ONE WORLD EVERYTHING-COOKIE BARS FOR A CROWD
This yummy bar cookie comes from a terrific non-profit non-profit community kitchen, One World Spokane, which has served over 5,500 free meals and 6,300 full-volunteer meals since opening in October 2009. All food is organic and supplied by local, sustainable agricultural partners. To help control costs and waste, diners select from three portion sizes and either PWYW or volunteer an hour of their time. (This recipe is made for a crowd, so be sure to cut it down for home cooking. Also, nutrition facts will be incomplete, because of the mix of "everything" ingredients is up to the cook.)

- PREHEAT OVEN to 350 degrees.
- CREAM butter and sugars.
- ADD eggs, baking powder, soda and salt.
- ADD flour and oats.
- MIX in the "everything" ingredients.
- PAT into three 8 by12-inch baking pans.
- BAKE at 350 degrees for about 30 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking pans with cooking spray.
- Whisk together 3 cups flour, baking powder, baking soda, and salt in a medium bowl. Toss chocolate chips with 1 tablespoon flour in another medium bowl until lightly coated.
- Beat butter and brown sugar in a large bowl with an electric mixer until creamy, 4 to 5 minutes. Add eggs, vanilla, and almond extract; mix well. Gradually add flour mixture, mixing on low speed. Fold in chocolate chips.
- Divide batter evenly between the 2 prepared pans. Spread thinly with the back of a metal spoon; bars will rise when baking.
- Bake in the preheated oven until golden brown and edges have started to pull away from the sides of the pan, 22 to 25 minutes. Let cool completely before cutting into squares.

- Preheat oven to 350 degrees F.
- In a large bowl, cream together butter, brown sugar and sugar.
- Add vanilla and eggs and combine.
- Fold in flour, baking soda and salt.
- Mix in 2 cups of mini chocolate chips.
- Spray a 18"x13" sheet pan with nonstick cooking spray and spread cookie dough out evenly in pan.
- Sprinkle remaining 1/4 cup chocolate chips on top.
- Bake for 20-25 minutes or until middle is set up and edges are golden brown.
- Let cool and cut into squares.
