Sweet, fluffy Lemon Poppy Seed Healthy Baked Donuts drizzled with a melt-in-your-mouth glaze that are perfect for an indulgent (and guilt-free) breakfast, dessert or snack! (Gluten-free, dairy-free, refined sugar free, vegetarian)

1/2 cup rolled oats
1 tsp baking powder
pinch salt
2 eggs
1/4 cup cashew butter
1 banana
1 tsp lemon extract
2 Tbsp honey
1 1/2 Tbsp poppy seeds
1/2 cup powdered sugar
1 Tbsp almond milk

Steps:

  • Preheat oven to 350 degrees.
  • Place the rolled oats in a blender or food processor and blend into a flour-like texture.
  • Add the baking powder, salt, eggs, cashew butter, banana, lemon extract, and honey, then blend (on a low setting) until everything is evenly mixed together.
  • Add the poppy seeds and hand mix into the batter.
  • Pour the batter into an oiled donut pan and bake for about 15 minutes (or until a toothpick comes out clean).
  • If desired, mix the sugar and milk to create the glaze and drizzle over the cooled donuts.
  • Serve and enjoy!

These donuts are made with Swerve® and almond milk. They are baked, rather than fried, which makes them healthier than a regular donut. They are delicious, quick, and very easy to make.

½ cup granulated sugar substitute (such as Swerve®)
2 teaspoons lemon zest
1 large egg, at room temperature
2 ½ tablespoons unsalted butter, melted
1 tablespoon freshly squeezed lemon juice
1 teaspoon vanilla extract
½ teaspoon lemon extract
½ cup almond milk, at room temperature
1 ¼ cups all-purpose flour
1 ¼ teaspoons baking powder
¼ teaspoon salt
2 tablespoons poppy seeds
1 ¼ cups powdered sugar substitute (such as Swerve®)
1 tablespoon freshly squeezed lemon juice
1 tablespoon almond milk, at room temperature
1 teaspoon lemon zest
¼ teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray 2 donut pans with nonstick cooking spray.
  • Place granulated sugar substitute and lemon zest in a bowl. Mix until zest is fully coated with sugar. Add egg, butter, lemon juice, vanilla, and lemon extract. Add almond milk and mix until well incorporated.
  • Sift flour, baking powder, and salt together. Add to the sugar mixture. Fold in poppy seeds. Divide the batter evenly among the donut pans.
  • Bake in the preheated oven until a toothpick inserted into a donut comes out clean, 10 to 12 minutes. Cool in the pans for 10 minutes. Remove from the pans and cool completely.
  • While the donuts cool, make the icing. Mix powder sugar substitute, lemon juice, almond milk, lemon zest, vanilla, and salt together in a bowl. Set a rack over a cookie sheet lined with parchment paper. Dip donuts into the icing and place on the rack until glaze sets, 2 to 3 minutes.

3 tablespoons coconut oil, melted
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 cup organic confectioners' sugar plus more as needed
1 to 2 tablespoons unsweetened almond milk
1 teaspoon lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
2 teaspoons vegan-approved yellow gel food coloring

Steps:

  • Preheat oven to 400°. Lightly grease doughnut baking pans with coconut oil; set aside., In a medium bowl, whisk together flour, sugar, baking powder, baking soda, poppy seeds, zest and salt. In a separate bowl, stir together almond milk, coconut oil, lemon juice and vanilla; add to dry mixture, mixing until combined. Transfer batter to a pastry bag; pipe batter into prepared pans. , Bake until light golden brown and a toothpick comes out clean, 10-12 minutes. Cool in pans 5 minutes before removing to wire racks to cool completely., For glaze, whisk together confectioners' sugar, almond milk, lemon juice, zest and vanilla until smooth; whisk in food coloring. Dip tops of donuts into glaze; let stand until set.
