Our FAVORITE Blueberry Cobbler recipe made with fresh or frozen blueberries and basic pantry ingredients. The end result is the perfect cobbler!

4 cups blueberries ((fresh or frozen))
1/2 cup granulated sugar
1 teaspoon lemon zest
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • Add blueberries, sugar and zest to a bowl and stir to combine.
  • In a separate bowl mix together the batter ingredients: flour, sugar, baking powder, and salt. Stir in the milk, just until combined.
  • Pour blueberries over melted butter in pan. Drizzle batter over the top. Sprinkle with a little bit of cinnamon.
  • Bake at 350 degrees for about 35-40 minutes, or until lightly golden on top.
  • Serve warm, with a scoop of ice cream, if desired!

Number Of Ingredients 9

1 sheet frozen puff pastry
1 pound blueberries (frozen or fresh, don't thaw frozen berries in advance)
1/4 - 1/2 cup sugar (depending on how sweet the berries are)
2 tsp. fresh lemon zest
1 tsp. ground cardamom
1 1/2 Tbsp. instant tapioca, ground* or
1 Tbsp. tapioca starch or
1 Tbsp. corn starch
1 Tbsp. butter, cut into small pieces

Steps:

  • Preparation: 1. Thaw pastry according to package directions - 30 to 40 minutes. Once thawed, place a 1 quart casserole or baking dish on it and cut the pastry to fit. 2. Heat oven to 400 degrees. 3. If using fresh berries, pick through them discarding any red ones and checking for stems. 4. Mix together remaining ingredients in a medium bowl and pour into casserole. Spread evenly and ad pieces of butter on top. 5. Place the puff pastry on top and gently press down. Cut 4 slits in the top. 6. Bake in center of oven until pastry is puffed and golden and fruit is bubbling around edges - 40 to 50 minutes. *Note: I've never seen tapioca starch, so I buy instant tapioca and grind it in the electric coffee grinder I use for spices. It you don't grind it you end up with little tapioca balls in the mixture and I don't like them.

Rich, lightly sweetened cream biscuits top a luscious filling of fresh blueberries in one of Martha's favorite desserts. The filling is made with fresh berries, cornstarch, lemon juice, and a hint of cinnamon for a summer dessert bursting with flavor.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon coarse salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
3/4 cup cold heavy cream, plus more for brushing
6 cups (3 pints) blueberries
1/2 cup sugar, plus more if needed
1/4 cup cornstarch, plus more if needed
1/4 teaspoon ground cinnamon
Sanding sugar, for sprinkling

Steps:

  • Preheat oven to 375 degrees. Pulse flour, baking powder, and salt in a food processor until combined. Add butter, and process until mixture resembles coarse meal. Transfer mixture to a large bowl, and add heavy cream in a slow, steady stream, mixing with a wooden spoon until dough just comes together. Divide dough into 9 pieces, and loosely form each into a ball and flatten slightly. Set aside.
  • In a medium bowl, combine blueberries, sugar, cornstarch, and cinnamon; toss gently to coat. Transfer mixture to an 8-inch square baking dish. Top blueberry mixture with dough balls, spacing evenly. Brush dough with heavy cream, and sprinkle with sanding sugar. Bake until berries are bubbling in center and biscuits are golden brown, about 55 minutes. Transfer dish to a wire rack, and let cool slightly, about 30 minutes.
