Polenta Cakes With Mushroom Ragu image

Polenta cakes with mushroom ragu and whipped ricotta make a hearty yet sophisticated meal.

For the Polenta Cakes:
4 cups vegetable broth
1 cup polenta
1/4 cup cream
½ cup parmesan cheese (grated)
3 tablespoons butter (salted)
2 tablespoons flour
3 tablespoons olive oil
For the Mushroom Ragu:
1 pound mushrooms (chopped)
1 tablespoon olive oil
1 teaspoon salt
1 shallot (diced)
1 medium carrot (diced)
2 cloves garlic (minced)
1 teaspoon dried thyme
1 teaspoon ground black pepper
¼ cup white wine
2 tablespoons tomato paste
1 teaspoon balsamic vinegar
1 cup vegetable broth
For the Herbed Whipped Ricotta:
1 cup ricotta cheese
½ teaspoon salt
1 tablespoon chopped basil
¼ teaspoon lemon zest
¼ teaspoon lemon juice

Steps:

  • Gather your ingredients.
  • Heat the 4 cups of vegetable broth in a saucepan on high heat until boiling. Add the polenta, lower heat to medium, and cook, whisking occasionally until it is tender, about 5 minutes.
  • Whisk in the cream, parmesan cheese and butter and continue cooking until the butter is melted. Take off the heat and allow to cool for a minute.
  • Grease a small sheet pan with cooking spray and pour the polenta into the pan. Smooth the polenta with a silicone spatula so it sits evenly in the pan. Allow to cool and then cover with cling wrap and refrigerate for at least 2 hours or up to 24 hours.
  • Remove the polenta from the refrigerator and cut into 8 equal-sized squares or rounds. Use a biscuit cutter if cutting into rounds. Lightly dust both sides of each cake with flour.
  • Preheat oven to 200 F. Heat a cast iron skillet on high heat and add half of the olive oil. When the oil is warm, place 3-5 of the polenta cakes in the pan and cook each side until golden brown, about 3 minutes. Remove the cakes from the pan and place on a paper towel-lined plate to drain. Add the rest of the oil and repeat with the remaining cakes. Place the cooked cakes in the oven to keep them warm while you prepare the ragu. Alternatively, you can prepare the ragu ahead of time and heat it when you are ready to serve.
  • Gather your ingredients.
  • Add the mushrooms, olive oil, and 1/2 teaspoon salt to a cast iron skillet and cook until the mushrooms are golden brown, about 5-7 minutes.
  • Add the shallots, carrots, garlic, thyme, and ground black pepper to the mushrooms and saute for another 2 minutes.
  • Add in the tomato paste and stir to combine.
  • Add in the vegetable broth, wine, and balsamic vinegar. Stir to combine and simmer on low heat for 8-10 minutes.
  • Gather your ingredients.
  • Add all of the ingredients to your food processor and blend until smooth and whipped in appearance, about 1 minute.
  • To serve, arrange polenta cakes on each plate. Spoon the ragu over the cakes and top with the herbed ricotta. Sprinkle with more chopped basil if you wish.

- salt
1 cup(s) polenta (corn grits)
- oil
- grated parmesan cheese

Steps:

  • Bring salted water to a boil. Stir in the polenta. Reduce heat and cook until thick about 20 to 30 minutes.
  • Spray a 9x9 pan with cooking spray. Line the pan with plastic wrap. Spread the polenta over the plastic wrap. Place another piece of plastic wrap over the polenta and refrigerate until firm about 3 hours.
  • Cut the polenta with a round cookie cutter or glass. Place a skillet over high heat and get it hot. Drizzle a small amount of oil in pan. Fry each polenta rounds until browned. Sprinkle with Parmesan Cheese

Polenta is such a natural base for so many savory foods - more flavorful than either pasta or mashed potatoes, but somehow just as forgiving - that it's hard to pick a favorite topping. Having said that, I know what mine is: sausage. The fatty succulence of a banger combined with the lean graininess of the cornmeal is somehow perfect.

2 tablespoons olive oil
4 good-quality sweet Italian sausages
1 cup medium-to-coarse cornmeal
Salt
1/2 to 1 cup freshly grated Parmesan cheese, or to taste
2 tablespoons butter
Freshly ground black pepper

Steps:

  • Put oil in a large skillet over medium-high heat. When oil is hot, add sausages and cook, turning occasionally, until well browned on all sides and cooked through, about 20 minutes. Set aside.
  • Meanwhile, put cornmeal in a medium saucepan along with 1 cup water and whisk well to make a slurry; continue whisking mixture to eliminate any lumps. Put pan over medium-high heat, sprinkle with salt and bring to a boil. Reduce heat to medium and continue to cook, whisking frequently and adding water as needed to keep mixture loose and free of lumps, between 3 and 4 more cups. If mixture becomes too thick, simply add a bit more water; consistency should be similar to sour cream's.
  • Polenta will be done in 15 to 30 minutes, depending on grind. Add cheese and butter. Taste and add salt, if necessary, and lots of pepper; serve topped with sausages.

4 cups chicken stock, preferably homemade
2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/4 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

Baked Polenta With Ricotta and Parmesan image

This no-stir method produces an effortless polenta. The ricotta adds lightness and turns the polenta into an elegant side dish. It may be baked up to 2 hours in advance and reheated, if desired.

1 cup coarse polenta
1/2 teaspoon kosher salt
2 tablespoons extra-virgin olive oil
1 cup fresh ricotta
1 cup grated Parmesan
Black pepper

Steps:

  • Soak polenta in cold water for 1 hour. Heat oven to 400 degrees. Drain polenta, then place in a heavy-bottomed pot or ovenproof baking dish. Add salt and 4 cups water.
  • Place pot in oven, cover, and bake for 45 minutes. (The polenta will begin to simmer and absorb water after a few minutes. No need to stir.)
  • After 45 minutes, uncover and stir in the olive oil, ricotta and Parmesan, but don't overmix. Some of the ricotta should remain in big blobs. The mixture may be a bit soupy at this point, but will thicken as it continues to cook. Bake, uncovered, for another 15 minutes, until top has browned. Finish with a generous amount of pepper.
