Sauteed Cabbage and Apples image

This sauteed red cabbage makes a very elegant side dish. Very budget-friendly too.

2 tablespoons salted butter
1 small head red cabbage, cored and thinly sliced
1 medium Granny Smith apple - peeled, cored, and sliced
½ small sweet onion, cut into thin wedges
1 teaspoon fennel seeds, crushed
kosher salt and freshly ground black pepper to taste
¼ cup red wine
½ teaspoon apple cider vinegar

Steps:

  • Melt butter in a large saute pan over medium heat. Add cabbage, apple, onion, fennel seeds, salt, and pepper. Saute until the cabbage softens and wilts, about 20 minutes.
  • Pour red wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in vinegar.

Number Of Ingredients 7

2 partridges, with their livers
4 tablespoons unsalted butter
Coarse salt and freshly ground pepper to taste
2 apples (McIntosh or Granny Smith)
4 thin slices french bread
4 tablespoons Calvados or whisky
1 bunch watercress

Steps:

  • Preheat oven to 350 degrees. Truss the partridges, spread with one tablespoon butter each and season with salt and pepper. Place in a roasting pan with just enough water in it to cover the bottom and roast for 30 minutes. Remove to a serving dish and keep warm.
  • Meanwhile peel, core and halve the apples. Place them on a buttered baking dish flat side down. Dot with one tablespoon of butter and cook for about 15 minutes, or until just soft. Keep warm.
  • Saute the bread in the remaining butter, remove and drain on paper towels. Add the livers to the pan and saute until pink. Remove them to a small bowl and mash them to a paste with salt and pepper. Spread the paste on the bread and keep warm.
  • Add the Calvados or whisky to the pan, ignite and shake until the flame goes out. Pour this over the partridges and surround them with the apple halves and watercress.

PARTRIDGE IN CIDER WITH APPLES & CELERY

Serve a partridge as an individual portion for one in this seasonal stew with smoked bacon, Bramley apples, thyme and sage

2 tbsp olive oil
2 partridge , ready-prepared by your butcher
plain flour , for dusting
150g pack smoked bacon lardons
1 onion , finely diced
2 celery sticks, cut into 4cm pieces
2 Bramley apples , cut into chunks
2 tbsp thyme leaves
2 tbsp finely chopped sage
250ml scrumpy cider
250ml good chicken stock

Steps:

  • Heat oven to 150C/130C fan/gas 2. Place a large frying pan over a medium heat and pour in 1 tbsp of the oil. Dust the partridges in the flour and fry until evenly browned all over. Remove from the pan and drain on a piece of kitchen paper.
  • Put a large casserole dish on the heat. Pour in the remaining oil, add the lardons and cook until the fat has rendered out and the lardons are crisp. Add the onion and celery to the pan and sweat down until soft. Stir in the apples to soften a little. Add the thyme, sage and the partridges, then pour over the cider and chicken stock and bring to the boil. Cover and transfer to the oven for 25 mins or until the thigh meat is cooked through and will come away from the bone, and the sauce has reduced and thickened. Remove from the oven and serve with the Smoked butter mash (see 'Goes well with').

200ml vegetable stock or water
50g golden caster sugar
75ml cider vinegar

Steps:

  • Place all the ingredients except for the apples in a large saucepan and season. Place over a medium heat, bring to the boil, then turn down the heat and simmer for 30 mins. Add the apples, then continue cooking for 15 mins until tender.

1 onion, chopped
2 tart apples - peeled, cored and sliced
2 tablespoons water
1 ½ teaspoons salt

3 tablespoons white sugar
3 tablespoons distilled white vinegar

Steps:

  • Heat oil in a medium size saucepan. Stir in cabbage and onion; fry until wilted. Stir in apple and water, salt and pepper. Cover and simmer about 25 minutes.

My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for about 1 hour or until cabbage and apples are tender and the liquid is reduced. Sprinkle with bacon and parsley if desired.

  • Split partridge through back and fix it flat.
  • Rub salt and pepper over all surfaces.
  • Brown bird and onion in butter.
