A scrumptious date nut cake that is truly fit for a queen. It is crowned with a broiled coconut topping.

1 cup boiling water
1 cup dates, pitted and chopped
¼ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts
1 cup flaked coconut
⅔ cup packed brown sugar
6 tablespoons butter
¼ cup cream

Steps:

  • Pour boiling water over dates in a small bowl, and let stand until cool.
  • Measure flour, baking powder, soda, salt, and nuts into a small bowl. Stir to mix.
  • Cream 1/4 cup butter or margarine and white sugar together in a mixing bowl; beat in egg and vanilla. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture. Spread batter into a greased 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until an inserted wooden pick comes out clean.
  • To Make Topping: Mix coconut, brown sugar, 6 tablespoons butter and cream in a small saucepan over medium heat. Boil for three minutes. Spread over warm cake, and brown under broiler.

11/2 c chopped dates
1 c water
11/2 tsp baking soda
1/4 c brown sugar
3/4 c white sugar
1/2 c butter
2 medium beaten eggs
1 tsp vanilla bean extarct
11/2 c flour
1 tsp baking powder
1/2 tsp salt
1/2 c walnuts chopped (optional)
CREAMY AMBER COATING GLAZE
2 c brown sugar, firmly packed
2/3 c buter
11/3 c evaporate milk or cream
1 tsp vanilla extract

Steps:

  • 1. Put the dates in water and cook until the dates are soft. Add the baking soda. Grease a sguare pan or a round pan.
  • 2. Cream together butter, sugar and add one egg at the time. Then add the vanilla. Sift together flour, baking powder and salt. Add to the mixture stirring and add the dates. Add the nuts if you want too. I do not add any nuts. I love it plain, simple and natural. I do like A COATING on mine. You also could cook the dates longer so it will become as a paste. It is a matter of taste.
  • 3. Bake it about 30 minutes. You can make it in a round pan as a cake and ice it or bake it in a square pan and serve it as an not iced square. I LOVE MINE SOAKED IN MY DIVINE SAUCE.
  • 4. GLAZE- Put all the ingredients in a saucepan and bring to a boil. Simmer for about 7 minutes. Now you are ready to coat the cake... You can poke the cake and pour the coating so it will get gooey-soaky. I love doing it. You also pour generously LIKE I DO over the cake while serving.
  • 5. You can add a good 1/2 cup to your sauce of either Scotch or Bourbon... or just splash it over the cake.
  • 6. If you like walnuts or pecans you can sprinkle generously on top of the coating like this.

1/2 cup unsalted butter, softened
3/4 cup brown sugar
2 eggs
1/2 cup 35% cream
1/2 cup unsalted butter
1 1/2 cups brown sugar
1 1/2 cups unsweetened dried shredded coconut

Steps:

  • Cake:.
  • With the rack in the middle position, preheat the oven to 350°F Line the bottom of a 9-inch square baking dish with parchment paper. Butter and flour the sides.
  • In a saucepan, bring the water, dates and baking soda to a boil. Simmer for about 3 minutes, stirring frequently. Transfer to a bowl and let cool.
  • In a bowl, combine the flour, baking powder and salt. Set aside.
  • In another bowl, cream the butter and brown sugar using an electric mixer. Add the eggs one at a time, beating until the mixture becomes smooth and creamy. With the mixer on low speed, add the dry ingredients, alternating with the date mixture. Pour into the pan. Bake until a toothpick inserted in the centre comes out clean, 25 to 30 minutes. Remove from the oven. If desired, place the pan on a baking sheet to catch any icing that might spill over. Set the oven to broil.
  • Icing:.
  • In a saucepan, bring all ingredients to a boil, stirring constantly. Reduce the heat and simmer gently for about 2 minutes.
  • Spread the icing on the hot cake and broil until golden brown, 2 to 3 minutes.

1 tsp baking soda
1 c boiling water
1 c sugar
1/2 c butter, softened
1 large egg
1 tsp vanilla extract
1 1/2 c all purpose flour

FROSTING ( YOU ONLY FROST THE TOP)
5 Tbsp brown sugar, firmly packed
5 Tbsp cream
2 Tbsp butter, softened
1 c unsweetened shredded coconut

Steps:

  • 1. CAKE: Preheat oven to 350 degrees F. Butter and flour a 9x13x2 inch pan AFTER lining it with parchment paper.
  • 2. Combine dates and baking soda, pour boiling water over them. Let the mixture stand.
  • 3. In a large mixing bowl, cream butter and sugar. Add egg and vanilla, and beat well. Add flour, baking powder,and salt; pour in date mixture and nuts, and mix all together well.
  • 4. Pour batter into pan. Transfer pan to the preheated oven and bake 25-30 minutes, until golden brown on top. Remove from oven and let stand.
  • 5. ICING: Mix all icing ingredients except coconut in a small saucepan. Bring mixture to a boil; boil 3 minutes, until thickened. Pour icing over cake and spread. Sprinkle shredded coconut on top.
