Provided by Betty Crocker Kitchens

Categories     Dessert

Time 2h3m

Yield 12

Number Of Ingredients 9

1 box Betty Crocker™ Super Moist™ yellow cake mix
1 package (4-serving size) butterscotch instant pudding and pie filling mix
1 cup water
1/2 cup butter or margarine, melted
4 eggs
2 packages (8 oz each) toffee bits, about 2 cups
1 tablespoon all-purpose flour
1 1/2 cups whipping (heavy) cream
2 tablespoons packed brown sugar

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Generously grease bottom and sides of two 9-inch round pans or spray with baking spray with flour. (Do not use 8-inch rounds or batter will overflow.)
  • Beat cake mix, pudding mix (dry), water, butter and eggs in large bowl with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes. Toss 1/2 cup of the brickle chips with flour in small bowl; stir into cake batter (batter will be thick). Spoon evenly into pans.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around side of pans to loosen cakes; remove from pans to wire rack. Cool completely, about 1 hour.
  • Beat whipping cream and brown sugar in chilled large bowl with electric mixer on high speed until soft peaks form. Spread about 1/2 cup whipped cream mixture over 1 cake layer to within about 1/4 inch of edge; sprinkle with 1/2 cup of the brickle chips. Top with second layer. Frost side and top of cake with remaining whipped cream mixture. Press remaining 1 cup brickle chips into side of cake. Store covered in refrigerator.

Time 4h10m

Yield 8 generous servings

Number Of Ingredients 29

Shortening, for greasing pans
2 tablespoons cake flour, plus 3 1/3 cups, divided
4 large eggs, at room temperature, lightly beaten
1/3 cup hazelnut-flavored liqueur (recommended: Frangelico)
1 teaspoon hazelnut extract
1 3/4 cups granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon fine-grain sea salt
1 cup peeled, toasted and finely chopped or ground hazelnuts
3 sticks (24 tablespoons) unsalted butter, at room temperature
1 cup sour cream, at room temperature
4 tablespoons unsalted butter, at room temperature
4 tablespoons all-purpose flour
1 cup granulated sugar
1 cup heavy whipping cream
1 cup peeled, toasted and finely chopped hazelnuts
1/4 teaspoon fine-grain sea salt
1 tablespoon hazelnut-flavored liqueur (recommended: Frangelico)
1 teaspoon hazelnut extract
2 tablespoons finely chopped bittersweet chocolate or chocolate disks
8 ounces bittersweet chocolate, finely chopped or chocolate disks
1 cup granulated sugar
1 cup egg whites, at room temperature (from 7 to 8 large eggs)
4 sticks (32 tablespoons) unsalted butter, at room temperature
1 teaspoon hazelnut extract
2 cups peeled, toasted and finely chopped hazelnuts
8 whole peeled, toasted hazelnuts
8 milk chocolate curls

Steps:

  • To make the cake, grease 2 (9 by 2-inch) round cake pans with shortening and line bottoms with parchment rounds. Grease parchment and dust each pan with 1 tablespoon flour, shaking out excess. Set pans aside.
  • Preheat oven to 350 degrees F.
  • In a medium bowl whisk together the eggs, liqueur, and hazelnut extract until blended and set aside.
  • In a large bowl of an electric stand mixer, gently combine on low speed 3 1/3 cups flour, sugar, baking powder, baking soda, salt and hazelnuts until blended. Add the butter and sour cream and beat on low speed until dry ingredients are moistened.
  • Increase speed to medium and beat for 2 1/2 minutes, scraping the sides of the bowl occasionally. In 3 separate additions, add the egg mixture to the batter, beating for 30 seconds after each addition. Divide batter evenly into the prepared pans and bake on the center rack for 40 to 45 minutes or until a cake tester inserted into the center of each cake comes out clean. Cool cakes in pans for 10 minutes. Remove from pans, discard parchment and cool cakes completely on wire racks, 1 to 2 hours.
  • To make the hazelnut filling, in a medium saucepan melt the butter over medium heat.
  • Sprinkle with flour and whisk until smooth. Reduce heat to medium-low, add the sugar and cream and cook, whisking constantly, for 7 to 10 minutes or until mixture is thickened. Stir in the hazelnuts, salt, liqueur, hazelnut extract, and chocolate and cook just until chocolate melts. Set aside in a bowl and cool completely.
  • To make the chocolate buttercream frosting, melt chocolate in the top of a double boiler over medium heat until smooth. Set aside, off the heat, and cool completely. In a large bowl whisk together the sugar and egg whites until blended. Place the bowl over a saucepan of simmering water and whisk until mixture reaches 140 degrees F.
  • Remove mixture to a large bowl of a stand mixture with a whisk attachment and beat on low speed for 1 minute to cool slightly. Increase speed to high and beat for 4 minutes or until mixture is cool to the touch and doubled in volume. Reduce speed to low and add the softened butter 1 tablespoon at a time, beating well after each addition, until all of the butter has been added. Continue to beat until mixture looks smooth. Fold in the melted chocolate and the hazelnut extract and beat until fluffy.
  • To assemble the cake, split each cake layer horizontally in half to make 4 separate layers. Spread equal amounts of the hazelnut filling between each layer and frost top and sides of cake with the buttercream. To garnish, press chopped hazelnuts onto the sides of the cake. Using a pastry bag fitted with a star tip, pipe rosettes around the top rim using remaining frosting. Place whole hazelnuts and chocolate curls on the top of the cake.
  • Tip: To make this cake an easier undertaking, take the time to search out hazelnuts that have already been peeled. If peeled nuts are unavailable, working in batches, boil nuts in 2 cups water along with 2 tablespoons baking soda for 1 to 2 minutes.
  • Run nuts under water and slip off skins. Dry the nuts well and toast on a baking sheet in a 350 degree F oven for 20 minutes, stirring occasionally. Cool and finely chop and proceed with recipe. If you purchase the nuts already peeled, toast in a 350 degree F oven for only 15 minutes.

