2 cups mascarpone
1/2 cup heavy cream
2 tablespoons icing sugar (confectioners')
1/2 cup orange juice
1/4 cup balsamic vinegar
1/4 cup sugar
1/2 teaspoon orange zest
1 pint fresh figs, halved
1/2 cup walnuts, toasted and coarsely chopped

Steps:

  • For the cream: In an electric mixer whip the mascarpone until smooth. Continue whipping and slowly add the cream in a steady stream. Add the sugar and whip for 3 minutes.
  • For the figs: In a small pot combine the orange juice, balsamic vinegar, sugar, and zest.
  • Boil over high heat, stirring to dissolve the sugar. Reduce the heat to medium and simmer for 5 minutes.
  • Preheat the broiler.
  • Toss the figs with the glaze and spread, cut side up, in a single layer on a baking sheet.
  • Cook under the broiler for 6 to 8 minutes, until lightly caramelized. Serve the warm figs with the mascarpone cream and toasted walnuts.

1 pie-crust dough (homemade or thawed pre-made frozen)
5 ounces chèvre (room temperature)
2 Concorde or Anjou pears (sliced into ¹⁄₃-inch pieces)
2/3 cup fresh figs (de-stemmed and sliced)
3 Tbsp honey
3 Tbsp olive oil
2 Tbsp fresh rosemary (roughly chopped)
1/4 tsp salt
2 Tbsp feta cheese (plus more for garnish)

Steps:

  • Preheat oven for 350°F.
  • Roll out pie-crust dough and place inside a lightly greased and floured tart pan. Push dough against edges and into the corners of pan; remove and discard excess.
  • Spread chèvre evenly across the bottom.In a small mixing bowl, toss pears, figs, honey, oil, rosemary and salt.
  • Using your hands, arrange pears and figs over chèvre, first layering pears along the outer edge and adding figs as you move inward. Brush entire top of tart with remaining honey-herb mixture; sprinkle Feta on top.
  • Bake for 22 to 25 minutes, until crust is golden brown.
  • Let cool. Remove from pan, garnish with more Feta, cut into slices and serve.

3/4 cup Madeira wine
5 ounces soft, dried Black Mission figs (scant 2/3 cup), stemmed and quartered
3 whole star anise
All-purpose flour, for dusting
Pâte Brisée (page 322)
3 pounds ripe, firm Anjou pears
3/4 cup walnuts, broken into small pieces, toasted and cooled (see page 343)
Fresh juice of 1 lemon
1/2 cup granulated sugar
1/4 teaspoon salt
3 tablespoons cornstarch
2 tablespoons unsalted butter, cut into small pieces
1 large egg yolk, for egg wash
1 tablespoon heavy cream, for egg wash
Fine sanding sugar, for sprinkling

Steps:

  • Bring wine, figs, and star anise to a boil in a small saucepan. Reduce heat, and simmer until figs are softened, 10 to 12 minutes. Use a slotted spoon to transfer figs to a large bowl. Cook liquid over medium-high heat until reduced to a syrup, about 3 minutes; discard star anise. Pour syrup over figs.
  • Meanwhile, on a lightly floured surface, roll out 1 disk of dough to a 13-inch round. Fit into a 9-inch glass pie plate. Trim dough, leaving a 1-inch overhang; refrigerate or freeze until firm, about 30 minutes. Roll out second disk to a 13-inch round. Cut out steam vent in center with a cookie cutter; refrigerate or freeze dough round and cutout until firm, about 30 minutes.
  • Peel and core pears; slice into 1/4-inch-thick wedges. Add pears, walnuts, lemon juice, granulated sugar, salt, and cornstarch to figs and syrup; stir until well combined. Spoon into pie plate, piling high in center. Dot with butter; lightly brush edge of dough with water. Drape second disk of dough over pin; center over filling. Gently press around filling to fit; trim dough, leaving a 1/2-inch overhang. Fold edge of top crust under bottom one; crimp to seal. Brush water on bottom of cutout; press onto top crust. Beat egg yolk with cream; brush all over dough. Sprinkle pie generously with sanding sugar; freeze until firm, about 30 minutes. Meanwhile, preheat oven to 400°F, with rack in lower third.
  • Transfer pie plate to a parchment-lined rimmed baking sheet, and bake until just golden, 20 to 25 minutes. Reduce heat to 375°F. Bake until juices are bubbling and crust is deep golden brown, about 1 hour. If edges brown too quickly, cover with a foil ring (see page 324). Let pie cool completely on a wire rack.

1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
2 cups pecan halves, toasted
Flaky Pie Crust Dough
Cream
1 cup chilled whipping cream
2 tablespoons sugar
1 tablespoon brandy

Steps:

  • For filling:
  • Stir figs, brandy, and water in heavy small saucepan over low heat until liquid is absorbed, about 5 minutes; cool. Mix brown sugar, corn syrup, and next 4 ingredients in medium bowl. Stir in pecans, then fig mixture.
  • Preheat oven to 375°F. Roll out dough on lightly floured surface to 13-inch round. Transfer to 9-inch-diameter deep-dish glass pie dish. Fold edge of dough over, forming double edge, and crimp decoratively, pressing to top edge of dish. Pierce all over with fork. Freeze crust 15 minutes.
  • Line crust with foil; fill with dried beans or pie weights. Bake until sides are set, about 12 minutes. Remove foil and beans. Bake until crust is pale golden, pressing with back of fork if crust bubbles, about 10 minutes. Reduce oven temperature to 325°F.
  • Spoon filling into warm crust. Bake until filling is puffed at edges and set in center, about 40 minutes. Let stand until cool, at least 1 hour. (Can be prepared 1 day ahead. Cover and chill.)
  • For cream:
  • Beat cream, sugar, and brandy in medium bowl. Whisk until peaks form. (Can be made 4 hours ahead. Cover; chill.) Serve pie with cream.

  • Melt the butter in a large skillet over medium heat, then add the pears. Whisk together the cornstarch and cold water in a small bowl, until there are no lumps of starch, then add the corn starch mixture, caramel sauce, and brown sugar to the pears. Simmer everything for about 20 minutes, until the pears soften, take on a light caramel color, and the liquid reduces to a thick syrup. Cool the filling completely before assembling the pies. The pear mixture can be spread out on a baking sheet and placed in the refrigerator to speed the chilling process, if desired.
  • To assemble the pies, follow the pie crust instructions for defrosting and unrolling the crusts. My jars were tall and narrow, and I found it easiest to roll one crust very thin, and cut it into wide vertical strips. Cut a strip into rectangles, and press one rectangle all the way around the inside of the jar, pressing the crust even thinner as you place it in the jar. Cut out a circle of dough and press it into the bottom of the jar, sealing it to the edges of the sides so that the entire inside of the jar is covered with crust. Repeat until all of the jars have an inner crust layer.
