- 1. Crush vanilla wafers very fine. Mix with sugar
- 2. Add undiluted juice and nuts. Mix well.
- 3. Shape into small balls. Roll in coconut.
- 4. Store in airtight container in refrigerator.
ORANGE BLOSSOMS
The original recipe comes from a Better Homes and Gardens cookie catalog, however, it is only for the cookie base. These are actually a lot easier than they seem but totally worth the wait! Any kind of jam or jelly is delicious with this recipe if you aren't thrilled with oranges, but the favorite around here orange.

- 1. In a mixing bowl, beat butter with an electric mixer for about 30 seconds. Add sugar and vanilla and beat until well mixed. Beat in as much flour as you can with the electric mixer, then stir in the rest with a wooden spoon. Cover and chill approx 1 hour, it will be easy to handle.
- 2. Preheat oven to 350 degrees and lightly grease a mini-cupcake pan. Shape dough into approx 1 inch balls and drop into the cupcake pan slots. Using your index finger or the back of a small spoon, make an indentation in the center of the cookie dough so that it comes up even to the top of the muffin cup. Make sure not to push the indentation too far down, so there is enough dough all around the cup. Spoon approx 3/4 to 1 teaspoon of orange marmalade into each indentation, so it is even with top of the muffin cup.
- 3. Bake approx 10-12 minutes, or until the edges of the cookie are turning golden brown. Let cool in the pan for about 5 minutes before carefully removing with a knife. They should come right out. Cool before serving, the marmalade will stay fairly hot after the cookie crust has cooled. Makes about 2 1/2 - 3 dozen blossoms.
EASY NO-BAKE ORANGE BALLS CANDY
No-bake orange balls are similar to bourbon balls with vanilla wafer crumbs. The orange juice concentrate gives them a burst of orange flavor.

- Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
- Add the butter to the crumb mixture and blend in well.
- Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
- With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
- Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor. If you like making easy or no-bake desserts, try chocolate bourbon truffles or big batch no-bake chocolate oatmeal cookies .

EASY ORANGE BALLS RECIPE (SNOWBALLS)
Old fashioned orange balls just like grandma used to make rolled in coconut are a classic holiday treat. These easy make orange balls require no baking and just need to be kept chilled until ready to serve.

- Add the crumbled vanilla wafers, orange juice concentrate, pecans and melted butter to the large bowl of your stand mixer. (see notes) Using the paddle attachment; mix on a medium speed until combined. Next, add the confectioner's powdered sugar then continue to mix until combine. Dough will be mushy and sticky.
- Line a baking sheet with parchment paper then use a one inch scoop to form orange balls, placing them on the lined baking sheet.
- Next, after all of the balls are formed, gently roll them in the flaked coconut to coat and transfer the orange snowball back to the lined baking sheet; repeat until all are coated.
- Refrigerate the orange snowballs until ready to serve. Please not that these orange balls do need to be kept chilled. Serve in small portions and replenish serving trays as needed.

ORANGE BLOSSOM CAKES

- Heat oven to 180C/160C fan/gas 4. Line 10 holes of a muffin tin with cases (or grease some individual cake moulds). Beat the butter, flour, sugar, baking powder, eggs, yogurt, zest and 2 tbsp orange blossom water in a large bowl with an electric whisk until lump-free. Spoon into the cases (or fill cake moulds three-quarters full), and bake for 18-22 mins until golden and risen - a skewer poked in should come out clean (check cake moulds after 15 mins).
- Drizzle with remaining orange blossom water while warm, then cool. Dust with icing sugar to serve.

- Mix the bison, garlic, breadcrumbs, egg, Worcestershire sauce, salt, and pepper in a large mixing bowl until evenly combined; divide the mixture into 24 portions and roll into balls.
- Heat the vegetable oil in a skillet over medium heat; cook the meatballs until nicely browned on all sides, 7 to 10 minutes.
