Here's a colorful salad with a wide range of tastes and textures that go together so well. There are sweet peaches, tart lemon, tangy vinegars and all kinds of crunch from greens, bacon and nuts. -Denise Elder, Hanover, Ontario

4 medium ripe peaches, peeled
2 tablespoons sugar
2 tablespoons lemon juice
2 tablespoons cider vinegar
1 tablespoon rice vinegar
1/4 teaspoon salt
1/3 cup canola oil
6 cups spring mix salad greens
4 cups torn romaine
1 small red onion, halved and thinly sliced
1/2 cup thinly sliced cucumber
6 bacon strips, cooked and crumbled
1/3 cup chopped pecans, toasted

Steps:

  • Slice three peaches; set aside. Cut the remaining peach in half; place in a blender. Add the sugar, lemon juice, vinegars and salt; cover and process until blended. While processing, gradually add oil in a steady stream. , In a large bowl, combine the salad greens, romaine, onion and cucumber. Pour about 2/3 cup dressing over salad and toss to coat. , Transfer to a serving platter; top with sliced peaches and bacon. Drizzle with remaining dressing; sprinkle with pecans.

1/2 cup uncooked couscous
1 medium lime
2 medium firm ripe peaches, halved and pitted
1 teaspoon plus 1/4 cup canola oil, divided
1 English cucumber, halved and sliced
1 cup cherry tomatoes, halved
1/4 medium red onion, thinly sliced
1 tablespoon agave nectar
2 teaspoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Prepare couscous according to package directions; fluff. Transfer to a large bowl; let cool. Meanwhile, finely grate enough zest from lime to measure 1-1/2 teaspoons; set aside for dressing. Slice lime in half. Brush peach and lime halves with 1 teaspoon oil. Grill peaches, covered, over medium heat until tender, 3-4 minutes on each side. Remove to a cutting board. Grill lime halves just until tender, about 1 minute., When cool enough to handle, chop peaches and add to couscous. Stir in cucumber, tomatoes and red onion. Squeeze juice from lime into a small bowl. Add agave, vinegar, salt, pepper, reserved lime zest and remaining 1/4 cup oil. Whisk until blended. Pour over salad; toss to coat.

JUST A PEACHY DRESSING, PLACE IN BLENDER, BLEND WELL
1/4 C peach necter
2 Tbs cider vinegar
2 Tbs plain yogurt
2 tsp sugar or splenda
1/2 tsp garlic pdr
1/2 tsp salt
pepper to taste
2 peaches, fresh peeled, pitted, and chopped
1/2-3/4 C crisco, olive oil. . . . . while processing, pour oil slowly in a steady stream process til blended and creamy looking.
SALAD
8 C baby spinach
8 C torn romain. bibb or head lettuce, or any mix of salad greens or combination of .
top with sprinkled or crumbled bacon or bacon bits
4 large peaches, peeled, 2 sliced and 2 chopped (more if you prefer)
optional: blueberries sprinkled over the top

Steps:

  • 1. MIx dressing above, Blending the first 9 ingredients for the Dressing, as Directed above. Chill at least 1 hr.
  • 2. Mix Washed and chilled salad greens adding peaches, chopped and slices, Toss well Drizzle Dressing Over Greens. Sprinkle with Bacon, and Top with Blueberries, Optional. . . . ENJOY!!!! Refreshing to your taste Buds.

6 cups mixed baby lettuces and spring greens
1 cup strawberry, halves
1/4 cup honey roasted peanuts
1 (15 ounce) can sliced peaches in light syrup (I rinse the peaches to remove additional syrup for a lighter taste.)
2 tablespoons white wine vinegar
1 teaspoon canola oil
1 teaspoon sugar
1 dash pepper

Steps:

  • Place the salad greens, strawberries and peanuts in large salad bowl.
  • Drain and if desired rinse peaches; reserve 2 Tbsp of the syrup.
  • Place 10 peach slices in bowl with greens.
  • In blender container, add remaining peach slices, reserved syrup, vinegar, oil, sugar and pepper.
  • Cover and blend on high about 15 seconds or until smooth.
  • Pour the peach sauce over salad ingredients; toss and serve.

¼ cup poppyseed salad dressing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken. Remove from oven and set aside.
  • Peel peaches (if desired) and slice into bite-sized segments. Combine peaches, spinach and pecans in a large bowl. Toss with dressing until evenly coated, adding a little additional dressing, if necessary.

2 tablespoons sesame seeds
1 head romaine lettuce, torn into bite-size pieces
1 head red leaf lettuce, torn into bite-size pieces
1 (8 ounce) package crumbled feta cheese
1 (4 ounce) can sliced black olives
1 cup cherry tomatoes, halved
1 red onion, halved and thinly sliced
6 fresh mushrooms, sliced
¼ cup grated Romano cheese
1 (8 ounce) bottle Italian salad dressing

Steps:

  • Heat a large skillet over medium-high heat. Place the almonds in the skillet, and cook, stirring frequently until lightly browned. When the almonds are beginning to turn, add sesame seeds, and cook 1 more minute, or until seeds are toasted.
  • In a large salad bowl, combine lettuce with feta cheese, olives, almonds, sesame seeds, tomatoes, onion, mushrooms, and Romano cheese. When ready to serve, toss with Italian dressing.

8 ounces cooked beef, cut into julienne strips
4 cups romaine lettuce, torn
3 cups fresh spinach, torn
3 medium peaches, peeled, pitted, and sliced
1 avocado, peeled, pitted, and sliced
12 cherry tomatoes, halved
1/2 cup salad oil
3 tablespoons prepared horseradish
1/2 teaspoon Worcestershire sauce
3 -5 drops hot pepper sauce

Steps:

  • Cut a thin slice off one side of the meat if necessary in order to make a flat side.
  • Place flat side down, cut into thin lengthwise slices.
  • Then cut each slice into narrow strips about 1/8 to 1/4-inch thick.
  • In a salad bowl combine romaine, spinach, peaches, avocado, tomatoes, and roast beef strips.
  • To make dressing, in a screw top jar combine salad oil, vinegar, horseradish, Worcestershire sauce, bottled hot pepper, 1/2 tsp salt and 1/8 tsp pepper.
  • Cover and shake well to mix.
  • Pour dressing on top of salad to coat meat and vegetables.
  • Serve!
