CHOCOLATE BUTTERCREAM FROSTING

Chocolate Buttercream Frosting image

The most delicious and simple Chocolate Buttercream Frosting recipe! This chocolate frosting pipes great also.

Provided by Melissa Diamond

Number Of Ingredients 6

3 sticks (339g) unsalted butter, softened (do not soften butter in the microwave)
8 cups powdered sugar (icing sugar in UK) (920g) more if needed. ** For cupcakes, I like to use 7c. (805g) for a softer frosting
1 cup (82g) unsweeteded cocoa (not Dutch processed, measure then sift
3/4 (180g) milk plus 2 Tablespoons or more if needed to reach the spreading consistency you like
2 teaspoons vanilla (12 grams)
1 teaspoon salt (6g) we like the finer grain of plain popcorn salt, to cut the sweetness

Steps:

  • Add butter and mix on low to medium speed until smooth. Add vanilla and blend into the butter. Add powdered sugar, salt, and cocoa powder.
  • Add most of the milk. Begin mixing at low speed so you won't have a cloud of powdered sugar in your kitchen.
  • Continue to mix adding remaining milk as needed. It may take 5 to 6 minutes to reach the smoothness and consistency you like. It will take longer if using a hand mixer. As you mix the frosting will become very smooth. You can add additional milk (1 Tablespoon at a time) if the frosting is too thick or additional powdered sugar if too soft.

6 Tablespoons unsalted butter, softened
2 1/3 cups confectioners' sugar
3/4 cup unsweetened cocoa powder
1/3 cup whole milk

  • Increase the speed to high and beat the frosting for an additional 2 minutes. Use the frosting immediately or store in an airtight container in the fridge. (If you refrigerate the frosting, you may want to re-blend it for a few seconds in the stand mixer before using it.)

SIMPLE AND DELICIOUS BUTTERCREAM FROSTING

Simple and Delicious Buttercream Frosting image

I decided on a whim yesterday that I wanted to make cupcakes for Canada Day. I didn't have time to buy frosting before getting ready for the fireworks show, so I ended up making my own with ingredients I already had. I was shocked at how quick and easy this was! This basic vanilla recipe makes enough to cover a dozen cupcakes, but feel free to double it (for cakes), triple it, add food coloring or different flavor extracts. If you find this too sweet, you can add a dash of salt to the milk or the vanilla. Personally I like it sweet, and I used salted butter, so I didn't find it necessary.

  • Add all ingredients to a large bowl, starting with 1/2 tsp of salt. Beat on low with an electric mixer just until the ingredients are blended then turn the mixer to high and beat for 3-5 minutes, until the buttercream is fully blended and "fluffy".
  • Salt is not about making food taste salty. It's about bringing out the flavor of the other ingredients and providing balance. In dessert, salt somehow manages to brings out the sweetness AND provide a sort of counter balance so that you taste the flavor of sweet rather than being hit over the head with it.
  • Taste and add more vanilla, almond extract, or salt if desired. If the buttercream is thinner than you'd like it to be, add a bit more powdered sugar to thicken it up.