HAZELNUT AND BROWN BUTTER CAKE

Hazelnut and Brown Butter Cake image

This cake, with its subtle toasted-nut flavor and moist, buttery texture, is one of the few things I can't resist, especially when it's still warm from the oven. It's also delicious made with walnuts or almonds in place of the hazelnuts.

Provided by Scott Conant

Categories     dessert

Time 1h30m

Yield Makes one 10-inch cake; Serves 12

Number Of Ingredients 6

2 sticks (8 ounces) unsalted butter, plus more for the pan
4 ounces hazelnuts
3/4 cup (3 ounces) all-purpose flour
3 cups (12 ounces) confectioners' sugar, plus more as needed
Pinch of kosher salt
1 cup egg whites (from about 8 large eggs)

Steps:

  • In a saucepan, melt the butter over medium heat, and continue to cook it until it turns brown and smells quite nutty, being careful not to let it burn, 10 to 15 minutes. Remove from the heat and let cool almost to room temperature.
  • Meanwhile, heat a convection oven to 325 degrees F or a conventional oven to 350 degrees F. Butter the bottom of a 10-inch round cake pan and line the bottom of the pan with parchment paper.
  • Spread the hazelnuts on a rimmed baking sheet and toast them in the oven until lightly browned and fragrant, 10 to 15 minutes. Wrap the hazelnuts in a clean kitchen towel and rub them together vigorously to remove most of the skins. (It's fine if some is left on.)
  • Chop about 1/4 cup of the nuts finely. Grind the rest of the toasted nuts in a food processor until finely ground.
  • Sift the flour, confectioners' sugar, and salt together into a large bowl. Add the ground nuts and whisk to combine. Add the egg whites and whisk them together well with the dry ingredients. Slowly add the melted butter, whisking constantly until it is completely incorporated and no butter is floating on top of the mixture.
  • Pour the batter into the prepared pan and sprinkle the top with the reserved chopped nuts. Bake until the cake feels solid but still gives slightly when touched, 40 to 45 minutes. Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.

BUTTER BRICKLE CAKE RECIPE - (4.5/5)

Butter Brickle Cake Recipe - (4.5/5) image

Provided by MaryA.

Number Of Ingredients 19

HAZELNUT MERINGUE LAYERS:
1 cup granulated sugar plus 3 tbsp
1 1/2 cups ground hazelnuts
1 tbsp cornstarch
6 egg whites
1/4 tsp cream of tartar
1 tsp pure vanilla extract
CARAMEL SAUCE:
1 cup 35% whipping cream
1 3/4 cups granulated sugar
5 tbsp Longo's Unsalted Butter, cubed
1 tsp pure vanilla extract
1/8 tsp salt
WHIPPED CREAM FILLING:
2 cups 35% whipping cream
1 tbsp icing sugar
1/2 cup Skor toffee bits/chips
4 oz milk chocolate, melted
2 Skor bars, broken into large pieces

Steps:

  • LINE large baking sheets with parchment paper, trace 3 8-inch circles on sheets. Turn paper over so that you can see the tracings. Preheat oven to 225°F. MIX together 1 cup of the sugar, hazelnuts and cornstarch. USING the whip attachment of large stand mixer, whip egg whites at slow speed until whites are foamy; add cream of tartar. Continue whipping at fast speed until soft peaks form. Gradually add the 3 tbsp of sugar and whip until stiff peaks form. Add vanilla. REMOVE bowl from mixer stand, gradually fold in the nut mixture with a spatula. Divide mixture between 3 circles and spread into even layers. Bake for about 2 hours or until meringues are lightly coloured and dry. Set aside to cool or store airtight at room temperature. CARAMEL SAUCE: Bring cream to almost boiling and set aside. Combine the sugar with 1/2 cup water in large, deep saucepan. Stir to moisten the sugar. Bring to a simmer, swirling the pan gently to dissolve the sugar. Increase heat and simmer without stirring until syrup begins to colour. Once the syrup turns an amber colour or light caramel colour, remove from heat and add the cream in a steady stream, stirring with a wire whisk. *Caramel and cream will bubble up and steam* (be very careful), but keep stirring and continue to whisk until caramel is completely dissolved and combined with the cream. STIR in pieces of butter until melted and combined. Stir in vanilla and salt. Set aside to cool. WHIPPED CREAM FILLING: Whip the cream until soft peaks form. Add icing sugar and whip until stiff peaks form. Set aside 1 cup for decoration. Fold 1/2 cup of the Skor chips into the remaining cream. PLACE the 3 meringue layers on work surface, turn 1 layer over to the smooth side (for top layer). Spread a very thin layer of caramel sauce on top layer and chill. LAY 2 remaining meringues on work surface and brush with melted milk chocolate; chill until set. REMOVE all layers from refrigerator and place the bottom layer on serving plate, spread one half of the Skor cream over the first layer, place next layer on top and spread the remaining half of the Skor cream over second layer. Place top layer caramel side up gently on top. FILL a piping bag with a 1/2-inch plain tip with remaining plain cream and pipe 8 rosettes around the outside border of the layer, leaving space between the rosettes. Pipe one rosette in centre of cake. Fill the spaces with Skor bar pieces. DRIZZLE caramel lightly over the whipped cream rosettes. Chill 4 hours before serving. TIP: Any remaining caramel sauce can be refrigerated for up to 3 weeks to be used for other desserts.
