TACO PIZZA
We used to go to a pizza place in Georgia that served a taco pizza. This is my version. It is different, but really a nice blend of the two. Prep time is if crust is pre-made.

TWIG'S TACO PIZZA
I miss living where Pizza Hut has a taco pizza. I had a craving and went looking for a recipe. I didn't find one so I whipped this up. It's close to PH but they don't use taco seasoning in their beef.

Steps:
- Prepare your favorite pizza dough and roll it out onto a 14 inch pizza pan. (I use a thick and chewy type dough so your cooking time may vary if you choose a thin crust or a pan crust).
- Brown 1 lb of ground beef with one package of taco seasoning mix. (I don't add the water the mix calls for.) Drain ground beef and set aside to cool.
- Warm up the refried beans in the same pan you used to cook the ground beef just enough to make the beans spreadable.
- Spread the beans on the pizza dough evenly. Top with the ground beef. Sprinkle about 1/3 of the cheese over beef and beans.
- Bake at 400 degrees for about 15 minutes or until dough is golden and the toppings are hot.
- Immediately cut the pizza into slices, leaving the slices in the pan.
- Spread the lettuce over the top, sprinkle with tomatoes, onions, and the rest of the cheese. (I used about 3/4 of a head of lettuce, 3/4 of a tomato, and an entire small onion -- but you could use 1/3 that and still have a hearty pizza.).
- Serve with taco sauce & sour cream if you like.

Steps:
- Preheat the oven to 450 degrees F.
- Heat a medium skillet over medium-high heat and add the olive oil. When the oil is hot, add the ground beef and cook, crumbling it with a wooden spoon, until well browned and cooked through, about 6 minutes. Drain off and discard any excess fat. Return the skillet to the heat, add the chili powder, garlic powder and 1/2 teaspoon salt and stir to incorporate. Add the adobo sauce and 2 tablespoons water. Cook 1 minute to blend the flavors, then remove from the heat.
- Meanwhile, combine the beans and salsa in a small saucepan. Bring to a simmer and cook until thickened, 4 to 5 minutes. Keep warm.
- Brush a 12-inch cast-iron skillet with oil. Cut six 2-inch snips in the pizza with scissors, spaced evenly around the edge. Fit the pizza into the oiled cast-iron skillet, pressing the edges to make a deep-dish-type crust. Bake the pizza until heated through and the cheese is just melted, about 10 minutes.
- Remove the pizza from the oven, top with the beans and ground beef and sprinkle with the Cheddar. Return to the oven and bake until the edges of the crust are golden brown and the cheese is melted and bubbly, 5 to 6 minutes more. Let stand for 5 minutes.
- Top with dollops of sour cream and guacamole and sprinkle with cilantro leaves. Cut into wedges in the skillet and serve with a pie server.

- Follow the Best Pizza Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
- Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here’s the pizza oven we use).
- Taste the refried beans: if needed, mix in a pinch or two of cumin and a pinch of kosher salt. (Ours were already well seasoned.) Thinly slice the green onion. Chop the romaine lettuce. Chop the tomatoes.
- When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
