PAN SEARED FILET MIGNON

Learn how to cook the perfect filet mignon in the oven like the best restaurants. A little pan-searing on the stovetop, then cook in the oven for your perfect filet. Never fail results every time that is perfect for two or a crowd.

2 Filet Mignon (about 1 1/2 inch thick and about 8 oz)
1 tablespoon butter (or butter)
salt and pepper (to taste or 7:2:2)

Steps:

  • Preheat oven to 400°. Start with 1 1/2 thick filets, about 8 oz each, and trimmed well. Remove any silver skin. If you have time, rest at room temperature for 30-60 minutes.
  • Pat dry well with paper towels. Season all sides to taste. Just kosher salt and pepper will be fine. I use my homemade All-Purpose Seasoning -7:2:2. Season just before cooking or 1 hour before cooking to prevent the salt from pulling fluid out of the meat.
  • In an oven-safe pan (I love my 10-inch cast iron), melt 1 tablespoon of butter over medium-high heat or use oil. When hot, sear both sides of the filets for 2-3 minutes-sear, flip, sear, and final flip before going to the oven.
  • Transfer to the preheated oven. Cook to your desired done temperature minus about 3-5 degrees. For me, medium-rare is always about 8-10 minutes to get an internal temp of about 135°- 140°. If you want rare, check the internal temperature when the meat goes into the oven.
  • I suggest checking the internal temperature after 4-5 minutes in the oven to see where you are on the internal temperature. Time can vary due to the exact temperature of the meat to start, the exact temperature of the oven, the pan used, and the thickness of the meat. Rare may take only a few minutes in the oven so beware if you want rare. DO NOT COOK BY TIME ALONE. YOU MUST CHECK THE INTERNAL TEMPERATURE. Times are provided to help planning only.
  • Remove from pan and tent lightly with foil on a plate and let rest for 3-5 minutes before cutting. It needs to absorb fluids internally, and the temperature will rise a few more degrees during the rest.

8 ounces filet mignon
3 ounces demi-glace
1 sliced portabella mushroom
4 destemmed shiitake mushrooms
4 porcini mushrooms
1 ounce marinara sauce
1 potato cake
2 slices tomatoes, seasoned with olive oil,salt,pepper and oregano
1/2 fennel bulb, caramelized
2 tablespoons olive oil
salt
pepper
1 sprig rosemary
1/2 cup merlot
1 tablespoon butter

Steps:

  • Season filet with salt and pepper.
  • Heat 1 tblsp olive oil in saute pan.
  • Sear filet on both sides approximately 2 minutes each.
  • Finish in pre-heated 350 degree oven until desired doneness.
  • In another pan, heat oil and saute sliced fennel until brown on all sides.
  • Remove and reserve.
  • Add mushrooms to pan and saute until soft.
  • Add merlot and deglaze pan.
  • Add demi-glace and heat to a boil.
  • Turn off heat and swirl in butter.
  • Adjust seasonings.
  • place potato cake in center of plate.
  • Slice filet into three portions.
  • Layer one piece on potato cake.
  • Top with with sliced, grilled tomato and fennel.
  • Repeat steps and top with last piece of filet.
  • Spear with rosemary sprig.
  • Laddle sauce around edge of plate.

1 whole filet of beef (4 to 5 pounds), trimmed and tied
2 tablespoons unsalted butter at room temperature
1 tablespoon kosher salt
1 tablespoon coarsely ground black pepper

Steps:

  • Preheat the oven to 500 degrees F.
  • Place the beef on a baking sheet and pat the outside dry with a paper towel. Spread the butter on with your hands. Sprinkle evenly with the salt and pepper. Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium-rare.
  • Remove the beef from the oven, cover it tightly with aluminum foil, and allow it to rest at room temperature for 20 minutes. Remove the strings and slice the filet thickly.

