OUTBACK STEAKHOUSE AUSSIE FRIES

- Divide the bag of fries in half and use the other half later.
- Heat oil to 350 degrees. If you do not have a thermometer, make sure the oil is hot enough so that when you set a French fry in the oil, it will cook immediately. If the French fry sinks to the bottom and barely bubbles, it is not hot enough.
- Fry the potatoes in small batches. They are done when they are golden brown and float to the top. (I like to use a Dutch oven). Be sure to drain the potatoes on paper towels. You can keep them warm in the oven while the other fries cooking.
- When all French fries are cooked and drained, place them on a platter.
- Salt the French fries if you like and sprinkle on cheese and cooked bacon.
- Pop these back into a warm oven until the cheese begins to melt.

- 1 For the Aussie Chips: Preheat oil to 375(F) degrees in a deep fryer. 2 Cut potatoes into french fry slices using a vegetable slicer or mandolin. It's important to use a gadget for the slicing so that the fries will all be the same thickness, and will cook evenly. Submerge all of the sliced potatoes in a large bowl fill with cold water for 30 minutes. 3 Combine all of the seasoning ingredients in a small bowl and set aside. 4 Remove potato slices from the water and onto a clean towel. Blot dry. 5 Fry potato slices for 8 to 12 minutes in hot oil until light brown. Drain fries on a rack or paper towels and sprinkle with some of the seasoning. Pile the fries on a plate and serve with ranch dressing on the side, if desired. 6 For the Aussie Cheese Fries: Prepare the clone for the Aussie Chips and arrange the seasoned fries on an oven-safe plate. Preheat oven to 400 degrees. 7 Mix the cheeses together and sprinkle the blend over the fries. Crumble the bacon and sprinkle it over the cheese. Bake the plate for 4 to 5 minutes in the hot oven, until cheese is melted. Serve with ranch dressing on the side.

- In a saucepan melt butter. Add flour and whisk until combined. Cook until fragrant.
- Add whipping cream and milk, continue to whisk until thickened.
- Add 8 ounces sharp cheddar cheese and spices, whisk until cheese is melted.
- Meanwhile blanch your broccoli and drain.
- Pour cheese sauce over broccoli
- Transfer broccoli to small oven safe dishes. Top with shredded cheese.
- Bake in a 400 degree oven for 3-4 minutes until cheese is melted and bubbly.
- Serve immediately.

- Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
- Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
