OLD-FASHIONED SEA FOAM CANDY

This old-fashioned candy recipe is light and airy, which is the reason it is called 'sea foam'.

1 pound white sugar
½ pint water
4 tablespoons distilled white vinegar
3 tablespoons light corn syrup
½ teaspoon baking soda
12 ounces semi-sweet chocolate chips
2 tablespoons shortening
1 (1 ounce) square unsweetened chocolate

Steps:

  • Butter or oil an 8 inch square baking pan; set aside.
  • Put sugar, vinegar, syrup, and water in a heavy 4 quart saucepan (cast iron if you have it). Gently heat the mixture, stirring with a wooden spoon, until sugar has dissolved and syrup has melted. Bring to a boil, cover and boil for 3 minutes, then remove lid and boil until temperature reaches 285 degrees F (140 degrees C) on a candy thermometer. Remove from heat and stir in the baking soda, mixing well to allow bubbles to subside a little.
  • Pour hot mixture into prepared pan and leave until just beginning to set. Mark into squares with a lightly oiled knife. Leave to set completely. Cut or break into pieces.
  • Combine chocolate chips, shortening, and baking chocolate in a 2-quart glass bowl. Microwave on High for 2 minutes to melt. Stir with a wooden spoon. Dip candy pieces into chocolate, covering completely. Let cool on waxed paper.
  • Wrap individually in waxed paper, twisting the ends together, and store in an airtight container.

This hard candy was always the first thing to sell out at fundraisers we held back when I was in high school. I still make the melt-in-your-mouth morsels every Christmas.

Number Of Ingredients 6

3 tablespoons butter, softened, divided
1 cup sugar
3/4 cup light corn syrup
2 teaspoons cider vinegar
3/4 cup molasses
1/4 teaspoon baking soda

Steps:

  • Grease a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a heavy saucepan, combine sugar, corn syrup and vinegar. Cook over low heat until sugar is dissolved, stirring frequently. Increase heat to medium; cook until a candy thermometer reads 245° (firm-ball stage), stirring occasionally. , Add molasses and remaining butter. Cook, uncovered, until a candy thermometer reads 260° (hard-ball stage), stirring occasionally. Remove from the heat. Add baking soda; beat well., Pour into prepared pan. Let stand for 5 minutes or until cool enough to handle. Butter fingers; quickly pull candy until firm by pliable (color will be light tan). When candy is ready for cutting, pull into a 1/2-in. rope. Cut into 1-in. pieces. Wrap each in waxed paper or colored candy wrappers.

3/4 cup light corn syrup
2 teaspoons cider vinegar
3/4 cup molasses
1/4 teaspoon baking soda

Steps:

  • Butter a jelly roll pan.set aside.
  • In a heavy pan, combine sugar,corn syrup and vinegar.
  • Cook over low heat till sugar is dissolved, stirring frequently, increase heat to medium.
  • cook until candy thermometer reads 245* stirring occasionally.
  • Add molasses and remaining butter (2 tbls) and cook, uncovered, until 260*, stirring occasionally --
  • Remove from heat and add baking soda, beat well.
  • Pour into prepared pan.let stand 5 minutes or cool enough to handle.
  • Butter fingers, pull until candy is firm but pliable.
  • Color will be light tan.
  • When candy is ready for cutting, pull into a 1/2" rope.
  • cut in 1" pieces and wrap in waxed paper or colored candy wrappers.

2 tbsp butter
1 bag puffed rice (quaker cereal)

Steps:

  • Cook syrup and sugar to a soft ball, then add butter and stir. Add puffed rice and mix well. Place in buttered cookie sheet and press down. Use rolling pin to press together and make firm (this is very important or the puff rice candy will fall apart)
