1 1/2 pounds zucchini, cut lengthwise into 1/4-inch-thick slices
2 red bell peppers, quartered
1/4 cup extra-virgin olive oil, divided
2 tablespoons balsamic vinegar
2 teaspoons packed light brown sugar
2 tablespoons chopped basil

Steps:

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure , or heat a 2-burner grill pan over medium heat until hot.
  • Toss vegetables with 2 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Grill, turning occasionally, until tender, 6 to 8 minutes total. If using grill pan, grill in batches, 10 to 15 minutes per batch. Transfer peppers to a bowl and let stand, covered, 10 minutes. Peel peppers and cut into 1-inch pieces. Cut zucchini crosswise into 1-inch pieces.
  • Whisk together vinegar, brown sugar, 1/4 teaspoon salt, 1/8 teaspoon pepper, and remaining 2 tablespoons oil in a large bowl. Stir in vegetables and basil. Let stand 15 minutes for flavors to blend.

Number Of Ingredients 7

2 red peppers, quartered
2 zucchini, each cut into 4 lengthwise slices
2 fresh peaches, each cut into 8 wedges
3/4 cup KRAFT Balsamic Vinaigrette Dressing, divided
1 pkg. (5 oz.) spring lettuce mix
1/2 cup crumbled Gorgonzola cheese
1 cup ATHENOS Pita Chips Original, coarsely crushed

Steps:

  • Heat greased grill to medium heat.
  • Toss peppers, zucchini and peaches with 1/4 cup dressing. Grill 5 to 6 min. or just until peaches are softened, turning after 3 min. Remove peaches from grill. Continue to grill vegetables an additional 5 to 7 min. or until crisp-tender, turning after 4 min. Transfer to cutting board.
  • Chop peppers and zucchini. Toss lettuce with remaining dressing in large bowl. Add chopped vegetables and peaches; mix lightly.
  • Top with remaining ingredients.

1 medium green pepper, julienned
1 medium sweet red pepper, julienned
2 medium zucchini, julienned
1 tablespoon butter
2 teaspoons soy sauce

Steps:

  • Place the vegetables on a double layer of heavy-duty foil (about 18 in. x 15 in.). Dot with butter; drizzle with soy sauce. Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 5-7 minutes on each side or until vegetables are crisp-tender.

¼ cup balsamic vinegar
2 tablespoons olive oil
¼ cup honey
2 teaspoons salt
1 teaspoon pepper
4 peaches
2 boneless, skinless chicken breasts
oil, to taste
salt, to taste
pepper, to taste
5 oz mixed greens
1 cup grape tomatoes, halved
½ cucumber, chopped
½ red onion, sliced
½ cup pecan

Steps:

  • Add the balsamic vinegar, olive oil, honey, salt, and pepper to a bowl and mix until well combined. Reserve half for salad dressing.
  • Halve the peaches and remove the pit. Lightly brush the cut side with balsamic vinaigrette.
  • Grill for 5 minutes over medium high heat, or until browned.
  • On a cutting board, sprinkle the chicken with oil, salt, and pepper.
  • Grill the chicken until browned on one side and flip. Brush with vinaigrette on cooked side and repeat once other side is browned.
  • Prepare the peaches and chicken for the salad by slicing both.
  • Add the grilled peaches and chicken to a bowl with the mixed greens, grape tomatoes, cucumber, red onion, and pecans, and drizzle with the remaining balsamic vinaigrette. Mix thoroughly.
  • Enjoy!

2 medium zucchini, sliced lengthwise into thin strips
Canola oil
Salt and freshly ground black pepper
1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 teaspoon finely grated lemon zest
Honey
2 tablespoons finely chopped fresh flat-leaf parsley, plus leaves for garnish
1/2 cup extra-virgin olive oil
Wedge Pecorino Romano, for shaving
2 tablespoons toasted pine nuts
Fresh mint leaves, torn

Steps:

  • Heat the grill to high heat. Brush the zucchini on both sides with canola oil and season with salt and pepper, to taste. Grill for just about 1 minute per side (until slightly charred and wilted), then remove them to a platter.
  • Whisk together the Dijon mustard, lemon juice, lemon zest, honey, to taste, and salt and pepper, to taste, and parsley in a small bowl. Slowly, whisk in the olive oil until emulsified.
  • Drizzle the vinaigrette over the zucchini and let it marinate for 15 minutes at room temperature. Top with shaved cheese, pine nuts, parsley and mint leaves.

3 medium zucchini, thinly sliced
1/4 cup olive oil, divided
1/4 teaspoon salt

1 medium lemon, juiced and zested
1/3 cup crumbled feta cheese
3 tablespoons pine nuts, toasted

Steps:

  • In a large bowl, combine zucchini and 2 tablespoons olive oil. Add salt and pepper; toss to coat. Transfer to a grill wok or open grill basket; place on grill rack. Grill, covered, over medium-high heat until zucchini is crisp-tender, 5-10 minutes, turning occasionally.
