COCONUT BANANA COOKIES

This is a springtime variation on my grandma's banana drop cookies and, with tons of coconut flavor, it's perfect for Easter. -Elyse Benner, Solon, Ohio

1/2 cup shortening, room temperature
1/4 cup creamy cashew butter
1 cup sugar
1 cup mashed ripe banana (about 2 medium)
1 large egg, room temperature
1 tablespoon grated lime zest
1 teaspoon salt
1/2 teaspoon baking soda
1-3/4 cups unsweetened finely shredded coconut
1-1/2 cups all-purpose flour
1/2 cup sweetened flaked coconut

Steps:

  • Preheat oven to 375°. Cream shortening, cashew butter and sugar until light and fluffy, 5-7 minutes. Beat in next 5 ingredients until thoroughly mixed. In a separate bowl, mix unsweetened coconut and flour. Beat into creamed mixture just until combined., Using a medium cookie scoop, drop dough 2 in. apart onto parchment-lined baking sheets. Sprinkle with sweetened coconut. Bake until edges are golden brown, 15-20 minutes (cookies will have cakelike texture). Remove from pans to wire racks to cool. Serve warm or at room temperature.

These banana cookies made with coconut oil are soft and mildly sweet with a subtle coconut flavor. My son likes them with raspberry jam on top.

2 teaspoons coconut oil, or as needed
½ cup twice-sifted coconut flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon sea salt
1 ⅓ cups mashed ripe bananas
3 large eggs
⅓ cup extra-virgin coconut oil, warmed slightly
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C) using the convection setting. Grease 2 cookie sheets with 1 teaspoon coconut oil each.
  • Mix coconut flour, cream of tartar, baking soda, and salt together in a small bowl.
  • Combine mashed bananas, eggs, 1/3 cup coconut oil, and vanilla extract in a separate bowl. Beat with an electric mixer until creamy. Slowly add the flour mixture while continuing to mix.
  • Drop spoonfuls of cookie dough onto the greased cookie sheets. Flatten cookies using the back of the spoon.
  • Bake in the preheated oven until no longer wet, about 35 minutes.

1 ¼ cups margarine
¾ cup firmly packed brown sugar
½ cup white sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
3 cups rolled oats
2 ripe bananas, sliced
1 ½ cups raisins
1 cup flaked coconut

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the margarine, brown sugar and white sugar. Beat in the egg and vanilla. Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves; stir into the creamed mixture until well blended. Stir in the oats, bananas, raisins and coconut, one at a time using a wooden spoon. Drop by rounded spoonfuls 2 inches apart onto the prepared cookie sheet.
  • Bake for 11 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.

  • In a food processor or blender, puree banana until it becomes a smooth liquid. Add in coconut and pulse just a few times to evenly mix the two ingredients. Be careful to not overmix. The coconut should still be in shreds, but just smaller. Your mixture should be thick.
  • Scoop 1 tbsp of dough and place onto cookie sheet. Repeat with remaining dough, spacing two inches apart. Use the back of a spoon to flatten each cookie into a circle that is 1/4 inch thick.
  • Bake cookies about 17-20 minutes or until edges turn brown and surface is no longer wet. Let cookies cool completely on baking sheet before removing. The bottom of the cookies do stick a little, so make sure to use a cookie spatula to remove cookies from sheet.
