Potato cakes that are made with leftover mashed potatoes. These lovely Cheesy Mashed Potato Cakes that are soft from the inside, but golden and crispy from the outside!

3 large potatoes
1 egg
½ cup cheddar cheese (shredded)
2 cloves garlic (crushed)
¾ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons green onion (chopped)
2 tablespoons cornstarch

Steps:

  • Boil the potatoes and mash them with a potato masher adding a pinch of salt and a bit of butter. Chill in the fridge until no longer warm.
  • Add one egg, shredded cheddar cheese, chopped herbs like scallions, one clove of garlic (crushed).
  • Mix all ingredients together and then divide into mixture into 100 gm portions each.
  • Roll each portion into a ball then flatten it into a cake of about a 1.5-inch-thick.
  • Lightly dredge each cake in cornstarch and fry in vegetable oil until golden brown and crispy on both sides.
  • Transfer the cakes to a towel-lined plate and serve hot.

Perfect Roast Chicken with Potato Cakes image

Number Of Ingredients 11

1 whole chicken, about 3 pounds (you can also do this with bone-in skin-on pieces)
1 lemon, halved, plus lemon wedges, for serving
Kosher salt and cracked black pepper
1 tablespoon olive oil
2 potatoes, peeled and shredded (I'm using sweet)
2 large eggs, beaten
1 small onion, grated (I'm using red)
1 teaspoon your favorite spice mix (I'm using Old Bay)
1 teaspoon paprika
Kosher salt and freshly ground black pepper
Olive oil, for the pan, if necessary

Steps:

  • For the chicken: Place a heavy-bottomed pan in the oven (I prefer cast iron) and preheat the oven to 500 degrees F.
  • Pat the chicken dry with paper towels. Rub the chicken with the lemon halves and season liberally with salt and pepper. Drizzle the chicken with the olive oil.
  • Carefully remove the hot pan from the oven, arrange the chicken in it breast-side up and place the pan on the middle rack. Roast until the thickest part of the chicken measures 160 degrees F, about 45 minutes. Let rest for 5 minutes before carving.
  • For the potato cakes: While the chicken is cooking, thoroughly mix together the sweet potatoes, eggs, onion, Old Bay and paprika. Season with salt and pepper. Form the mixture into 6 patties.
  • While the chicken is resting, place the pan it was cooked in over medium-high heat with the rendered chicken fat. Working in batches and adding more oil if necessary, cook the patties, flattening them slightly with a spatula, until golden brown and crisp, 4 to 6 minutes per side.
  • Serve the sweet potato cakes with the chicken and some lemon wedges on the side.

Steps:

  • Grate potatoes, squeezing hard to remove liquid. Stir in chicken, onion, salt, pepper, flour, and some chopped herbs if you like. Stir in egg. Form into patties, squeezing out liquid as you go. Heat a coating of oil in a nonstick skillet over medium-high heat. Cook until golden and cooked through, 3 minutes per side.

Number Of Ingredients 4

3 (1 ounce) packages chicken gravy mix
3 cups cubed, cooked chicken breasts
3 cups frozen mixed vegetables
4 cups frozen mashed potatoes (, prepared according to package directions) or 4 cups frozen instant mashed potatoes (, prepared according to package directions)

Steps:

  • Prepare gravy mix according package directions in skillet (or you can make your own gravy).
  • Add chicken and frozen vegetables and return to boil.
  • Reduce heat, cover and simmer for 10 minutes.
  • Pour hot stew into 4-quart baking dish.
  • Spoon or pipe potatoes onto hot mixture using pastry bag and large tip.
  • Bake at 375 degrees for 12-15 minutes or until potato topping is lightly browned.

1/2 teaspoon salt, or to taste
4 boneless skinless chicken breast halves
3 cups fresh corn kernels (from about 3 ears) or frozen corn kernels (thawed)
2 teaspoons unsalted butter
Fresh salsa, purchased or homemade
sour cream
Chopped cilantro

Steps:

  • 1. Preheat the oven to 200°. Prepare the Potato Masa Cakes, and keep warm in the oven while cooking the chicken. Rub the chicken with the 2 teaspoons of oil and season with about 1/4 teaspoon of the salt. Heat a stovetop grill pan over medium-high heat and cook the chicken breasts about 4 to 5 minutes per side or until browned with grill marks on the outside, firm to the touch, and no longer pink inside at the thickest part. 2. Meanwhile, in a skillet, cook the corn with the butter, stirring, until completely heated through, 3 to 4 minutes. Reserve in the pan off heat. 3. Remove the chicken to a cutting board and slice thinly crosswise. Remove the potato cakes from the oven and put 1 cake in the center of each of 4 warm plates. Arrange the chicken strips equally on top of each potato cake and top each with some salsa and a dollop of sour cream. Spoon a portion of the corn around the cakes on each plate. 2 medium Russet potatoes (about 8 ounces), peeled and thinly sliced
1 tablespoon butter, at room temperature
1/2 cup masa, harina, (flour for corn tortillas)
1/4 teaspoon salt
1/3 cup water
1 teaspoon vegetable oil
vegetable oil for frying

Steps:

  • 1. In a small saucepan, cook the potato in salted water to cover until very tender, about 8 minutes. Drain and mash potato with the butter while still hot. Cool until lukewarm. 2. In a mixing bowl, using clean hands, mix the masa harina, salt, and water together to make a soft dough. If too dry, add additional water 1 to 2 teaspoons at a time until the dough is moist and soft, but not sticky. Add the mashed potato and work it into the masa with your hands. Divide the dough into 4 equal pieces and form into balls. 3. Put 1 ball between 2 pieces of plastic wrap and gently press and pat lightly with your hands to make a 4-inch round cake about 1/3-inch thick. 4. Preheat the oven to 200°. In an 8-inch nonstick skillet, heat about 1 tablespoon of oil over medium heat. Remove the plastic and fry the cake until golden brown and crisp on both sides, about 5 minutes per side.
