Steps:
- Place cubed potatoes in a greased 9"x13" baking dish.
- Place butter slices on of potatoes.
- Cover and bake at 325° for about an hour, until potatoes are tender.
- In a small mixing bowl, whisk together sour cream, cream cheese, and Ranch mix.
- Stir Ranch mixture into potatoes. Top potatoes with cheese.
- Bake for an additional 5-10 minutes, until cheese is melted and bubbly.
RANCH POTATOES WITH CHEESE RECIPE - (4.5/5)

- Preheat oven to 350 degrees F. Mix together (in a large bowl) the ranch dressing, dill, cheese and bacon. Add in the potatoes. Sprinkle in a pinch of salt and pepper. Toss to coat potatoes. Spoon into a greased 9 x 13 baking dish. Cover with foil. Bake for 60 minutes. Stir gently halfway through to get the bottom potatoes rotated so they don't become burnt and to ensure that the middle and top potatoes get a chance to brown. Remove foil. Raise oven temperature to 400 degrees. Gently stir again, as necessary. Bake for an additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is gooey, browned and bubbly on top. Serve with scallions sprinkled on top for garnish. Great with a dollop of sour cream.

- Preheat oven to 400°F (200˚C).
- Slice the potatoes in half, lengthwise, then slice each half lengthwise three times and across four times, to cube.
- Bring a large pot of water to a boil and drop in chopped potatoes, cook 10 minutes.
- Drain potatoes and mix in ranch, garlic powder, paprika, salt, and pepper.
- Transfer to a 9x13-inch (23x33 cm) baking dish.
- Bake for 30-35 minutes, or until nicely browned.

Many versions of this...but this is how I make them! Being a meat and potaoes kind of girl, these are just one of my all-time favorite potatoes! The original version just wasn't very creamy.

Steps:
- In large bowl, blend soups and cream cheese.
- Microwave til creamy and cheese is melted, stirring occasionally.
- Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes.
- Fold well til all potatoes are coated.
- Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly.
- Sprinkle top with rest of shredded cheese.
- COVER and bake at 350º for 50-55 minutes.
- Uncover, top with onions.
- Bake UNCOVERED for another 5 minutes or til onions are lightly browned.
- *Nice additions:.
- 1 cup diced, fully-cooked ham.
- Cooked, crumbled bacon (4-6 slices).
- Saute'd onions.
- Saute'd mushrooms.
CHEESY RANCH POTATO BAKE
This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.
