Pork Chops with Apples and Shallots image

A quick sear, followed by oven roasting brings out the best in these tender, juicy pork chops. Top with sweet, savory apples and tangy Carolina-style barbecue sauce.

3 large shallots, thinly sliced
1 large gala or Granny Smith apple, halved, cored and thinly sliced
plus 1/4 teaspoon fine sea salt, divided
2 tablespoons extra-virgin olive oil
4 bone-in, center-cut pork loin chops
2/3 cup barbecue sauce, such as original or hot Bone Suckin' Sauce, divided
Canola spray oil
plus 1/4 teaspoon ground black pepper

Steps:

  • Preheat the oven to 450°F.
  • Lightly coat a 9x13-inch baking dish with spray oil.
  • Layer shallots and apples in the dish, season with a pinch of the salt and pinch of the pepper and set aside.
  • Heat oil in a large skillet over medium high heat.
  • Season pork chops with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper and cook, flipping once, until golden brown, 2 to 3 minutes per side.
  • Arrange pork chops on top of shallots and apples.
  • Pour half of the barbecue sauce over the top.
  • Place dish in the oven and immediately reduce temperature to 375°F.
  • Bake for 15 minutes, then spoon remaining barbecue sauce over the top and bake until a thermometer inserted in the thickest part of the pork chops registers 145°F, about 15 minutes more.

2 tablespoons butter
1/2 pound medium shallots, halved or quartered lengthwise (pieces should be about 3/4 inch thick)
2 Granny Smith apples, peeled, cored, and cut into eighths
1/2 cup white wine
4 pork rib chops (each 1/2 inch thick and 6 to 8 ounces)
Coarse salt and ground pepper
Wilted Spinach with Nutmeg, for serving (optional)

Steps:

  • Heat broiler; set rack 4 inches from heat. In a large skillet, heat butter over medium-high. Add shallots; cook, stirring occasionally, until browned, about 5 minutes. Cover pan; reduce heat to medium. Continue cooking until shallots are soft, about 5 minutes more.
  • Add apples and wine; cover, and cook until apples are beginning to soften, about 5 minutes. Uncover; cook, stirring, until most of the liquid has evaporated and apples are tender, 2 to 4 minutes more. Remove from heat; cover to keep warm.
  • While apples are cooking, season pork chops generously with salt and pepper; place on a rimmed baking sheet. Broil until cooked through, 3 to 5 minutes per side. To serve, spoon warm apple mixture over chops. Serve pork chops with Wilted Spinach with Nutmeg, if desired.

There are some culinary combinations that cannot be improved upon, and apples and pork is surely one of them. This recipe calls for pan-frying boneless pork chops and serving them with butter-browned apples and a Normandy-style sauce made with cider and cream. It makes for a perfect cold weather meal.

1/4 teaspoon black peppercorns
3 cloves
4 allspice berries
2 tablespoons roughly chopped sage
1 and 1/2 tablespoons kosher salt
6 boneless pork chops, 4 ounces each, about 1/2-inch thick
2 large apples
2 tablespoons butter
All-purpose flour, for dusting
1/2 cup hard cider, plus 2 tablespoons
2 teaspoons Dijon mustard
1 and 1/2 cups chicken broth
2 teaspoons potato starch dissolved in 2 tablespoons cold water
3 tablespoons crème fraîche
1 tablespoon Calvados, apple brandy or Cognac, optional
2 tablespoons finely cut chives
2 tablespoons chopped parsley

Steps:

