FLOURLESS MOLTEN SPICE CAKE



Flourless Molten Spice Cake image

An easy flourless cake made as individual servings for each of your guests. A rich chocolate cake with a molten center. An easy Valentine's Day dessert.

4 (1 ounce) squares semisweet baking chocolate
½ cup unsalted butter
1 tablespoon red wine
1 teaspoon pure vanilla extract
1 cup powdered sugar
¼ teaspoon ground ginger
2 large eggs
1 large egg yolk

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease the bottom and sides of two 6-ounce ramekins.
  • Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Remove from the heat and whisk in wine and vanilla. Whisk in powdered sugar and ginger until smooth. Allow to cool slightly, about 5 minutes.
  • Whisk in eggs and egg yolk. Pour mixture into the prepared ramekins.
  • Bake in the preheated oven until sides are firm and centers are soft, about 10 minutes. Remove from the oven and let stand for 1 minute, then loosen edges with a knife and invert each ramekin onto a serving plate. Serve immediately.

3 cups all-purpose flour
4 teaspoons ground ginger
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon cardamom
2 sticks unsalted butter, softened
1 cup brown sugar
1 cup molasses
1 cup boiling water
2 teaspoons baking soda
2 large eggs, beaten

2 (8-ounce) packages cream cheese, softened
1 stick unsalted butter, softened
1 teaspoon orange zest
2 cups powdered sugar

Steps:

  • Preheat oven to 350°. Grease a 9x13-inch pan. Combine flour, ginger, cinnamon, cloves, and cardamom. In a separate bowl, beat together butter and brown sugar until fluffy, about 3 minutes. Whisk together molasses and boiling water in another bowl. Whisk baking soda into hot molasses. Combine dry ingredients and molasses, then fold in butter mixture until blended. Whisk eggs into mixture until smooth. Pour batter into cake pan and bake 55 - 65 minutes until toothpick inserted in center comes out clean. Cool before removing from pan. Prepare frosting. Cream Cheese Frosting: Beat together cream cheese, butter, and orange zest until fluffy. Slowly beat in powdered sugar. Chill frosting before spreading on cooled cake. Serves a couple of cowboys with a sweet tooth or 5 or 6 ranch kids.

1 (18.25 ounce) package yellow cake mix
½ cup white sugar
1 teaspoon baking soda
2 teaspoons ground cinnamon
½ teaspoon ground ginger
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
4 eggs
1 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, stir together cake mix, sugar, baking soda, cinnamon and ginger. Make a well in the center and pour in pumpkin puree, oil, and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in chopped pecans. Pour batter into prepared pan.
  • Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

2 eggs, beaten
1 cup packed brown sugar
1 ¼ cups white sugar
1 (15 ounce) can pumpkin puree
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
3 ½ teaspoons ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground ginger
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt pan. Sift together the flour, baking soda, salt, cinnamon, nutmeg, allspice, and ginger. Set aside.
  • In a large bowl, cream together the shortening, eggs, brown sugar and white sugar until light and fluffy. Beat in the pumpkin puree. Beat in the flour mixture. Stir in the chopped pecans. Pour batter into prepared pan.
  • Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
