Classic Pineapple Pudding with vanilla wafers and a homemade vanilla custard

1/2 c Sugar
1/3 c All Purpose Flour
Dash salt
3 Egg Yolks
2 c Milk
1/2 tsp Vanilla Extract
Vanilla Wafers
20 oz Can of Pineapple Tidbits

Steps:

  • To begin, bring the pot of water to a boil over high heat. Once the water is boiling, reduce the heat to medium high.
  • Next, place the mixing bowl on top of the pot. Add sugar, flour and salt to the mixing bowl. Whisk together to combine.
  • Blend in egg yolks and milk. Whisk together to combine. Cook stirring constantly for 10 to 12 minutes or until thickened. You will want to be attentive when cooking custard because it can scorch and you'll have to start all over.
  • Finally, remove thickened custard from heat; stir in vanilla.
  • Assemble the dessert:
  • In a small casserole dish or serving bowl, add a layer of vanilla wafers. I like to add some vanilla wafers around the side of the dish also.
  • Next add a layer of the pineapple tidbits.
  • Pour a layer of the vanilla custard over the wafer/pineapple layer.
  • Repeat layering process with another layer of vanilla wafers, pineapple and custard.
  • Garnish top with additional vanilla wafers, if desired.
  • Delicious served warm or cold. Keep refrigerated.

5 extra-large whole eggs
2 extra-large egg yolks
2 1/2 cups half-and-half
1/3 cup honey
1 1/2 teaspoons pure vanilla extract
2 teaspoons orange zest (2 oranges)
1/2 teaspoon kosher salt
Brioche loaf
1/2 cup golden raisins
Maple syrup, to serve

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, honey, vanilla, orange zest, and salt. Set aside.
  • Slice the brioche loaf into 6 (1-inch) thick pieces. Lay half brioche slices flat in a 9 by 14 by 2-inch oval baking dish. Spread the raisins on top of the brioche slices, and place the remaining slices on top. Make sure that the raisins are between the layers of brioche or they will burn while baking. Pour the egg mixture over the bread and allow to soak for 15 minutes, pressing down gently.
  • Bake for 55 to 60 minutes or until the pudding puffs up and the custard is set. Remove from the oven and cool slightly before serving.

1 (20 ounce) can crushed pineapple
½ cup butter, melted
1 cup white sugar

1/4 cup sweetened shredded coconut
1/4 cup chopped pecans
1/4 cup butter, melted

1 (12 ounce) package pork sausage
1 cup butter or 1 cup margarine
1 1/2 cups finely chopped celery
1 cup chopped onion
3 -4 cloves fresh minced garlic (optional)
8 cups fresh white bread, torn into small pieces
1 1/2 cups finely chopped pineapple (I use fresh pineapple, but chunks or rings can be used, just drain well)
1 cup dried cranberries
1 1/4 cups chopped toasted pecans
1/3 cup chopped fresh parsley
1 teaspoon dried oregano, crushed
1 teaspoon sage
salt and pepper

Steps:

  • Set oven to 350 degrees.
  • In a large skillet, over med-high heat, cook pork until browned; drain, set aside.
  • In another skillet, melt butter.
  • Stir in celery, onion and garlic (if using).
  • Cook about 10 minutes, or until veggies are tender.
  • In a bowl, stir together the bread, cooked sausage, celery, onion, pineapple, cranberries, pecans, parsley, oregano, sage, salt and pepper.
  • Pour into a lightly-greased 3-quart casserole dish; cover the casserole.
  • Bake for 30-35 minutes, or until heated through.

Unsalted butter, for baking dish
8 large eggs
8 cups 1-inch cubes country-style bread, crusts removed
2 cups thickly sliced bacon, cut crosswise into 1/2-inch pieces
1 1/2 pounds cooked Chicken, Apple, and Calvados Sausage, coarsely chopped (about 4 cups)
2 cups peeled, cored, and chopped apple, such as Granny Smith
1 cup chopped yellow onion
1 tablespoon chopped fresh sage
1 teaspoon chopped fresh thyme
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
2 cups grated Gruyere cheese
2 cups warm milk

Steps:

  • Preheat oven to 325 degrees. Butter a large, deep baking dish; set aside.
  • Whisk eggs in a large bowl for about 1 minute. Add bread cubes and toss until fully coated. Set aside.
  • In a large skillet over low heat, cook bacon until fat is rendered and meat is crispy. Add sausage and cook until it just begins to brown. Add apple, onion, sage, and thyme; season with salt and pepper. Cook, stirring, for 1 minute.
  • Transfer sausage mixture to bowl with bread; add 1 cup Gruyere. Slowly add milk, gently folding so that bread maintains its shape. Transfer bread mixture to prepared baking dish; sprinkle with remaining 1 cup Gruyere.
  • Transfer baking dish to oven and bake until golden and bubbly and internal temperature reaches 170 degrees on an instant-read thermometer, about 1 hour and 15 minutes. Remove from oven and let stand 30 to 45 minutes before serving.