  • Make the spice salt: Put peppercorns, cloves, allspice and sage in a spice mill or mortar and grind to a powder. Remove to a bowl and stir in salt. Season pork chops on both sides with salt mixture. (There will be some salt mixture remaining; use it to season the sauce, Step 4.) Cover and leave chops at room temperature to absorb seasonings for at least 30 minutes.
  • Peel, quarter and core apples, then cut each apple into 12 wedges. Melt 1 tablespoon butter in a wide skillet and raise heat to medium-high. Add apple wedges in one layer and brown gently on one side, about 2 minutes. Brown on the other side and cook for 2 minutes more, or until apples are cooked through but still firm. Remove apples from pan and keep warm.
  • Add 1 tablespoon butter to pan and swirl to melt. Dust pork chops with flour, and place in pan and brown gently for about 4 minutes per side. Adjust heat if necessary to keep pork from cooking too quickly. Remove chops and keep warm on a platter in a low oven. Discard remaining butter.
  • Add ½ cup cider to pan, raise heat to high and cook down to a syrup. Add mustard and chicken broth, and bring to a boil, then reduce heat to a simmer. Add potato starch and stir with a wire whisk as the sauce thickens. Stir in crème fraîche. Season to taste with remaining spiced salt. Add 2 tablespoons cider and the Calvados, if using. Cook for 1 minute more.
  • Spoon sauce over the chops, then spoon the apples around the platter. Sprinkle with chives and parsley.

4 bone-in pork rib chops (each 12 ounces and 1 1/4 inches thick)
4 shallots, halved lengthwise
1 pound parsnips or carrots, cut into 1/4-by-2-inch sticks
1 cup apple cider
1 tablespoon cider vinegar

Steps:

  • Heat a large cast-iron or other heavy skillet over medium-high. Season chops with coarse salt and ground pepper. Using tongs, hold pork fatty edge down and cook until some fat releases, about 1 minute. Lay chops flat and add shallots. Cook until chops are browned on both sides, 8 to 10 minutes total. Transfer chops to a plate, leaving shallots in skillet.
  • Reduce heat to medium. Add parsnips, apple cider, and 1 cup water. Cook until parsnips are crisp-tender, about 8 minutes. Return chops to skillet. Cook until chops are cooked through but slightly pink in center and parsnips are tender, 5 to 7 minutes. Remove from heat and swirl in vinegar.

This is an adapted recipe - it was initially published in "The Best Slow & Easy Recipes" by the editors of Cook's Illustrated ( 2008, $35) using boneless pork loin. I prefer to use a Boston butt or boned rolled pork shoulder, moister & much more economical. The cocotte method of using a tightly covered cooking vessel, low heat & minimal extra liquid makes for a wonderful dish. I've listed the ubiquitous Granny Smith apples but we use Limber Twigs, a great keeping/cooking apple, stored over winter in the garage. Any cooking apple works well. I also add about 2 tablespoons of Calavados (well, a glug) before covering & putting in the oven. The cooking time for the butt & shoulder is longer - I cook until an internal temp of 160F is obtained - about 85 minutes. This works well with mashed potatoes & cooked kale, mustard greens or turnip greens.

2 1/2-3 lbs boneless pork loin roast (or Boston butt as above)
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon marjoram
1/2 teaspoon lavender (optional)
2 teaspoons kosher salt
1 teaspoon black pepper, freshly ground
3 tablespoons vegetable oil (use 1 t if using butt or shoulder)
8 shallots, peeled and quartered
1 lb apple, peeled, cored and cut into 1/2-inch-thick wedges (Golden Delicious or Granny Smith - 2 to 3 medium)
1 teaspoon sugar
1 tablespoon butter

Steps:

  • Heat oven to 250 degrees. Pat pork dry, sprinkle with herbs and season to taste with salt and pepper.
  • Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Brown pork well on all sides. Transfer pork to a large plate.
  • Add remaining 1 tablespoon oil to pot. If using butt or shoulder, drain all but 2 tablespoons oil from pot as these are cuts with fat versus the loin. Add the shallots and cook about 3 minutes. Add the apples and sugar and cook about 5 minutes.
  • Off the heat, return the pork and any accumulate juices to the pot. Place a sheet of foil over the pot and press to seal, then cover tightly with a lid. Transfer the pot to the oven and cook until pork reaches an internal temperature of about 145 degrees, about 35 to 55 minutes (160F for butt & shoulder, about 85 minutes).
  • Remove pot from oven and transfer pork to a cutting board, tent loosely with the foil and let rest 5 to 10 minutes.
  • Stir butter into the apple-shallot mixture, season with salt and pepper.
  • Slice the pork and serve with apple-shallot mixture.

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.
