THIS ENTREE makes an ordinary day special. Whenever I cook Cornish hens for my husband and me, it stirs up warm memories of family times around the holiday dinner table. I bake the extra stuffing separately so we're sure to have enough. -Nancy Aubrey, Ruidoso, New Mexico

1/2 cup chopped celery
1/4 cup chopped onion
1/2 cup butter, divided
3 cups crumbled cornbread
3 cups soft bread crumbs
1 jar (2 ounces) diced pimientos, drained
1 cup chicken broth
1 large egg
1/2 teaspoon poultry seasoning
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 Cornish game hens (20 to 24 ounces each)
1 garlic clove, minced
1 teaspoon grated lemon zest
3/4 teaspoon chopped fresh mint or 1/4 teaspoon dried mint flakes

Steps:

  • In a large skillet or saucepan, saute celery and onion in 2 tablespoons butter until tender. Remove from the heat. Stir in cornbread, bread crumbs, pimientos, broth, egg, poultry seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper; mix well. , Stuff each hen with 3/4 cup stuffing. Place extra stuffing in a greased 1-qt. baking dish; refrigerate. Place hens breast side up on a rack in a greased 13x9-in. baking dish. Cover loosely with foil; bake at 375° for 45 minutes. , Meanwhile, in a saucepan, melt the remaining butter; add garlic, lemon zest, mint and remaining salt and pepper. Brush over hens. Bake 15-30 minutes longer or until a thermometer reads 180° for hens and 165° for stuffing. Bake the extra stuffing, covered, for 30 minutes.

4 slices bacon
12 small whole button mushrooms
12 pearl onions, peeled
1/2 cup diced carrots
1/2 cup fresh peas
2 tablespoons olive oil
3 cups chicken stock

Steps:

  • Preheat oven to 400 degrees. Season inside and out of cornish hens. In a bowl combine mushrooms, onions, carrots, peas, 1 tablespoon olive oil, and salt and pepper to taste. Stuff vegetables into cavity of each bird to full capacity. Drizzle hens with remaining oil. Criss-cross 2 bacon slices across each hen, tucking ends under birds to keep in place. Place hens on a roasting rack in a roasting pan and pour chicken stock in bottom of pan. Roast hens 45 minutes to 1 hour or until an instant reading thermometer inserted in thickest part registers 170 degrees. Allow hens to rest, loosely covered with foil, for at least 10 minutes while you finish sauce. Bring sauce to a boil in roasting pan, scraping bottom of pan to incorporate any drippings; season to taste with salt and pepper. To serve, drizzle hens with sauce.

2 (20 ounce) Cornish hens
1/2 teaspoon salt, divided
1 (8 ounce) can crushed pineapple
3 cups cubed day-old bread, 1/2 inch cubes, crusts removed
1 celery rib, chopped
1/2 cup flaked coconut
2/3 cup butter, melted divided
1/4 teaspoon poultry seasoning
2 tablespoons steak sauce
2 tablespoons cornstarch
2 tablespoons brown sugar
1 cup water
1 tablespoon lemon juice

Steps:

  • Sprinkle insides of hens with 1/4 teaspoon salt; set aside.
  • Drain pineapple, reserving juice.
  • In a bowl, combine the pineapple, bread cubes, celery and coconut.
  • Add 6 Tablespoons butter; toss to coat.
  • Loosely stuff hens; tie legs together with kitchen string.
  • Place on a rack in a greased shallow roasting pan.
  • Place remaining stuffing in a greased 1-1/2 cup baking dish; cover and set aside.
  • Add poultry seasoning and remaining salt to remaining butter.
  • Spoon some of the butter mixture over hens.
  • Bake, uncovered at 350 degrees for 40 minutes, basting twice with butter mixture.
  • Stir steak sauce and reserved pineapple juice into remaining butter mixture; baste hens.
  • Bake reserved stuffing with hens for 30 minutes; baste hens twice.
  • Uncover stuffing; baste hens with remaining butter mixture.
  • Bake 15-20 minutes longer or until meat themometer reads 185 degrees for hens and 165 degrees for stuffing in hens.
  • Remove hens from pan; keep warm.
  • Pour drippings into a saucepan; skim fat.
  • Combine cornstarch, brown sugar, water and lemon juice until smooth; add to the drippings.
  • Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  • Serve sauce with hens and stuffing.

1 package (6.2 ounces) fast-cooking long grain and wild rice mix
2 celery ribs, chopped
1 small onion, chopped
2 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (4 ounces) mushroom stems and pieces, drained
4 Cornish game hens (20 to 24 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cook rice according to package directions. In a small skillet, saute celery and onion in 1 tablespoon butter until tender. Stir in the soup, mushrooms and prepared rice., Sprinkle inside and outside of hens with salt and pepper. Stuff with rice mixture. Place on a rack in a greased shallow roasting pan; cover with foil. , Bake at 350° for 40 minutes. Remove foil. Melt remaining butter; brush over hens. Bake 25-35 minutes longer or until juices run clear and a thermometer reads 180° for hens and 165° for stuffing.

