CREAMY GERMAN COLESLAW



Creamy German Coleslaw image

This has been my favorite coleslaw recipe for thirty years. It's easy to make and tastes delicious. Blend dressing in the food processor if desired.

½ head cabbage, thinly sliced
3 tablespoons white sugar
3 tablespoons cider vinegar
½ teaspoon celery seed
½ teaspoon salt
½ cup mayonnaise, or more to taste

Steps:

  • Place cabbage in a large bowl.
  • Mix sugar, vinegar, celery seed, and salt together in a separate bowl. Stir mayonnaise into sugar-vinegar mixture until dressing is smooth and creamy. Pour dressing over cabbage; toss to coat.
  • Marinate coleslaw in refrigerator for 2 to 3 hours; stir well before serving.

2 cups shredded cabbage
2 tablespoons finely chopped green pepper
2 tablespoons finely chopped sweet red pepper
2 tablespoons finely chopped onion
1/4 cup mayonnaise
1 tablespoon sugar
1 tablespoon white wine vinegar
1 tablespoon evaporated milk
1/4 teaspoon salt
1/8 teaspoon dill weed
1/8 teaspoon paprika
Dash pepper

Steps:

  • In a bowl, combine the cabbage, peppers and onion. In a small bowl, combine the mayonnaise, sugar, vinegar, milk, salt, dill, paprika and pepper. Add to cabbage mixture and toss to coat. Cover and refrigerate for at least 1 hour before serving.

This recipe has been handed down through generations of German families in northern Idaho. Everyone around here makes it. It's good served either warm or cold.

1 medium head cabbage, finely shredded
3 to 4 green onions, sliced
3/4 cup sugar
3/4 cup vinegar
1-1/2 teaspoons celery seed
1-1/2 teaspoons salt
3/4 cup canola oil

Steps:

  • In a large bowl, combine cabbage and onions. In a saucepan, combine the sugar, vinegar, celery seed and salt; bring to a boil. Add oil; return to boiling and cook until sugar dissolves. Pour over cabbage; toss gently. Chill.

1/3 cup distilled white vinegar
1 teaspoon dry mustard
1/2 teaspoon celery seed
salt
1/3 cup sugar
1/2 cup vegetable oil
1/2 medium green cabbage, cored and finely sliced about 7 cups
1 small red cabbage, about1 1/2 c cored and finely sliced
1 small carrot, trimmed peeled and coarsely grated

Steps:

  • DRESSING: Put the vinegar, mustard, and celery seeds into a medium bowl and whisk to combine. Season with salt to taste. Add the sugar and whisk vigorously until dissolved. Pour the vegetable oil in a thin stream into the bowl while whisking constantly, until it is well combined with the other ingredients and a smooth dressing is formed. Season with salt to taste and set aside.
  • COLESLAW: Put the green and red cabbages and carrots into a large bowl. Add the dressing and toss well to combine. Store the coleslaw in the refrigerator until ready to use, up to 1 day. Serve chilled.

This reminds me of how my Grandmother made her coleslaw. It is refreshing and last a long time in the fridge as there is no mayo in this. It will last up to two weeks when you drain the liquid from it.

1 small purple cabbage, shredded
1 large red onion, diced
1 cup carrot, grated
2 stalks celery, chopped
1 cup white sugar
1 cup white vinegar
3/4 cup vegetable oil
1 teaspoon salt
1 tablespoon dry mustard
fresh ground pepper

Steps:

  • Mix cabbage, carrots,onion and celery in large bowl.
  • Sprinkle with sugar and mix well.
  • In small sauce pan, add vinegar, oil, salt, pepper and dry mustard.
  • Bring to boil and pour hot dressing over cabbage mixture and mix well.
  • Pour into large bowl with lid and refrigerate.
  • This is best made at least one day ahead.
  • Drain juice if not used within 24 hours before serving.

  • Add salt, sugar, and caraway. Massage the cabbage (seriously) for approximately 8 minutes with your hands until it is soft to the touch and the cabbage has given off some of its liquid.
  • Cut the onions into small cubes. Heat the oil in a frying pan, add the onions, and fry them until they become translucent. Now add the water and the vinegar. Once the water and vinegar are hot, pour the mixture over the cabbage and mix everything together with a spoon.
  • Add pepper to taste and let the German coleslaw rest in the fridge for at least 2 hours before serving.