1 (17.5 ounce) package frozen puff pastry dough, thawed
2 teaspoons white sugar, or as needed for dusting

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicone sheet.
  • Separate dough at the seams into 4 squares and place on prepared baking sheet. Score the dough all over with the tines of a fork to prevent it from rising too much when baking. Lightly sprinkle dough sheets with white granulated sugar.
  • Cover with a sheet of parchment paper and 3 sheets of aluminum foil. Nest another baking sheet on top to apply some pressure to the dough while it bakes.
  • Bake in preheated oven 15 minutes; remove top pan and foil and gently peel off the parchment paper. Return pan to oven and bake until pastry is beautifully browned, 10 to 15 minutes. (Optionally, you can bake about 7 minutes after uncovering, then flip sheets over and bake until brown on the other side, another 7 minutes.)
  • Transfer to cooling rack and cool completely before cutting.
  • Square the sheets by trimming uneven edges off sheets using a sharp serrated knife with light sawing motion to keep the pastry from breaking. Cut each rectangle crosswise into 3 equal smaller rectangles. Use 3 small rectangles per pastry.

PUFF PASTRY:
1/2 of a 17 1/4-ounce package (1 sheet) frozen puff pastry, thawed
CREAM FILLING:
1/4 cup granulated or superfine sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup half and half or light cream
2 slightly beaten egg yolks
1/2 teaspoon vanilla extract
1/4 cup whipping cream
GLAZE:
2 cups sifted confectioners' sugar
1/4 teaspoon vanilla extract
2-3 tablespoons boiling water
FRUIT PRESERVE OR JAM FILLING: (optional)
1/3 cup seedless raspberry or strawberry jam or preserves
CHOCOLATE DRIZZLE TOPPING:
1 1/2 tablespoons melted semisweet chocolate

Steps:

  • PUFF PASTRY: Preheat oven to 425°F/220°C. Line 2 baking sheets with parchment paper or plain brown paper; set aside. Unfold puff pastry sheet and trim edges to a 9-inch square. Cut pastry into nine 3-inch squares. Transfer pastry squares to the prepared baking sheets; prick pastry. Bake in a preheated oven for 18-23 minutes, or until golden. (Or bake according to package directions.) Carefully remove pastries from baking sheet. Cool on a rack. CREAM FILLING: In a heavy, medium saucepan stir together sugar, flour, and salt. Slowly stir in half-and-half or light cream. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for 1 minute more. Slowly stir about half of the hot mixture into beaten egg yolks. Return all to saucepan. Cook and stir for 2 minutes more. Remove from heat. Stir in vanilla. Transfer mixture to a bowl. Cover surface with plastic wrap and cool just until warm without stirring. In a small mixing bowl beat whipping cream until soft peaks form. Fold whipped cream into warm pastry cream. GLAZE: In a medium mixing bowl combine confectioners' sugar and vanilla. Stir in enough boiling water to make a glaze of spreading consistency; set aside. ASSEMBLY: Use the tines of a fork to separate each pastry square horizontally into 3 layers. Note: If Using Fruit Jam or Preserves: Spread about 1 teaspoon of the raspberry or strawberry jam or preserves on each bottom layer. Spread about 1 1/2 tablespoons of the pastry cream over raspberry preserves or if not using a layer of fruit jam or preserves, spread about 1 1/2 tablespoons of the pastry cream on the bottom layer and preceed as follows: Top with middle pastry layers. Spread another 1 1/2 tablespoons of the pastry cream on each middle layer. Finally, top with remaining pastry layers. Spread glaze over top of napoleons, then drizzle with melted chocolate. Chill up to 1 hour.

- 5 tbsp. butter, divided
- 12 slices white bread, trimmed to 3 x 3 inch squares, or puff pastry
- 1 tbsp. olive oil
- 2 sweet onions, sliced
- 16 oz. jumbo lump crabmeat
- 1 packet bernaise sauce, .90 oz.
- 4 filet mignon steaks, 5 oz. each
- fresh tarragon, for garnish
- paprika for garnish

Steps:

  • Melt 2 Tbsp. butter and use to lightly brush both sides of bread slices. Put on baking sheet and toast under broiler for 1 to 2 minutes or til golden brown.
  • Heat 2 Tbsp. butter and olive oil in saute pan over high heat and cook onions for 8 to 1 minutes or til lightly caramelized. Keep warm.
  • Saute crabmeat in 1 Tbsp. butter. Keep warm. Make Bearnaise sauce according to packet directions.
  • Put 1 bread square on each plate. Top with a beef filet, then another square. Add crabmeat and another square. To with onions. Spoon on Bearnaise sauce and garnish with a sprig of tarragon and a sprinkle of paprika on the plate rim. Makes 4 servings.
