A wonderful, quick alternative to garlic bread. Lots of herbs and lots of flavor!

2 ¾ cups all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon active dry yeast
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon dried basil
1 pinch ground black pepper
1 tablespoon vegetable oil
1 cup water
2 tablespoons olive oil
1 tablespoon grated Parmesan cheese
1 cup mozzarella

Steps:

  • In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water.
  • When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for 20 minutes.
  • Preheat oven to 450 degrees F (230 degrees C). Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese.
  • Bake in preheated oven for 15 minutes, or until golden brown. Serve warm.

1 loaf (1 pound) frozen bread dough, thawed
1/2 cup sliced pimiento-stuffed olives
1/2 cup shredded Colby-Monterey Jack cheese
1/2 cup shredded Parmesan cheese
1 teaspoon Italian seasoning
2 tablespoons olive oil

Steps:

  • On an ungreased baking sheet, pat dough into a 12x6-in. rectangle. Build up edges slightly. Top with olives, cheeses and Italian seasoning; press gently into dough. Drizzle with oil. , Bake at 350° until cheese is melted and golden brown, 15-20 minutes. Let stand for 5 minutes before slicing.

2 3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 (1/4 ounce) packet active dry yeast
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1 dash ground black pepper
1 tablespoon vegetable oil
1 cup warm water (105-115 degrees)
2 tablespoons olive oil
2 tablespoons parmesan cheese (grated)
1 1/2 cups mozzarella cheese (shredded)

Steps:

  • Mix the yeast and water in a small bowl. Let proof for 10 minutes (until bubbles begin to form).
  • In large bowl, stir together flour, salt, sugar, garlic powder, oregano, thyme, basil, and black pepper.
  • Add the yeast mix and vegetable oil to the dry ingredients and combine.
  • When dough has pulled together, turn out onto lightly floured surface and knead until smooth and elastic.
  • Lightly oil a large bowl, place dough in bowl, and turn to coat with oil.
  • Cover with damp cloth and let rise in warm place 25 minutes.
  • Preheat oven to 425 degrees.
  • Punch dough down, place on greased baking sheet.
  • Pat dough into 1/2-inch thick rectangle (doesn't have to be perfect).
  • Using your knuckle, make indentations in the dough about 1/2-inch apart, then prick dough with fork.
  • Brush top with olive oil, then sprinkle with Parmesan and mozzarella cheese.
  • Bake for 13-15 minutes until golden brown.

1 (.25 ounce) package active dry yeast
⅓ cup warm water (110 degrees F/45 degrees C)
2 cups all-purpose flour
2 tablespoons olive oil

Steps:

  • In a small bowl, dissolve sugar and yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the yeast mixture with flour; stir well to combine. Stir in additional water, 1 tablespoon at a time, until all of the flour is absorbed. When the dough has pulled together, turn it out onto a lightly floured surface and knead briefly for about 1 minute.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 30 minutes.

5 tablespoons olive oil, divided
1 teaspoon butter or shortening
3 3/4 cups (484 grams) bread flour
1 teaspoon sugar, or honey
1 1/4 teaspoons fine salt
1 tablespoon instant yeast
1 2/3 cups (382 grams) water
1 teaspoon flaky sea salt, for topping
1/4 teaspoon coarsely ground black pepper or crushed red pepper flakes, optional

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and turn on the oven light. Grease a 9-x 13-inch baking pan with 2 1/2 tablespoons of olive oil. Spread the olive oil to cover the bottom and sides of the pan. Set aside.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, yeast, salt, sugar, water, and 2 tablespoons of olive oil. Mix on low speed until a dough begins to form, about 2 minutes.
  • Let the dough rest for 10 minutes.
  • With the mixer on medium speed, knead the dough, scraping down the sides of the bowl occasionally with an oiled spatula, until the mixture is well combined and no more flour is visible, about 4 minutes. The dough will be very sticky and may not form a ball.
  • Scrape the dough into the prepared baking pan, pressing lightly and stretching to fit. Place the pan in the oven for 1 hour to proof.
  • Remove the pan, then heat the oven to 425 F.
  • While the oven is heating, drizzle the remaining 1 tablespoon of olive oil all over the dough. The dough will be puffy, so handle it gently to avoid deflating it. Using your fingertips, lightly dimple the dough all over, then sprinkle with the flaky sea salt and pepper, if using.
  • Bake the focaccia until golden brown, 21 to 24 minutes. Let cool slightly before slicing and serving.

