This is my own fruitcake recipe and it's a family favorite. The mixture of fruits and nuts helps make it a tasty treat. -Allene Spence, Delbarton, West Virginia

1-1/2 cups whole red candied cherries
1-1/2 cups whole green candied cherries
3 cups diced candied pineapple
1 pound walnut halves
10 ounces golden raisins
1 cup shortening
1 cup sugar
5 large eggs
4 tablespoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

My mother and I made this cake alot.....it was always a big hit. We didn't have candied fruit, so we used pineapple......

CAKE
2 c self rising flour
2 eggs
1 c sugar
1 c brown sugar, firmly packed
16 oz. can(s) crushed pineapple with juice
1 stick butter, room temperature
ICING
2 pkg cream cheese, room temperature
2 c confectioners sugar
1 1/2 stick butter, room temperature
1 tsp lemon extract
1 c crushed walnuts

Steps:

  • 1. mixflour, eggs, both sugars,and 1 stick butter in a large bowl
  • 2. add in can of crushed pineapple, juice included and stir until mixed. sweetened coconut can also be added to batter....makes it even more sinfulicious
  • 3. pour batter into a greased/floured cake pan.....I prefer a 8 1/2 x 16 pan
  • 4. bake in oven set at 425 until browned.....approx. 35 minutes
  • 5. in a separate bowl, mix cream cheese, remaining butter, lemon extract, and confectioners sugar until smooth
  • 6. after cake is done, let cool and spread icing on top....then sprinkle crushed or broken walnuts over top.....you can leave out nuts also.....your preference.
  • 7. invite friends or family over to enjoy a fun, delicious treat!!!!!

CHERRY PINEAPPLE FRUITCAKE

This is the finishing touch to our Christmas dinner. My family always claimed they didn't like fruitcake, but they love this one! For the best flavor, let it sit overnight before slicing.

1 cup chopped candied cherries
1 cup chopped candied pineapple
2 cups chopped pecans
4 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature
2 teaspoons vanilla extract
1 teaspoon baking powder

Steps:

  • In a bowl, combine the cherries, pineapple, pecans and 1 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Beat in vanilla. Combine baking powder and remaining flour; gradually add to creamed mixture. Fold in fruit mixture., Spoon into a greased and waxed paper-lined 10-in. tube pan. Bake at 300° for 1-3/4 to 2 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Remove waxed paper while warm; cool completely before slicing.

I got this recipe from my friend Julie, and her version does not have the mixed spice in it, but I love it with the spice in. Not a traditional fruitcake, but a lovely light fruity cake.

1 (15 ounce) can crushed pineapple
4 ounces butter
12 ounces raisins
1 cup sugar
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1 pinch salt
1 cup self raising flour
1 cup plain flour
2 beaten eggs

Steps:

  • Put in pan crushed pineapple and juice, butter, raisins, sugar, spice, bicarbonate soda and pinch of salt.
  • Boil for 10 minutes, watch that it does not boil over with the bicarbonate of soda in it!
  • Cool and then add the beaten eggs and flours.
  • Put into an 8x8-inch tin that has been lined with baking paper.
  • Bake at 350°F for approximately 1 hour.

500 g mixed dried fruit
1 cup brown sugar
155 g butter
1 (450 g) can crushed pineapple
2 eggs
1 cup plain flour
1 1/2 cups self raising flour
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda

Steps:

  • Place mixed fruit, sugar, butter and pineapple including juice into a saucepan.
  • Simmer for 5 minutes.
  • Allow to cool.
  • Beat eggs slightly and stir into fruit mixture.
  • Sift together the flours, spice and bircarbonate of soda.
  • Fold into fruit mixture.
  • Place mixture into a greased and lined 30cm cake tin.
  • Bake in a moderate oven for 90 minutes.
  • Test after 90 minutes.

PINEAPPLE COCONUT FRUITCAKE

I really don't care much for fruitcake. That being said, this recipe actually sounds like it might be good. I am adding it here so I can find the recipe to bake for Christmas. I may substitute 1/2 cup coconut rum for half the pineapple juice when I make it. NOTE: Cake needs to mellow for 2 weeks before serving.

1 1/2 cups candied pineapple, diced
1 1/2 cups light raisins
1/2 cup orange peel, diced
1 cup walnuts, chopped (or pecans)
2 cups flaked coconut
1 cup butter
1 cup sugar
4 eggs
1 cup pineapple juice
2 cups flour
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 300*. Grease and flour (3) 8" x 4" loaf pans.
  • Mix fruits, nuts and coconut; set aside.
  • Cream butter and sugar until fluffy. Add eggs one at a time, beating well after each. Stir in the pineapple juice.
  • Combine the flour, baking powder and salt. Add this to the creamed butter-sugar mixture.
  • Fold in the combined fruits, nuts & coconut.
  • Spoon into three (3) greased and floured 8" x 4" loaf pans.
  • Bake @ 300* for 1 1/2 hours.
  • Cool, wrap and store two weeks to mellow.
