Mulberry Muffins image

These mulberry muffins can be made with fresh or frozen mulberries, and are perfect for breakfast or a snack.

2 cups all-purpose flour
3/4 cup granulated sugar (or brown sugar)
2 teaspoons baking powder
1/2 teaspoon table salt
1/2 teaspoon cinnamon
1 cup milk
1 stick butter, melted (or 1/2 cup cooking oil)
1 large egg, beaten
2 teaspoons vanilla extract
2 cups (fresh or frozen) mulberries, stemmed

Steps:

  • Preheat oven to 400° F.
  • In a large mixing bowl, whisk together 2 cups flour, sugar, baking powder, salt and cinnamon.
  • Add the milk, butter, egg and vanilla. Stir, just until combined.
  • In a small bowl, toss the mulberries with the remaining tablespoon of flour.
  • Fold the mulberries into the muffin batter.
  • Spray a muffin pan, or insert a cupcake liner in each cup. Then, fill the muffin cups 2/3-full with muffin batter.
  • Bake 14-16 minutes, or until the muffins are golden brown, and a toothpick inserted into the center comes out clean.

cooking spray
2 ¼ cups all-purpose flour
¾ cup white sugar, or more to taste
¼ cup brown sugar
1 ½ teaspoons baking powder
¾ teaspoon baking soda
½ teaspoon ground cinnamon
1 pinch sea salt
¾ cup low-fat plain yogurt
6 tablespoons milk
1 large egg
3 tablespoons applesauce
¾ teaspoon vanilla extract
1 cup fresh mulberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 12-cup muffin tin with cooking spray.
  • Mix flour, white sugar, brown sugar, baking powder, baking soda, cinnamon, and salt together in a bowl.
  • Stir yogurt, milk, applesauce, egg, and vanilla extract together in another bowl. Gradually add flour mixture and stir until well combined.
  • Chop mulberries (if large) and add to batter; stir gently until incorporated. Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the centers comes out clean, 20 to 25 minutes. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely, about 20 minutes.

1 1/2 teaspoons salt
2 eggs
1 cup milk
1/3 cup liquid shortening or 1/3 cup oil
1/2 cup dried mulberries
nuts, if desired

Steps:

  • Beat Eggs milk and liquid shortening. In a Medium sized bowl combined all dry ingredients. Come Egg mixture with dry ingredients. Add nuts if desired.
  • Bake at 425 degrees F. for 20-25 minutes.

½ cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
1 pinch salt
½ cup fat free sour cream
¼ cup skim milk
2 tablespoons applesauce
1 egg
½ teaspoon almond extract
½ cup mulberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
  • Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.
