Blackening Seasoning (Use store-bought if desired)
2 teaspoons Italian seasoning
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon cayenne
1/2 teaspoon cane sugar
1/4 teaspoon garlic powder
Sweet Potatoes
4 cups sweet potatoes, cubed
2 Tablespoons olive oil
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 clove garlic, minced or crushed
Brussels Sprouts
2 cups brussels sprouts, halved
2 Tablespoons olive oil
1/4 teaspoon sea salt
1/4 teaspoon white pepper
1 clove garlic, minced or crushed

Steps:

  • Preheat the oven to 400º. Line a baking sheet with parchment paper or spray with cooking oil.
  • Mix together the ingredients for blackening seasoning in a small bowl. Place chicken breasts on the baking sheet and sprinkle with seasoning, flip and repeat.
  • Spread sweet potatoes and brussels sprouts in the remaining space on the sheet pan. Drizzle with olive oil. Sprinkle seasonings and garlic.
  • Place into the oven and bake 20-25 minutes, removing halfway to flip chicken and gently toss veggies.
  • Enjoy!

4 boneless, skinless chicken breasts
2 large eggs
3 tablespoons extra virgin olive oil, divided
1 ½ cups panko breadcrumbs
2 teaspoons paprika
1 ½ teaspoons kosher salt, divided
1 cup all-purpose flour
2 cups broccoli floret
½ teaspoon ground black pepper, divided
2 cloves garlic, minced, divided
2 sweet potatoes, peeled
½ cup mayonnaise
2 tablespoons dijon mustard
2 teaspoons honey
BBQ sauce, for serving, optional
ketchup, for serving, optional

Steps:

  • Slice the chicken breasts into strips.
  • In a medium bowl, add the eggs and 1 tablespoon of olive oil. Whisk to combine.
  • In a large bowl, combine the panko bread crumbs, paprika, and 1 teaspoon of salt.
  • Place the flour in another medium bowl.
  • Coat the chicken strips in the flour, then in the eggs, then in the bread crumbs and place on a baking sheet.
  • Cut the broccoli into florets.
  • Preheat the oven to 375°F (190˚C) and line 2 baking sheets with parchment paper.
  • In a large bowl, toss the broccoli florets with 1 tablespoon olive oil, ¼ teaspoon salt, ¼ teaspoon pepper, and half of the minced garlic. Arrange on half of the remaining baking sheet.
  • Cut the sweet potatoes in half lengthwise, then slice into half-moons.
  • Toss the sweet potatoes in a large bowl with the remaining tablespoon of olive oil, ¼ teaspoon salt, ¼ teaspoon pepper, and minced garlic, and place on the baking sheet next to the broccoli.
  • Bake both baking sheets simultaneously, until the veggies are browned and the chicken is crisp, about 20 minutes.
  • Make the dipping sauce: Combine the mayonnaise, mustard, and honey in a small bowl.
  • Serve the chicken and veggies with the dipping sauce, BBQ sauce, and ketchup, if using.

These blackened chicken tenders are super quick and easy to make! They are the perfect wholesome and flavor loaded dinner for a busy night. Serve them with ranch dressing, or blue cheese dressing for a real treat!

2 pounds chicken tenderloins ((about 12))
1.5 tbsp butter
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp Italian seasoning
1 tsp Old Bay seasoning
1/2 tsp salt
1/4 tsp cayenne pepper (or up to 1/2 tsp to taste (optional))

Steps:

  • Combine the garlic powder, onion powder, paprika, Italian seasoning, Old Bay, salt, and cayenne pepper (optional) and mix.
  • Lay the chicken tenders flat and sprinkle seasonings on the first side, lightly pat them in, and then sprinkle the remaining seasoning on the back side and pat in. This can sit in the refrigerator for up to an hour seasoned.
  • Heat a large cast iron skillet over high heat for 2-3 minutes, then reduce to medium high and add the butter.
  • Once the butter is melted and starting to brown, but not smoke, put the chicken flat in the skillet. Do not crowd the skillet. Cook the chicken in batches if necessary.
  • Let the chicken cook for 2-3 minutes on the first side without moving or checking it, then flip and cook 2 minutes on the other side. Then reduce heat to low, cover the pan and continue to cook until the chicken reaches an internal temp of 165˚F (about 1-2 more minutes.)
  • Remove the chicken from the skillet (to prevent it from continuing to cook) and serve warm with fresh parsley or freshly squeezed lemon if desired.

In addition to bread crumbs, the chicken is slathered with two kinds of mustard plus fresh thyme and minced garlic, which makes it deeply flavored, bright and complex. And because it calls for only one pan, clean up is minimal. While the recipe calls for bone-in drumsticks and/or thighs, if you prefer boneless white meat, feel free to substitute it, reducing the cooking time by 5 to 10 minutes. Serve this with potatoes - either sweet or white - and your favorite green vegetable or salad. It's weeknight cooking at its finest.

Steps:
