BANANA PUDDING

Steps:

• In a large saucepan, mix sugar, flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk eggs. Whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in vanilla. Cool 15 minutes, stirring occasionally., In an ungreased 8-in. square baking dish, layer 25 vanilla wafers, half of the banana slices and half of the pudding. Repeat layers., Press plastic wrap onto surface of pudding. Refrigerate 4 hours or overnight. Just before serving, remove wrap; crush remaining wafers and sprinkle over top.

• In a large bow, beat cream cheese until fluffy.
• Beat in condensed milk,pudding mix, cold milk and vanilla until smooth.
• Fold in half the whipped topping.
• In 9 x 13 dish layer vanilla wafers with bananas and pudding mixture.
• Top with remaining whipped topping.
• Chill well.
• **Cook time is the chill time. There is no cooking involved.

Steps:

• In a lg bowl, beat together the pudding mix and the cream cheese with an electric mixer on low speed til well combined. Gradually add the milk beating on low speed til almost smooth. Fold in the thawed whipped topping and the sliced bananas.
• Arrange a layer of vanilla wafers on the bottom and up the sides of a 3 qt dessert dish. Top with 1/3 of the pudding mixture, repeat layers twice more, ending with the pudding mixture. Chill 2 - 24 hrs.
• Just before serving, garnish with additional slices of banana if desired.

• Preheat oven to 375 degrees.
• Meringue:.
• Beat egg whites until soft peaks form.
• Add the vanilla extract and cream of tartar.
• Add the sugar, 1 tablespoon at a time.
• Continue to beat on high speed until hard peaks are formed.
• Banana Pudding:.
• Combine sugar, flour and salt in a bowl and set aside.
• In a saucepan, beat the egg yolks.
