1/2 cup grated Parmesan

Steps:

  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.

1 (4-ounce) piece of Parmesan Reggiano cheese (without the rind)
1 tablespoon all-purpose flour
1 teaspoon minced fresh thyme leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
  • Grate the Parmesan using the large grating side of a box grater, as you might use to grate carrots. Combine the Parmesan, flour, thyme, salt, and pepper in a bowl and mix well. With a measuring spoon, spoon level tablespoons of the mixture onto the prepared sheet pans, spreading each round into a 3-inch disk. Toss the mixture each time and scoop from the bottom of the bowl to be sure you get some flour in each spoonful. Bake in the middle of the oven for 8 to 10 minutes, until golden brown.
  • Cool on the pans for 5 minutes, loosen with a metal spatula, then cool completely on a baking rack. Serve at room temperature.
  • Note: This recipe was doubled for this episode.

Black Pepper 'n Parmesan Grissini image

"Grissini" is Italian for "breadsticks," and they are a thin, crisp breadstick. This recipe has them topped with olive oil, Parmesan cheese and ground black pepper.

3/4 cup warm water (105°F to 115°F)
1 teaspoon regular active dry yeast
1/2 teaspoon sugar
2 tablespoons olive oil
1/2 cup whole wheat flour
1 1/4 to 1 3/4 cups Gold Medal™ all-purpose flour
1/3 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon coarsely ground black pepper
2 to 3 teaspoons extra-virgin olive oil
1/4 cup grated Parmesan cheese
1 teaspoon coarsely ground black pepper

Steps:

  • In large bowl, combine water, yeast and sugar; stir until yeast is dissolved. Add 2 tablespoons olive oil. Stir in whole wheat flour and 1/2 cup of the all-purpose flour with whisk until mixture is smooth. Cover and let stand in warm place 35 to 45 minutes or until mixture is light and bubbly.
  • Stir in 1/3 cup Parmesan cheese, salt and 1/2 teaspoon pepper. Add 3/4 cup of the all-purpose flour, gradually adding additional all-purpose flour as necessary to make dough easy to handle.
  • Place dough on lightly floured surface. Knead 10 minutes or until dough is smooth and springy. Grease large bowl with oil. Place dough bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap and let rise in warm place about 1 hour or until dough is doubled in size. Dough is ready if indentation remains when touched.
  • Position one oven rack in lower third of oven and second oven rack in upper third of oven. Heat oven to 425°F. Line 2 cookie sheets with cooking parchment paper.
  • Gently push fist into dough to deflate. On lightly oiled surface, pat out dough to 8-inch square. Using pizza cutter or sharp knife, cut square in half. Cut each half crosswise into 16 strips. Roll each strip to 10 to 12-inch length; place on cookie sheet. Brush with 2 to 3 teaspoons olive oil; sprinkle with 1/4 cup Parmesan cheese and 1 teaspoon pepper.
  • Bake 12 to 15 minutes or until golden brown and crisp, moving cookie sheets to other rack position halfway through baking. Remove from cookie sheets to cooling rack. Cool completely, about 30 minutes.

Steps:

  • Heat oven to 350ºF.
  • Combine cheeses. Spoon into 15 mounds, 2 inches apart, on baking sheet, using about 1 Tbsp. cheese mixture for each. Flatten mounds slightly. Sprinkle with pepper.
  • Bake 6 min. or until golden brown, rotating baking sheet after 3 min.
  • Transfer immediately to wire racks; cool completely.

Steps:

  • Preheat oven to 450°F.
  • Place heaping teaspoonfuls of cheese 2 inches apart on nonstick baking sheet.
  • Flatten the cheese mounds with the back of a spoon.
  • Top each mound with a pinch of black pepper.
  • Bake 1 1/2 - 2 minutes until just lightly browned.

1/4 cup extra-virgin olive oil
1 tablespoon dried oregano
1/2 teaspoon freshly ground black pepper
12 (6-inch) corn tortillas
1 cup freshly shredded Parmesan
1/4 teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 heavy large baking sheets with aluminum foil. Whisk the oil, oregano, and pepper in a small saucepan over medium heat just until warm. Set aside for 15 minutes. Brush the oil mixture over both sides of the tortillas. Stack the tortillas and cut them into 1/2 to 3/4-inch wide strips. Arrange the strips in a single layer over the baking sheets. Sprinkle the cheese and salt over the strips. Bake until the strips are golden brown and crisp, about 12 minutes. Do-Ahead Tip: The tortilla strips can be made up to 2 days ahead. Store in airtight containers and keep at room temperature.
