Raspberry Coconut Breakfast Balls image

Raspberry and Coconut Breakfast balls are a great hand held breakfast for kids.

95g (1 cup) Rolled oats
60g (½ cup) Almond flour
30g (⅓ cup) Unsweetened desiccated coconut
134g (1 cup) Frozen raspberries
35g (¼ cup) Raisins / sultanas
30g (⅓ cup) Unsweetened desiccated Coconut

Steps:

  • Put all the ingredients (apart from the coconut for rolling) into a food processor and blend until smooth.
  • Roll into balls (I made 14) and coat in coconut.

1 package (12 ounces) vanilla wafers, crushed
3-1/3 cups sweetened shredded coconut, divided
1 can (14 ounces) sweetened condensed milk
3 teaspoons raspberry extract
1 teaspoon rum extract
1/4 cup pink sanding sugar

Steps:

  • Mix wafer crumbs and 1-1/3 cups coconut. Stir in milk and extracts. In a shallow bowl, combine sugar and remaining coconut. Shape dough into 1-in. balls; roll in coconut mixture. Refrigerate in airtight containers.

Raspberry Bliss Balls with Dates image

Raspberry bliss balls make the perfect, healthy snack - no baking required. Packed with juicy raspberries, chewy dates and coconut, they're great for lunchboxes or a sweet and satisfying afternoon treat. Quick and easy to make, they are naturally sweetened, dairy-free, nut-free and vegan.

Number Of Ingredients 9

1 1/2 cups rolled oats
1 1/2 cups desiccated coconut
1 1/3 cups raspberries (fresh or frozen)
18 medjool dates (pitted. Total 330 grams Medjool dates once pits are removed.)
1 teaspoon vanilla (paste or extract)
2 tablespoons chia seeds
pinch of salt
3 tablespoons acai powder (optional)
extra coconut, or cacao powder, for rolling

Steps:

  • Place all of the ingredients into a food processor and blend until the mixture breaks down and starts to stick together (this may take a couple of minutes). You may need to scrape down the sides of the food processor once or twice.
  • Roll the mixture into firm balls of your desired size. If you choose, you can roll the balls in cacao or extra coconut or drizzle with some melted dark chocolate.
  • Chill until ready to serve!

1 large box jello gelatin. (any flavor, but i like raspberry best)
1 can sweetened condensed milk.
1/4 teaspoon almond extract, (can use raspberry instead)
1 small box jello gelatin (for coating finished balls.)
