BAKED FRESH RAINBOW TROUT
Very easy and tasty recipe I invented one day with ingredients on hand, for fresh rainbow trout (farmed or wild) that my family loves. It takes very little time and is much lighter than ocean fish. I use whole fish you can buy already gutted from the supermarket, with heads and tails still on. Make sure you pick trout that are really, really fresh. I find the dish doesn't even need lemon slices but you can use them if you like. The key is to remember to add the water to the dish as instructed in directions, which keeps fish from drying out. Serve with rice and veggies. Light and delicious. Be careful of bones! Make sure to add hot water to the dish; cold water can crack the baking dish.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish with about 1 teaspoon olive oil.
- Place trout in the prepared baking dish and coat with remaining olive oil. Season the inside and outside of fish with dill, thyme, and salt. Stuff each fish with onion slices; grind pepper over the top. Place 1 lemon slice on each fish.
- Bake in the preheated oven for 10 minutes; add water to dish. Continue baking until fish flake easily with a fork, about 10 minutes more.

- Place the planks into cool water and allow to soak for at least 2 hours and up to overnight.
- Preheat the oven to 375 to degrees F.
- Brush the trout, inside and out with olive oil.
- Season inside and out with salt and pepper.
- Place the trout onto the planks belly down and open. Wrap foil around both fish and plank.
- Place the planks in oven for approximately 15 to 20 minutes.
- Remove from the oven and allow to sit for 5 to 10 minutes before serving as is or deboning and serving.

PLANK GRILLED WHOLE TROUT
Steps:
- Place the planks into cool water and allow to soak for at least 2 hours and up to overnight.
- Preheat the grill to 375 to 400 degrees F.
- Brush the trout, inside and out with olive oil. Season inside and out with salt and pepper. Place the trout onto the planks belly down and open. Place the planks over indirect heat and grill until the fish reaches an internal temperature of 120 degrees F on an instant-read thermometer, approximately 15 to 20 minutes. Remove from the grill and allow to sit for 5 to 10 minutes before serving as is or deboning and serving.
RAINBOW TROUT ROASTED ON A CEDAR PLANK
Steps:
- Prepare and preheat your grill by building a fire on 1 side of the grill.
- In a small bowl, mix together the salt, pepper, red chili powder, and herbes de Provence. Open each trout's belly and lightly rub on the chili spice mixture. Next, place 2 lemon slices into each trout's belly and then carefully place each trout onto a cedar plank.
- Cook the trout planks in a covered barbecue away from direct heat for 15 minutes. Then, move the planks over the direct heat and cook for an additional 5 to 7 minutes, covered. The cedar planks will begin to smoke, and the trout will begin to turn golden brown. Once the trout is finished cooking, remove the planks from the grill and set aside. Carefully, lift the fish off the plank and serve.
ITALIAN-MARINATED BAKED RAINBOW TROUT

- Marinate trout in Italian dressing in the refrigerator overnight.
- Preheat oven to 350°F.
- Place trout in a well-greased shallow baking dish; discard excess marinade. Season trout cavities with salt, pepper, lemon pepper, and garlic powder to taste. Fill cavities partially with onion and parsley.
- Drizzle melted butter over fish. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake unti fish flakes easily with a fork. Allow 5-6 minutes for each 1/2 inch of thickness.

Steps:
- Soak two thick boards of cedar or wood plank of choice and soak them in cold water for at least 1 hour.
- Center fish on the boards. Brush with oil; season with black and cayenne pepper, salt and herbs.
- Place them in a 350F oven and back for 20 minutes or the fish starts to flake in the thickest part. Planks may also be broiled on a grill, place 6 to 7 inches from the heat source and cook for similar amount of time.
