PEANUT BUTTER CAKE BARS

Steps:
- Preheat oven to 350ºF. Line a 9x13 baking dish with parchment (foil is ok too, but it will stick slightly to the bottom of the bars) and lightly spray with non-stick cooking spray.
- In a very large bowl mix together cake mix, melted butter, and egg until a dough forms.
- Press dough evenly into the prepared dish. Bake for 12 minutes.
- Cool completely in pan.
- In a large bowl combine peanut butter and vanilla. Beat with an electric mixer on medium speed for 30 seconds. Add powdered sugar and whipping cream and beat until smooth (with the exception of crunchy peanut butter chunks), scraping bowl occasionally. If mixture is too thick, add 1-2 tbsp of additional milk to thin it.
- Spread mixture evenly over the cooled cake mix crust.
- Place bars in the refrigerator while preparing the ganache. Or simply heat a can of store-bought chocolate frosting in the microwave for 30 seconds to soften!
- Spread the ganache or frosting over the peanut butter layer. Refrigerate for 2-3 hours, or until ganache is set and peanut butter layer is chilled.
- Cut into bars and serve!

This is a great peanut butter bar recipe that reminds me of my school days. For some reason, I keep losing this recipe, so I thought I would post it this time.

- Preheat oven to 350.
- Grease a 9x13-inch pan.
- Mix first four ingredients.
- Spread mixture into pan.
- Bake for 20-25 minutes or until puffed and light golden brown.
- Cool completely.
- In a small bowl, combine: ½ cup crunchy peanut butter, 1 (16 oz) can Pillsbury Creamy Supreme Chocolate Fudge Frosting. Spread on cooled bars.
- Top with: ½ cup chopped peanuts and 1 cup milk chocolate chips.

This appeared in the March/April '09 issue of Taste of Home Simple & Delicious magazine. These bars are rich and thick and I decided to post the recipe here so that I could add it to my cookbook!

- Preheat oven to 350. In a large bowl, cream the butter, peanut butter, sugar and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Stir in chocolate chips.
- Spread mixture into a greased 13x9 baking pan. Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars.

- Preheat oven to 350°. Grease two 13x9-in. baking pans., In a large bowl, cream butter, sugar and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour and baking powder; add to creamed mixture alternately with water and milk, beating well after each addition., Transfer to prepared baking pans. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Meanwhile, for frosting, in a large bowl, beat peanut butter and butter until blended. Beat in confectioners' sugar alternately with enough milk to reach spreading consistency., Remove cakes from oven; place on wire racks. Spread frosting over warm cakes; sprinkle with peanuts. Cool completely.
