PINEAPPLE-ORANGE GLAZED HAM
Pineapple-Orange Glazed Ham is a traditional Holiday gathering entree your guests will love. While this main course is typically served for the holidays, it's actually perfect anytime and leftovers are easily integrated into delicious weeknight meals that will satisfy your whole family.

- Preheat the oven to 325 degrees F.
- Score the surface of the ham in a diamond pattern about 1/8-inch deep. Place cloves in the middle of each diamond (optional). Place the ham in a large roasting pan equipt with a roasting rack, cover, and tent with foil, and then bake for 20-minutes per pound or according to the package directions.
- Heat the brown sugar, vinegar, and juice in a small saucepan until bubbly. Reduce heat to a simmer and cook until thickened, about 15 minutes.After about 2 hours of baking time, remove the foil and brush the glaze on the ham in 20 minutes intervals (put the ham back in the oven, uncovered, in between) until it's nice and glossy. Remove from the oven and allow to rest 15-20 minutes before carving.
- After about half the calculated baking time has passed [See Note], remove the foil from the ham and set aside for later. Brush the glaze on the ham in 10 to 20 minutes intervals, returning the ham to the oven, uncovered, between each interval. Continue to glaze until the ham is fully heated.
- Durning the last 5-minutes of bake time, set the oven to broil and caramelize the glaze. Be sure to continually check the ham during this 5-minutes as the glaze can easily burn during broiling.
- Remove from the oven, tent loosely with the foil you set aside earlier, and allow it to rest for 15-20 minutes before carving to allow the juices to redistribute.
- Serve warm with leftover glaze sauce poured over the meat as desired (optional).

THE BEST HAM GLAZE
A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

- Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
- Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
- Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
- Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
- Let the ham cool for 15 minutes before thinly slicing.
TURKEY HAM WITH MARMALADE GLAZE RECIPE
I got this recipe from the Jennie - O site. Moist turkey ham topped with this sweet and spicy glaze makes a tempting entrée that is sure to please. I have also done this on the grill using indirect heat method.

- Preheat oven to 350º F.
- Prepare glaze: In small sauce pan over medium heat, add pineapple juice and cornstarch. Stir constantly until mixture becomes thick. Stir in spicy mustard and marmalade. Remove from heat.
- Prepare turkey ham: Score the turkey ham and place in prepared baking dish. Glaze ham with prepared marmalade to lightly cover exposed sides of ham. Bake ham 15 minutes per pound, uncovered.
- While baking, baste 1 or 2 more times using a total of 1/4 of the glaze on the turkey ham.
- Place pineapple chunks in 1/4 of marmalade in oven proof dish. Bake for 10 - 15 minutes. Serve with ham.
- The remaining marmalade glaze will be served over turkey ham slices.

- In small saucepan over medium heat combine pineapple juice with cornstarch. Stirring constantly, cook until mixture thickens and becomes glossy. Stir in mustard and marmalade. In a lightly greased 9-X 11-X 1-inch baking pan place ham. Spoon 1/4 glaze over ham and heat according to package directions, basting several times with glaze. Stir reserved tidbits into remaining glaze and heat throughout. To serve, slice ham and top slices with glaze.
