2 cups pecan halves
2 tablespoons pure maple syrup, more for drizzling
3 tablespoons superfine sugar
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 3/4 cups all-purpose flour
2 large eggs
1 3/4 cups buttermilk
1 15-ounce can pumpkin purée
1 teaspoon vegetable oil

Steps:

  • Place pecans in a large dry skillet over medium heat. Stir until warm and fragrant. Spoon syrup on top, and stir until coated. Transfer to a plate.
  • In a large bowl, combine sugar, baking powder, salt, baking soda and flour. Stir to blend.
  • In another large bowl, whisk together eggs and buttermilk. Add pumpkin purée. Add flour mixture, and whisk until smooth.
  • Heat a heavy skillet or griddle, and coat surface with oil. Pour in scant 1/4-cup measures of batter to make 3-inch diameter disks.
  • When pancakes are lightly browned (after about 2 minutes), flip them over, and cook 1 1/2 to 2 minutes. Transfer pancakes to a platter and cover with foil.
  • Place pancakes on warm plates, garnish with pecans, and drizzle with maple syrup.

1 cup all-purpose flour
1 cup yellow cornmeal
1 cup confectioners' sugar, plus extra sugar for topping
1/2 teaspoon dried ground ginger
1/2 teaspoon cinnamon
2 eggs, lightly beaten
1 cup mashed pumpkin (canned pumpkin may be used)
3 cups milk
Butter for frying

Steps:

  • Combine flour, cornmeal, 1 cup of the confectioners' sugar, ginger and cinnamon in a large mixing bowl.
  • Combine eggs and pumpkin, and beat into the flour mixture. Add milk slowly to make a smooth batter.
  • Heat butter in a frying pan or crepe pan about 8 inches in diameter. Pour about 1/2 cup of the batter in the pan, and swirl around to make a thick pancake. Cook on both sides until nicely browned. Serve hot, heavily dusted with confectioners' sugar.

1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon salt

Steps:

  • In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

4 eggs
1 cup half-and-half
2 tablespoons melted butter
Salt to taste, if desired
1/4 cup sugar
1 cup flour
2 teaspoons baking powder
1 cup pumpkin puree (fresh or canned)
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon cinnamon
Peanut, corn or vegetable oil for the griddle

Steps:

  • Place all ingredients except oil in container of food processor or electric blender and blend thoroughly. Pour and scrape mixture into a mixing bowl and let stand 30 minutes.
  • Heat nonstick griddle or skillet and brush lightly with oil. Spoon or ladle about 2 tablespoons of the batter at a time onto the hot surface, spacing pancakes about 2 inches apart. Each pancake should be about 3 inches in diameter. Cook over moderate heat until lightly browned on one side, about 1 1/2 minutes. Cooking time will depend on intensity of heat. Turn and cook on other side until lightly browned, about 1 minute. Continue making pancakes with remaining batter.
  • Serve plain with sliced turkey or ham, or as a dessert lightly sprinkled with confectioners' sugar.

Steps:

  • Heat a griddle or large skillet over medium-low heat. In a bowl, mix together dry ingredients. Beat eggs into 1 1/2 cups milk, then stir in 2 tablespoons melted cooled butter, if using it. 200g plain flour
½ tsp baking powder
200ml milk
100g cooked butternut squash or pumpkin, mashed
1 egg , separated

Steps:

  • Tip the flour into a bowl and add the baking powder. Measure the milk into a jug and stir in the butternut squash, followed by the egg yolk.
  • Make a well in the centre of the flour and gradually add the milk mixture until you have a lump-free batter. Alternatively, tip everything into a blender and whizz it.
  • Whisk the egg white until stiff, then fold it into the batter.
  • Heat a non-stick pan and cook 1 large or 3 small pancakes at a time (if making small pancakes, use 1 tbsp for each). Wait until lots of bubbles have risen to the top and the surface has begun to dry out before turning them over, but keep an eye on the base to make sure it doesn't get too brown. Repeat with the remaining mixture.
