugar

Steps:

  • In medium bowl, mix 1 cup flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary). Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap, and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 400°F. On surface sprinkled with flour, using floured rolling pin, roll pastry dough into circle 2 inches larger than 9-inch pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
  • In large bowl, toss Filling ingredients. Pour into pie plate, mounding apples toward center.
  • In medium bowl, use pastry blender or fingers to mix butter, 1 cup flour and the brown sugar until a crumb forms. Sprinkle evenly over top of pie. Sprinkle 1 tablespoon granulated sugar on top.
  • Bake 45 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble. Transfer to cooling rack to cool.
