STARKEY'S MASHED POTATO PIZZA

Starkey's Mashed Potato Pizza image

Mashed potato pizza is a pizza using mashed potatoes instead of sauce. I modeled it after a pizza I had at Willoughby Brewing Company, if you like this one, try the original! You can use any toppings you like on your baked potatoes, this is how I like it. Bon Appetite!

MASHED POTATOES, GREEN GARDEN MEDLEY, BURNT BUTTER SAUCE #5FIX

Mashed Potatoes, Green Garden Medley, Burnt Butter Sauce #5FIX image

5-Ingredient Fix Contest Entry. Just another mash-up recipe. I lover rich foods and this dish includes other ingredients that I also love like, butter and garlic, leeks and peas. So I thought I'd try all these ingredients together and came up with a dish worthy of Thanksgiving dinner.

Time 35m

Yield 6 serving(s)

Number Of Ingredients 5

4 cups Simply Potatoes Traditional Mashed Potatoes
6 garlic cloves, roasted
1 small leek, cut into 1/4 inch slices
1 cup sugar snap pea, steamed
6 tablespoons butter, melted (I used salted butter for flavor)

Steps:

  • Place garlic cloves in oven-proof small glass dish or bake ware and drizzle with a little olive oil. Cover container and roast garlic in 350 degree preheated oven for 25-30 minute, until soft. Do not burn garlic. Remove from oven and let cool.
  • Clean leek in cold water. Sand and dirt gets down between the layers of a leek, so make sure you thoroughly clean it. Loosen the leafy layers and run under cold water until all grit is removed. Cut leek coarsely into about ¼ inch slices.
  • Prepare snap peas by boiling briefly, 1-2 minutes, or steaming in a covered container in the microwave for 1 minute. Shuck some peas from the pods and discard pods. Set aside.
  • In a non-stick skillet, cook sliced leek in 2 tablespoons of butter and cloves of roasted garlic for 1 minute over low heat. Add remaining butter to the skillet and continue cook another 2 minutes over medium-low heat allowing butter to brown a bit. Add the sugar snap peas and heat another half a minute. Remove skillet from heat and let veggies steep in brown butter sauce until ready to use.
  • Meanwhile, prepare mashed potatoes according to package directions. Remove potatoes from bag and place in serving bowl. Pour burnt butter, leek, pea, and garlic sauce over potatoes and gently stir to incorporate.
  • Season potatoes to your liking and serve alongside your favorite meat.
  • Recipe makes 6 servings.

HIDDEN VEGGIE POTATO PIZZA #5FIX

Hidden Veggie Potato Pizza #5FIX image

5-Ingredient Fix Contest Entry This is a great pizza to use up some lingering winter squash, and as bonuses you get to experience the glory of a delightfully smooth potato-y crust *and* enjoy some hidden nutrition. How great is that? The crust is made from a mix of Simply Potatoes® Traditional Mashed Potatoes and butternut squash combined with whole wheat flour. The same mix is used again (sans flour) as a thick, creamy "sauce," which is topped with gooey mozzarella cheese. And so you have it: a delicious cheese pizza any adult or kid would love. You can jazz things up by adding some cooked garlic or sour cream to the mashed potatoes, or go wild with your toppings. With some bacon and green onion, this becomes a baked potato pizza. With sauteed red peppers and kale, it's a comforting nutritional powerhouse. Or go with pickled jalapenos and some pepper jack cheese for a spicy, but temperately creamy delight. Experiment with different cheeses and toppings, and enjoy!

Time 55m

Yield 1 pizza, 4-5 serving(s)

Number Of Ingredients 5

2 cups Simply Potatoes Traditional Mashed Potatoes
2 cups butternut squash, cooked and mashed
2 cups whole wheat flour
2 teaspoons baking powder
1 cup mozzarella cheese, shredded

Steps:

  • Preheat your oven to 400 degrees.
  • Combine the Simply Potatoes mashed potatoes and your mashed butternut squash in a large bowl until thoroughly blended. Reserve half of the mixture in a smaller bowl.
  • Returning your focus to the large bowl now containing half of the total mash mix, sift in the flour and baking powder. Work the dry and wet ingredients together until well combined and a ball of dough forms. Add flour as necessary in tablespoons to keep it from sticking.
  • Once you've successfully formed a ball of dough, cover the bowl with plastic wrap and set aside for a few minutes to rest.
  • Meanwhile: grease a pizza pan or baking sheet and shred your cheese.
  • Once the dough has rested, roll it to your desired thickness and transfer to your pan, or simply press it into shape on the pan itself. Set the crust in the oven to pre-bake for about 10 minutes. Doing this will ensure that your crust cooks through entirely once you add your toppings.
  • Once pre-baked, remove from the oven and spread with your reserved mashed potato-squash mix. Top the mix with the cheese, and return your pizza to the oven.
  • Cook for 8-15 more minutes, or until the crust underneath has cooked through and the cheese is beginning to turn golden. Note that the exposed crust will not get very brown on top, but that the dough in contact with the pan should turn a light golden brown.
