APRICOT & PISTACHIO STUFFING
Save time on Christmas Day and make this apricot and pistachio stuffing on Christmas Eve. It makes an excellent accompaniment to festive turkey

- Heat the oven to 220C/200C fan/gas 7. Heat the oil and 40g of the butter in a large frying pan over a medium heat. Add the onions and fry for 15-20 mins or until they are golden and caramelised. Add the garlic and cook for 1 min. Remove from the heat, tip into a large mixing bowl and leave to cool down a little.
- Put half the sourdough into a food processor and blitz to a fine crumb. Tear the remaining bread into small pieces. Add both to the bowl with the onions and mix through 60g pistachios, the chopped sage, apricots and eggs, then season. Tip into a shallow 30 x 20cm baking dish. Will keep in the fridge for up to 24 hrs. Bake for 20 mins or until golden brown and crunchy on top (check after 10 mins and cover if it's already brown).
- Melt the remaining butter in a frying pan, add the sage leaves and fry until crisp. Pour over the stuffing just before serving. Top with the remaining pistachios.

- 1. Preheat the oven to 350°F. Lightly grease a 2-quart casserole dish and set aside. 2. Place the butter or margarine in a large saucepan, and melt over medium heat. Add the onion and sauté for 5 minutes, or until soft. 3. Add the water and apricot or peach nectar to the onion, and cook for 2 additional minutes. Add the stuffing mix and stir until well moistened, adding more water if necessary. Fold in the nuts, apricots, and dates. 4. Transfer the stuffing to the prepared dish, cover, and bake for 20 to 30 minutes, or until heated through. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.

GLAZED CORNISH GAME HENS WITH APRICOT PISTACHIO DRESSING
Cornish game hens are festive and readily available. I've even made them the centerpiece of a holiday meal. These little birds cook much more quickly than other holiday roasts, such as lamb or ham. I normally figure on one hen (in the 1 1/2- to 2-pound range) to serve every two guests - especially if you also plan to have a first course and a dessert.

- Brining the hens before roasting improves their flavor: Dissolve 2 cups of kosher salt in a clean bucket filled with 5 quarts of water. Add prepared hens and soak for 2 hours. Rinse thoroughly; pat dry.
- Adjust oven rack to upper middle position, and heat oven to 450 degrees.
- Heat oil in a large skillet. Saute onions until softened, about 7 minutes. Stir in apricots, then spread mixture onto a large (about 18-by-12-inch) lipped cookie sheet. Lay hens over the mixture. Mix jam and vinegar, and brush all but a few tablespoons over hens.
- Bake hens, brushing 2 or 3 times with remaining jam mixture and accumulated pan juices, until hens are golden brown and juices run clear, about 45 minutes. Turn heat from bake to broil, then cook until hens are spotty brown, watching carefully so they don't burn, 4 to 5 minutes.
- Transfer hens to a large platter with tongs, then cut in half at the breastbone to create individual servings.
- Return apricot dressing to the oven and broil to evaporate some of the excess liquid, about 5 minutes longer. Stir in pistachios and parsley. Spoon in a mound next to hens.

- Preheat your oven to 200C / 180C fan / gas mark 6 / 400F and lightly grease a large baking tray with a little oil.
- Place all the ingredients for the stuffing balls in a large bowl and mix together with your hands. (You can do this with a wooden spoon but it’s much easier and gives a better result if you do this with your hands!)
- Using your hands, take small amounts of the mixture and roll into balls – roughly the size of a golf ball. This amount of mixture should yield 30 stuffing balls.
