A skillet dish with chicken, rice and coconut. The original calls for boneless chicken breast, but I prefer chicken thighs.

1 tablespoon butter
1/3 cup onion, chopped
2 garlic cloves, minced
1 cup coconut milk
2 cups water
1 1/2 cups long grain white rice, uncooked
4 boneless skinless chicken thighs, cut into 1 inch pieces
1 (10 ounce) package frozen chopped spinach, thawed and thoroughly drained
1/3 cup unsweetened dried shredded coconut

Steps:

  • In a large, deep skillet with lid, over medium-high heat, melt the butter.
  • Stir in the onion and garlic, and cook 2 minutes.
  • Mix in the coconut milk, water, rice, and chicken, and bring to a boil. Reduce heat to low, cover, and simmer 20 minutes, until rice is tender and chicken is cooked through.
  • Stir the spinach into the skillet, and cook just until heated through.
  • Sprinkle with coconut.
  • Serve.

Polynesian Chicken is a great retro Chinese restaurant dish. Made with a few large pieces of crispy, batter-fried seasoned chicken breast, set on a bed of shredded Chinese vegetables in a luscious brown sauce, you'll thoroughly enjoy this Polynesian chicken

8 ounces boneless skinless chicken breast
Salt ((to taste))
1/8 teaspoon white pepper
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
¼ cup all purpose flour
¼ teaspoon baking powder
⅛ teaspoon salt
⅛ teaspoon paprika
⅛ teaspoon turmeric
½ cup cold club soda ((or beer))
4 cups canola oil for frying
2 cloves garlic ((minced))
½ cup button or cremini mushrooms ((sliced))
¼ cup bamboo shoots ((julienned))
½ cup red bell pepper ((julienned))
2 teaspoons Shaoxing wine
4 cups napa cabbage ((shredded))
1 tablespoon soy sauce
1 teaspoon dark soy sauce
¼ teaspoon salt
¼ teaspoon sugar
½ teaspoon sesame oil
1 teaspoon oyster sauce
Freshly ground white pepper
1 cup snow peas ((ends trimmed and cut in half lengthwise))
¾ cup hot chicken stock or water
1 tablespoon cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Carefully split the chicken breast into two thinner pieces that are roughly the same size. Sprinkle the salt, white pepper, onion powder, and garlic powder on both sides of the chicken breast, and set aside.
  • Make the batter by mixing all of the batter ingredients in a bowl until combined. Do not overmix! Meanwhile, heat 4 cups of canola oil in a small wok or cast-iron frying pan until it reaches 350 degrees F. Use a candy thermometer to check the temperature, because you don't want to burn the batter before the chicken is cooked.
  • Dip both of the chicken breasts into the batter and fry until golden brown (about 2-3 minutes on each side), turning the chicken pieces often in the oil. Set the fried chicken aside on a wire rack to drain off any excess oil.
  • If you are unsure whether or not the chicken is done, you can cut into one of the pieces to make sure the juices are no longer pink. However, the chicken is cut thin, so it's relatively easy to cook it until it's just done. This is important for achieving a tasty chicken dish.
  • Heat your wok over high heat, and add 1 tablespoon of the frying oil to your wok. Add the garlic, mushrooms, bamboo shoots, and red bell peppers, and stir-fry for 30 seconds. Add in the Shaoxing wine, followed by the napa cabbage. Continue to stir-fry for 30 seconds, and stir in the soy sauces, salt, sugar, sesame oil, oyster sauce, and white pepper.
  • Next, add the snow peas and give everything a quick stir. Add the hot chicken stock. Let the sauce come to a boil, and add the cornstarch/water mixture. Stir-fry for another 30 seconds until the sauce has thickened enough to coat a spoon.
  • Transfer the vegetable mixture to a plate. Slice the chicken into 1½-inch wide pieces, and place on top of the bed of vegetables. Serve immediately with white rice!

This is from a polynesian kitchen website for Tahiti. 1 1/2 lbs- Taro leaves (fa fa), were originally used in the recipe but food.com would not recognize the ingredient, spinach is a substiture for taro leaves. The taro must be cooked in saltwater first to remove irritating cacium oxalate from the leaves.