3 ½ cups all-purpose flour
1 teaspoon white sugar
1 teaspoon salt
1 tablespoon active dry yeast
1 cup water
2 tablespoons vegetable oil
1 egg
3 tablespoons olive oil
1 teaspoon dried rosemary, crushed

Steps:

  • Combine 1 cup flour, sugar, salt, and yeast. Mix well. Heat water and vegetable oil until warm, and add to yeast mixture along with the egg. Blend with an electric mixer at low speed until moistened. Beat for 2 additional minutes. Stir in 1 3/4 cup flour while beating, until dough pulls away from side of bowl.
  • Knead in 3/4 cup flour on floured surface. Cover dough with a bowl, and let sit for 5 minutes. Place dough on a greased baking sheet. Roll out to 12 inch circle. Cover with greased plastic wrap and a cloth towel. Place in a warm place for 30 minutes.
  • Uncover dough, and poke holes in it with a spoon handle at 1 inch intervals. Drizzle olive oil on dough, and sprinkle with crushed rosemary.
  • Bake at 400 degrees F (205 degrees C) for 17 to 27 minutes, until just golden. Remove from baking sheet, and cool on rack.

Make a simple, homemade version of this classic Italian bread. Serve our rosemary focaccia alongside pasta dishes or enjoy with green salads

500g strong bread flour , plus extra for dusting
7g dried fast action yeast
2 tsp fine sea salt
5 tbsp olive oil , plus extra for the tin and to serve
1 tsp flaky sea salt
¼ small bunch of rosemary , sprigs picked

Steps:

  • Tip the flour into a large mixing bowl. Mix the yeast into one side of the flour, and the fine salt into the other side. Then mix everything together, this initial seperation prevents the salt from killing the yeast.
  • Make a well in the middle of the flour and add 2 tbsp oil and 350-400ml lukewarm water, adding it gradually until you have a slightly sticky dough (you may not need all the water). Sprinkle the work surface with flour and tip the dough onto it, scraping around the sides of the bowl. Knead for 5-10 mins until your dough is soft and less sticky. Put the dough into a clean bowl, cover with a tea towel and leave to prove for 1 hr until doubled in size.
  • Oil a rectangle, shallow tin (25 x 35cm). Tip the dough onto the work surface, then stretch it to fill the tin. Cover with a tea towel and leave to prove for another 35-45 mins.
  • Heat the oven to 220C/200C fan/gas 7. Press your fingers into the dough to make dimples. Mix together 1½ tbsp olive oil, 1 tbsp water and the flaky salt and drizzle over the bread. Push sprigs of rosemary into the dimples in the dough.
  • Bake for 20 mins until golden. Whilst the bread is still hot, drizzle over 1-2 tbsp olive oil. Cut into squares and serve warm or cold with extra olive oil, if you like.

1/4 cup oil-cured olives, coursley chopped
2 teaspoons olive oil
1 pinch sea salt (or kosher) (optional)
1/4 cup red onion, thinly sliced
1 teaspoon fresh rosemary, chopped (or 1/4 tsp dried)

Steps:

  • grease a 9-inch square metal cake pan. roll out the dough to 12x6-inch rectangle, sprinkle with olives. fold in half to make 6-inch square; pat into pan. cover with plastic wrap, and let rise until double in size, about 30 minutes.
  • with fingertips, make indents in dough. brush with oil, sprinkle with salt, onion and rosemary. bake in centre of 450*F oven until golden brown, about 30 to 40 mintes. with spatula, remove from pan, and let cool on rack.

  • let cool, cover with plastic wrap and set aside for up to 24 hours. reheat in 350*F oven for 10 minutes. cut into 4 strips, cut each strip in half and serve.