12 fresh sage leaves
4 lemon wedges
6 green onions, cut into 2-inch lengths, divided
2 tablespoons butter, melted
1 tablespoon olive oil
1 tablespoon lemon juice
2 garlic cloves, minced
1 teaspoon kosher salt or sea salt
1/4 teaspoon coarsely ground pepper
6 small red potatoes, halved

Steps:

  • Preheat oven to 375°. Gently lift skin from hen breasts and place sage leaves under skin. Place lemon wedges and a third of the onions in the cavities. Tuck wings under hens; tie legs together. Place in a small greased roasting pan. , Combine butter, oil, lemon juice and garlic; spoon half of mixture over hens. Sprinkle with salt and pepper., Bake 30 minutes. Add potatoes and remaining onions to pan. Brush hens with remaining butter mixture. 1 red baking apple, unpeeled, chopped

1/4 cup apple juice
4 Cornish game hens (24 oz each), thawed if frozen
1/4 teaspoon salt

1/4 cup apple jelly

Steps:

  • Heat oven to 350°F. In 10-inch skillet, melt 3 tablespoons butter over medium-high heat. Add onions and apple; cook and stir until tender. Stir in remaining stuffing ingredients. In ungreased 15x10x1-inch pan, spread stuffing.
  • Split each game hen in half. Sprinkle lightly with salt and pepper. Place hen halves, skin side up, over stuffing. In 1-quart saucepan, melt jelly with 2 tablespoons butter over low heat; brush over hens.
  • Bake uncovered 1 hour to 1 hour 15 minutes or until hens are fork-tender and until juice of hens is clear when thickest pieces are cut to bone (at least 165°F).

We love spit-grilling these little guys but also enjoy them baked! We usually serve them with rice pilaf or stir fried rice and green beans.

4 rock cornish game hens, thawed
1 (16 ounce) can pineapple chunks, drained
curry powder
salt and pepper
1/2 cup melted butter
2 1/2 tablespoons lemon juice

Steps:

  • Rinse hens and pat dry, removing innards; lightly salt and pepper inside and out.
  • Sprinkle pineapple chunks lightly with curry powder and stuff hens.
  • Truss hens and close cavity. Tie wings to body and legs to tail.
  • GRILL: Balance on spit and secure with holding forks. Grill over medium coals or on rotisserie in gas grill set at medium for 45 minutes to 1 hour, basting occasionally with melted butter mixed with lemon juice.
  • OR BAKE: Place bird on rack and bake in 325 dg oven for one hour or until tender, covering with foil if becoming too brown. Baste occasionally with butter/lemon mixture.
  • I have been told internal temperature should reach 160 dg., but have not tried this method.

1 large ripe pineapple
3 tablespoons unsalted butter
1 small white onion, finely chopped (about 1 cup)
5 cloves garlic, minced
4 bay leaves
1 tablespoon sugar
1/2 teaspoon chile de arbol powder or other pure chile powder
1/2 teaspoon Pimienta Arabe
Coarse salt
1 1/4 cups Guajillo Chile and Pineapple Adobo
3/4 pound skinless firm white fish fillets, such as halibut, or swordfish steak, cut into 1-inch cubes
8 large shrimp (about 1/2 pound), peeled and deveined
1/2 cup chopped fresh cilantro
8 littleneck clams or other small hard-shell clams, thoroughly scrubbed
3/4 cup coarsely shredded Emmanthaler or Swiss cheese (about 3 ounces)

Steps:

  • Cut pineapple in half lengthwise. Using a small paring knife, make a cut about 1/2-inch from the pineapple skin, all the way around the pineapple. Remove core and discard. Using a large spoon, remove the pineapple flesh from its skin, making sure to leave about 1/2-inch of flesh all around each pineapple half. Set pineapple shells aside and coarsely chop pineapple flesh.
  • Melt butter in a medium skillet over medium heat. Add onion and garlic. Cook, stirring occasionally, until onion is translucent, about 5 minutes. Add chopped pineapple, bay leaves, sugar, chile powder, and 1/4 teaspoon pimiento arabe. Cook, stirring often, about 15 minutes. Season with salt and set aside to cool. This can be made up to a day in advance; refrigerate until needed and discard bay leaves before using.
  • Position rack in center of the oven and preheat to 400 degrees. Line a baking sheet with parchment paper and set aside.
  • Place adobo sauce in a medium saucepan and bring to a simmer over medium heat, adding water if sauce seems too thick. Place fish and shrimp in a large bowl; season with 1 teaspoon salt and remaining 1/4 teaspoon pimienta arabe and toss to combine.
  • Brush the inside of each pineapple shell with adobo sauce. Divide seafood mixture evenly between each pineapple shell; sprinkle with cilantro. Spread pineapple mixture over seafood, and pour over any remaining adobo sauce. Wrap crowns of pineapple with foil and transfer pineapples to prepared baking sheets. Bake for 20 minutes.
  • Tuck 4 clams into the stuffing of each pineapple; sprinkle cheese over each. Return pineapples to oven and continue baking until clams have opened, filling is bubbling, and cheese is lightly browned, about 20 minutes. Let stand several minutes before serving.