1 1/2 lbs spinach (taro, stems removed, chopped, If using frozen spinach, thaw first. Then squeeze dry before adding to)
2 -3 tablespoons oil
1 1/2 lbs chicken thighs (Use boneless, skinless chicken thighs or breasts if you like. Cut into cubes before sauteing.)
2 onions, chopped finely
2 -4 garlic cloves, minced
1 inch piece gingerroot, peeled and minced
1 1/2 cups stock or 1 1/2 cups water
salt & pepper, -to taste
2 -3 teaspoons cornstarch or 2 -3 teaspoons arrowroot
1 cup coconut cream (Coconut cream is the thick coconut milk that rises to the top of a can of coconut milk)

Steps:

  • If using taro leaves, bring a large pot of salted water to a boil. Add the taro leaves, reduce heat and simmer for 30-40 minutes. Drain and squeeze dry. If using spinach, skip this step and proceed to Step 2.
  • Heat the oil over medium-high flame in a large pot. Brown the chicken on all sides in the hot oil. Remove to a plate.
  • Sauté the onion, garlic and ginger in the remaining oil till the onion is translucent.
  • Add back the chicken pieces, stock or water, salt and pepper.
  • Reduce the heat to low and simmer, covered for about 20 minutes.
  • Add the taro leaves or spinach and simmer another 15 minutes till chicken is tender.
  • Stir the cornstarch or arrowroot into 2-3 tablespoons of cold water and then stir into the simmering sauce to thicken lightly.
  • Stir in coconut cream to finish and serve over rice.
  • (My tip-I love this with yams or sweet potatoes too!).

1 cup all-purpose flour
2 teaspoons salt
1 teaspoon coarsely ground pepper
20 chicken leg quarters, skin removed
1/3 cup vegetable oil
2 cups orange juice
1-1/2 cups pineapple juice
1/4 teaspoon ground ginger
1 can (20 ounces) pineapple chunks, drained
2 cans (11 ounces each) mandarin oranges, drained
1 cup sliced almonds, toasted
Hot cooked rice

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add the chicken, one piece at a time, and shake to coat. in a large skillet, brown chicken in oil in batches; drain. Place in two greased 13-in. x 9-in. baking dishes., In a large saucepan, bring orange juice, pineapple juice and ginger to a boil. Pour over chicken. top with pineapple, oranges and almonds. , Cover and bake at 350° for 30-45 minutes or until chicken juices run clear. Serve with rice.

This is a version of a Tahitian dish, since Taro is hard to come by in the U.S. I substitute it with spinach leaves. This is also a mild dish. Serve this dish with rice, I prefer sticky rice, but any other kind works well. For different flavors try jasmine rice.

4 boneless skinless chicken breasts
2 1/2 tablespoons butter, divided 1 T and 1 1/2 T
1/4 cup onion, chopped
2 garlic cloves, minced
1 cup coconut milk
6 -8 ounces fresh spinach (taro)
salt
pepper

Steps:

  • Heat 1 T butter in a skillet, add onions and sauté until golden brown. Set onions in a bowl aside.
  • In the skillet melt the remaining 1 1/2 T butter and place the chicken in the skillet and brown evenly.
  • Add the onions and continue to cook until the chicken is no longer pink, 15-20 minutes (depending on thickness). Then add the garlic and spinach, cover and simmer for 5 more minutes.
  • Before serving pour the coconut milk over the chicken and add salt and pepper to taste. Serve over hot cooked rice.

I have made the recipe once and cant wait to make it again. It is very good and can be made pretty quickly!

3/4 cup pineapple juice (sweetened or unsweetened)
2 tablespoons honey
1 tablespoon dijon-style mustard
1 tablespoon soy sauce
1 1/2 teaspoons cornstarch
1 garlic clove, minced
12 chicken thighs (skinned if desired) or 12 chicken drumsticks (skinned if desired)
salt
fresh ground pepper

Steps:

  • For the sauce, in a small saucepan combine pineapple juice, honey, mustard, soy sauce, cornstarch and garlic. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 more minute. Remove from heat. Transfer half of the sauce to a bowl; cover and set aside.
  • Sprinkle chicken with salt and pepper. For charcoal grill arrange medium-hot coals around drip pan. Test for medium heat above the pan. Place chicken on grill rack over drip pan. Cover; grill until chicken is no longer pink or 165 degrees Farenheit, brushing frequently with remaining sauce during the last 5 minutes of grilling. (For gas grill preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.).
  • Note: If you do not have cornstarch on hand, you can substitute with 3 Tsp of all purpose flour.
