I'm not sure where this recipe came from originally, my family has been making it for as long as I can remember. This is more like a loaf-shaped cake than a bread, but is delicious!

Number Of Ingredients 6

Ingredients

18 ounces yellow cake mix (standard size)
3 1/2 ounces instant pistachio pudding mix (small box)
1/4 cup poppy seed
1/2 cup oil
4 eggs
1 cup hot water

Steps:

Preheat oven to 350.
Mix all ingredients together and pour into greased loaf pan.
Bake about 40 minutes or until toothpick comes out clean.

Grease 2 regular size loaf pans and sprinkle some sugar and cinnamon (I use 2 TB sugar and 1 tsp. cinnamon) on the inside.
Combine 2 cups powdered sugar, 2 TB melted butter, 1 tsp. almond extract, and 1 tsp. vanilla to make a glaze. Add a few tablespoons of milk, until it's the consistency that you like.

Preheat oven to 350 degrees F. Line a 8x4 inch pan with parchment paper and spray with nonstick cooking spray.
In a large bowl, whisk together the melted butter, honey and orange zest until smooth. Next, whisk in orange juice and greek yogurt. Finally, whisk in the two eggs, vanilla and almond extracts.
In a separate bowl, whisk together the whole wheat pastry flour, baking powder, baking soda and poppyseeds. Add dry ingredients to wet ingredients and mix with a wooden spoon or until just combined. Gently fold in chopped pistachios.
Pour batter into prepared pan and spread out evenly. Bake for 45-55 minutes until tester comes out clean. Cool completely on a wire rack before glazing.
